ARTICHOKE BISQUE

8 tb Flour
16 oz Butter
6 c Beef Stock
2 Ribs Celery – finely chopped
3 lg Onions – finely chopped
1 bn Green Onions – finely

2 Bay Leaves
1/4 ts Thyme
2 Clove Garlic – minced
2 cn Artichoke Hearts – (2 14-oz.
-cans) (UNDRAINED)
Salt and black pepper – to
-taste
1/4 ts Tabasco
1 c White Wine – dry
4 oz Light Cream
2 tb Parsley – minced
Melt the butter in a heavy pot and add the flour. Over
a low heat cook for 5 minutes, stirring constantly.
Slowly add the stock and when well mixed, add the
celery, onions, greeen onions, bay leaves, thyme and
garlic. Let this simmer for 45 minutes.
Chop the artichoke hearts fairly fine and then add to
the pot along with the artichoke water. Cook at a low
simmer for another 30 minutes. Add salt and pepper to
taste, the Tabasco, wine and cream and bring to a
simmer. Do NOT boil. The bisque is now ready to serve.
Sprinkle a bit of parsley over the bisque in each
plate. With a slice of French bread, it’s a Creole
treat for your bon appetit.

1/2 cup olive oil
1/2 cup flour
2 cups julienned yellow onion
2 cups julienned white onions
2 cups julienned red onions
8 pearl onions, — peeled
1 pound Andouille sausage, — cut into 1-inch pieces
2 tablespoons minced shallots
2 tablespoons minced garlic
1 leek, white part only, — julienned
3 bay leaves
1 tablespoons chopped fresh thyme
Salt and pepper
Pinch of cayenne pepper
2 1/2 quarts chicken stock
1 cup grated Parmigiano-Reggiano cheese
1/2 cup chopped green onions
2 cups cubed French bread, fried in olive oil — until=
golden b
1/4 cup grated Parmigiano-Reggiano cheese
1 tablespoon finely chopped parsley
In a large saucepan, combine the olive oil and flour. Stirring constantly
cook for about 10 minutes for a blond roux. Stir in the onions and cook for
about 10 minutes or until the onions are golden. Add the andouille,
shallots, garlic, leeks, bay leaves, and thyme. Season with salt, pepper,
and cayenne. Stir in the broth and bring the liquid up to a boil and reduce
to a simmer. Simmer the soup for about 1 hour. Skim the soup occasionally
to remove any fat that rises to the top. Remove the bay leaves. Stir in the
grated cheese and green onions. Ladle the soup in a shallow bowl. Garnish
the soup with the croutons, cheese, and parsley.

Title: MAPLE MOUSSE

1 Envelope plain gelatin
1/4 c Cold water
4 Eggs, separated
1 c Real maple syrup
1/4 ts Cream of tartar
2 c Of whipped cream
Soften gelatin in cold water. Beat 4 egg yolks until frothy. Add maple
syrup. Mix well. Add gelatin. Pour into saucepan. Let cook over very
low heat, stirring constantly, for about 10 min. (Should be quite thick).
Cool. Beat egg whites; add cream of tartar and beat until stiff peaks
form. Fold together gelatin mixture, egg whites, and whipped cream. Spoon
into dessert dishes and serve. May be sprinkled with nuts if desired.

Title: Carrot Casserole

2 cn Carrots; diced/shoestring 1 sm Bag of potato chips;
1 cn Cream of Mushrooms soup; -crushed
1/2 Onion; finely chopped
Alternate layers of carrots with soup and onion mixture in greased
1-quart casserole. Bake 325 degrees for 20 to 25 minutes or until
thoroughly heated. Just before removing from oven, sprinkle with
crushed potato chips and brown slightly.
Food Exchange per serving: 1 VEGETABLE EXCHANGE + 1 FAT EXCHANGE

(What I would do, becauce I LIKE mushrooms, I would just add some
fresh mushrooms instead of cream of mushroom soup and even the bag of
potato chips could be done away with. Depends on what it what kind
they are.)

1 cup milk
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla or lemon extract
1/2 cup coconut
1/2 teaspoon caraway seeds
1 teaspoon sesame seeds
Cream egg, butter and sugar until fluffy. Add milk and dry ingredients
alternately. Bake in moderate oven at 350 F. until golden brown, about 1/2
hour if pan is shallow, longer if loaf pan is used. Test with straw.
Serves about 8.

Boil sugar and water to a light syrup. Cool. Add
eggs, honey and nutmeg and beat thoroughly. Fill
unbaked tart shells 2/3 full. Bake for 20 minutes at

Melt butter, add onion and cook until tender but not brown. add potatoes
and just enough water to cook potatoes. When potatoes are tender add
parseley, salt and pepper, and clams with their juice. Just before serving
add 2 cups milk and heat but do NOT boil.

1. Prepare Vanilla Pudding: In 1-quart microwave-safe bowl, combine
sugar and cornstarch. Stir in milk until well blended and cornstarch
is dissolved. Microwave, uncovered, on high (100 percent) 2 1/2 to 3
minutes, or until mixture boils and thickens, whisking after every
minute. Stir in egg until well blended. Microwave on medium (50
percent) 30 seconds; stir in vanilla and set aside.
2. Prepare Chocolate Pudding as in step 1, substituting the chocolate
for vanilla. Stir chocolate into pudding mixture until completely
melted and blended.
3. Set aside Vanilla and Chocolate Puddings until barely warm. Pour
one quarter of each pudding simultaneously into each of 4 small
dessert bowls. With fork, swirl each pudding mixture to marbleize.
Refrigerate Black and White Puddings at least 40 minutes. Garnish
with berries, if desired, and serve.

1/2 lb Swiss cheese, cubed

1 1/2 ts Mustard, dry
1 ts Horseradish
1/2 ts Salt
1/8 ts Pepper
1/8 ts Cumin, ground
1/2 c Sour cream
Hard boil eggs and chop.
Mix cheese and eggs in a bowl. Combine sour cream,
mustard, horseradish, salt, pepper and cumin; Fold in
cheese and egg mixture. Refrigerate about 1 hour.
Serve on a bed of lettuce. A favorite of the New York
Times editorial staff.

“Creme caramel is a great favorite in many restaurants. It is basically a
super rich baked egg custard made with added heavy cream. It looks small
and innocent, but packs a devastating amount of ”shadow energy" (many
calories with few nutrients). Our substitutions are indeed radical …but
they are delicious and reduce the fat significantly.

Preheat the oven to 300F. In a large saucepan, heat the milk, rosemary and
orange peel until just about to boil. Strain into a large bowl and stir in
the vanilla, egg substitute and sugar. Pour the custard into 4 individual
souffle dishes.
Place a 9 inch X 9 inch baking dish on the oven rack. Place the filled
souffle in the dish and pour in the hot water – the souffle dishes should
be about three quarters submerged. Cover the baking dish loosely with foil
and bake for 1 hour – the custard should be well set. Take the souffle
dishes out of the water and let them cool a bit -a bout 1 hour.
To serve: Loosen the custard from the souffle dish with a knife. Invert
the dish over an individual serving plate and shake the custard out. Spoon
1 Tsp of the maple syrup over the top. Garnish with a sprig of
rosemary..voila! You can serve Creme Caramel at room temperature or cold.
