VEGETARIAN TAMALE FILLING

2 c Shredded swiss or white
Cheddar cheese
2/3 c Chopped black olives
2/3 c Chopped pine nuts
2 Onions, chopped
8 cl Garlic
2 tb Dried oregano
2 ts Ground cumin
1 cn Whole kernel corn, drained
2 cn (4-oz each) green chilies,

2 ts Olive oil

Murphy. Vegetarian Tamale Filling Use the food
processor (if you can) to grate the cheese. Also, I
chopped the onions and the garlic in the food
processor.

Combine all ingredients in a large bowl.

Beignets

Recipe

4 to 4 1/2 c. all-purpose flour
1/2 c. sugar
1 (1/4 oz.) pkg. active dry yeast
1 tsp. salt
1 c. milk
1/2 c. butter or margarine
1 egg
Vegetable oil
Powdered sugar
Insert dough hook attachment to mixer. Mix 1 1/2 cups of the
flour, sugar, yeast and salt on low speed. Heat milk and butter in
small saucepan until warm, 85 degrees. Add to flour mixture, mixing
at medium speed. Add egg; mix at medium speed 2 minutes. Add 1 cup
of the flour, beating at medium speed until smooth. Add remaining
flour as necessary to make a soft elastic dough; mix at medium speed
until dough climbs hook. Place dough in a greased bowl; cover and
rise in warm place free from draft until doubled in bulk, about 1 to
1 1/2 hours. Punch dough down; roll on floured surface to 1/4 inch
thickness. Cut dough into 2 1/2 inch squares; cover and let rise
until doubled in bulk, about 1 hour. Heat 2 inch oil in large
saucepan to 350 degrees. Fry doughnuts until golden, about 2
minutes on each side. Drain on paper towels. Sprinkle with
powdered sugar.

    3 Ripe red pears;
    -(Preferably Bartlett)
    1 T Fresh lemon juice
    1 c Water
    6 T Granulated sugar
    1/4 t Finely chopped lemon zest

    1/2 c + 2 tbsp granulated sugar
    2 Egg yolks
    1/8 t Fresh lemon juice
    16 lg Pecan halves
    4 T Heavy cream
    1 Egg
    White Chocolate “Ice Cream”

    EQUIPMENT: Measuring spoons, measuring cup, zester or
    vegetable peeler, paring knife, cutting board, cook’s
    knife, hand grater, 2 stainless steel bowls (1 large),
    2 1/2-qt saucepan, whisk, instant-read test
    thermometer, ice-cream freezer, dinner fork, nonstick
    baking sheet, 2 2-qt plastic containers, double boiler

    Core and quarter the pears (do not peel). Grate the
    pear quarters, then place the grated pear in a
    stainless steel bowl and toss with 1 tablespoon lemon
    juice. Refrigerate until needed. Heat the water,
    sugar, and lemon zest in a 2 1/2-qt saucepan over
    medium-high heat. Whisk to dissolve sugar. Bring to a
    boil and boil for about 5 minutes until slightly
    thickened.
    Pour the hot sugar mixture over the grated pear and
    stir. Cool in an ice-water bath to a temperature of 40
    to 45 degrees, about 15 minutes. When cold, freeze in
    an ice-cream freezer following the manufacturer’s
    instructions. Transfer the semi-frozen sorbet to a
    plastic container then freeze for several hours.
    Serve within 2 days.

    Filling:
    30 oz Ricotta — 2 15-oz. container
    1 pk Spinach — chopped, frozen, c
    Package directions, drained,
    1/2 c Parmesan — freshly grated (a

    Mushrooms:
    1 T Olive oil
    2 oz Pancetta — *, or bacon, chop
    2 t Rosemary — fresh, minced or
    Crumbled
    12 oz Mushrooms — button, sliced
    Assembly:
    12 Lasanga noodles — about
    Tomato, porcini pancetta s
    1 lb Fontina cheese — grated
    3/4 c Parmesan — freshly grated (a
    1 Tomato — seeded, chopped
    2 t Rosemary — fresh, minced or
    Crumbled

    * Pancetta is Italian unsmoked bacon cured in salt and is available at
    most Italian markets and some specialty food stores.

    FOR FILLING:
    Combine first 3 ingredients (30 oz. ricotta, 10 oz. spinach,
    prepared as instructed, and 1/2 cup Parmesan) in large bowl. Season
    with salt and pepper. Add eggs and mix well. (Can be prepared 1 day
    ahead. Cover and chill.)

    ASSEMBLY:
    Cook noodles in large pot of boiling salted water until just
    tender but still firm to bite, stirring occasionally. Drain. Rinse
    under cold water to cool; drain.
    Oil 13x9x2-inch baking dish (I always find a deeper dish easier to
    deal with when making lasagna; 3-inches deep is MUCH better). Spread 1
    cup Tomato, Porcini and Pancetta Sauce over bottom of dish. Arrange 3
    to 4 noodles over, trimming to fit as necessary. Spread half of
    ricotta filling over. Spoon 1 cup sauce over. Sprinkle with 1 cup
    Fontina and 1/4 cup Parmesan cheese. Top with 3 to 4 noodles,
    trimming to fit. Spread remaining ricotta filling over noodles. Spoon
    1 cup sauce over. Sprinkle with 1 cup Fontina and 1/4 cup Parmesan.
    Reserve 1/2 cup sauteed mushrooms for garnish. Spread remaining
    mushrooms over cheese. Arrange remaining noodles over. Spread
    remaining sauce over noodles. Sprinkle remaining Fontina and 1/4 cup
    Parmesan over. Cover with foil. (Can be prepared 1 day ahead.
    Refrigerate lasagna and reserved 1/2 cup mushrooms separately. Let
    lasagna stand 2 hours at room temperature before continuing.)
    Preheat oven to 350F. Bake covered lasagna 30 minutes. Uncover
    and continue baking until bubbling and cheese melts, about 20 minutes.
    Arrange reserved 1 cup mushrooms, tomato and 2 teaspoons rosemary
    over. Let stand 10 minutes. Cut into squares.

    1/2 lb Mushrooms, sliced 1 c Polish sausage, sliced
    2 lb Sauerkraut 1/2 lb Beef or pork
    1 ea Apple, lg, peeled/sliced 20 oz Can tomatos
    1 c Bacon, coarsely chopped 1/4 c Water
    5 ea Peppercorns 1 ea Bay leaf
    6 ea Potatos, steamed

    (1c leftover meat may be subst for beef/pork)
    Squeeze sauerkraut or, if canned, drain. In a large casserole put
    sauerkraut, mushrooms, apple, tomatos, peppercorns, bay leaf 1/4 c
    water. Cover and simmer for 75 minutes. Add sausage, meat and bacon.
    Simmer 1 hour longer. Serve with steamed potatos.

    Steamed Potatos:
    Boil peeled potatos in salted water to cover, with a spoonful of butter
    added. When cooked drain, add butter and teaspoon of chopped dill and let
    stand covered for 5 minutes.

  • EGGPLANT, LAMB AND RICE CASSEROLE

    2 lb Eggplants
    1/2 lb Ground Lamb — lean
    2 ts Olive Oil
    2 ea Onions — chopped
    1 ea Red Bell Pepper — seeded
    And chopped
    2 Cloves Garlic — minced
    14 1/2 oz Tomatoes, Canned —
    Undrained
    2 ts Dried Oregano
    1/2 ts Dried Thyme
    1/2 ts Ground Cinnamon
    1/4 ts Ground Cloves
    1 c White Rice
    14 1/2 oz Beef Broth — defatted
    2 oz Feta Cheese — crumbled
    Salt And Pepper — to taste

    Preheat oven to 450 degrees. Cut eggplants in half
    lengthwise. Place eggplant halves, cut-side down, in
    a roasting pan. Add water to a depth of 1/2 inch.
    Bake until tender, 20to 25 minutes; set aside. Reduce
    oven temperature to 400 degrees.

    While the eggplant is roasting, heat a large nonstick
    skillet over medium-high heat. Add ground lamb and
    saute, breaking up the meat with a wooden spoon, until
    browned, 3-5 minutes. Transfer to a colander and
    drain off fat. Set aside.

    In a Dutch ove, heat oil over medium heat. Add onions
    and cook until golden,
    about 5 minutes. Add red peppers and garlic and cook
    for 2 minutes longer. Stir in tomatoes and their
    juice, oregano, thyme, cinnamon and cloves. Simmer,
    breaking up the tom atoes with a wooden spoon, until
    the mixture has
    thickened slightly, 3-5 minutes.

    Scoop out eggplant flesh and chop coarsely. Stir
    rice, beef broth, chopped eggplant and the reserved
    lamb into the tomato mixture; bring to a simmer. Cover
    the pan and place it in the oven. Bake for 30 to 35
    minutes, or until
    the rice is tender and th e liquid has been absorbed.
    Season with salt and pepper. Dot with feta and serve.

    1 Cup almonds, whole
    2 Cups pretzels
    1 Cup dried cranberries
    1 egg white
    1/2 Cup sugar
    1/2 Tsp ground cinnamon
    1/2 Tsp salt

    Preheat oven to 350 degrees. Spread almonds evenly on an ungreased
    baking sheet. Bake 7 – 8 minutes or until nuts are slightly darker in
    color.
    Cool completely.
    Reduce oven temperature to 225 degrees. In a large bowl, combine
    almonds, pretzels, and cranberries. In a small bowl, beat egg white
    till foamy.
    Pour over pretzel mixture; toss until well coated. In another small
    bowl, combine remaining ingredients. Sprinkle over pretzel mixture; toss
    until well coated. Spread evenly on a greased baking sheet. Bake 1
    hour, stirring every 15 minutes. Cool completely on pan. Store in an
    airtight container.

    1 pint Milk
    3 ounces Imported chocolate (milk — chocolate or semi-sweet)

    Pour 1/4 cup of the milk into a small, thick-bottomed pot. Break the chocolate
    into small bits and add to the milk in the pot. Over very low heat, let the
    chocolate melt, then pour in the rest of the milk, bit by bit, whisking well
    with each addition. When the chocolate is melted and the milk faintly
    steaming, remove from the heat, beat vigorously with a whisk until frothy, and
    serve.

    Variations: A small amount of chocolate-based liqueur, such as Cheri-Suisse,
    Vandermint, or Droste Bittersweet is liked by some. Of course, unsweetened
    baking chocolate can be used instead. Use the same proportion: 1 1/2 oz.
    chocolate per cup of milk and sweeten to taste.

    Low Cal Cheesecake

    Recipe

    Title: LOW CAL CHEESECAKE

    2 Envelopes plain gelatin
    6 tb Sugar
    1/4 ts Salt
    3 Eggs, separated
    1 1/2 c Skim milk
    1 ts Grated lemon rind
    3 c Creamed cottage cheese
    1 tb Lemon juice
    1 ts Vanilla
    6 tb Sugar
    1/3 c Graham cracker crumbs

    Mix together gelatine, 6 TBSP sugar, and salt in top
    of double boiler. Beat together egg yolks and milk;
    add to gelatin mixture. Place over boiling water and
    cook, stirring constantly until gelatine is dissolved
    and mixture thickens slightly (6 min app.) Remove
    from heat and stir in lemon rind. Chill to unbeaten
    egg white consistency. While mixture is chilling, beat
    cottage cheese on high speed of electric mixer for 3
    minutes (or press through sieve, or use food
    processor). Stir in lemon juice and vanilla. Fold in
    gelatine mixture. Beat egg whites until stiff, but not
    dry. Gradually add 6 TBSP sugar, and beat until very
    stiff. Fold gently into gelatine mixture. Turn into an
    8 inch springform pan and sprinkle top with crumbs.
    Chill until firm. 10-12 servings of approximately 125
    calories per serving.
