Spiced Vegetables

Recipe

Title: SPICED VEGETABLES

Yield: 6 servings

1 1/2 lb Potatoes
1 ea Broccoli head, include stem
5 lg Carrots, sliced
1 sm Cauliflower, chopped
1 md Onion, finely chopped
1/2 c Ghee

Depending on the size of the potatoes, either leave
them whole or quarter them, but do not cut them too
small. Chop the broccoli, reserving the inner stem,
but discarding the fibrous outside. Chop the head.
Over boiling water, steam the potatoes, broccoli stem,
carrots cauliflower. After 10 minutes, add broccoli
heads steam until vegetables are just tender. In a
heavy pot, saute the onions in the ghee till they are
transparent. Mix in all the steamed vegetables except
the broccoli. Cover cook for 6 to 8 minutes,
stirring often. Add broccoli cook for another 5
minutes. Serve with bread.

    WILD MUSHROOM SAUCE

    4 oz Dried mushrooms
    12 oz Assorted fresh mushrooms
    – (chanterelle, cultivated,
    – shiitake, oyster)
    2 tb Unsalted butter
    1 tb Finely minced garlic
    1 tb Finely minced shallots

    1/2 ts Salt
    1/4 c Sherry or Madeira
    1/2 c Whipping cream

    This sauce has an intensely woodsy flavor that would be good on pasta,
    roast chicken or pork.
    TO RECONSTITUTE DRIED MUSHROOMS, place them in a bowl and cover with 3 cups
    of warm water. Soak for at least 2 hours or up to 8. When mushrooms are
    soft, drain and reserve water and squeeze out as much water as you can from
    the mushrooms. Pour the mushroom water through a double layer of
    cheesecloth or a cloth towel to remove any sand that may have been lurking
    in the mushrooms. Reserve 1 cup of liquid for this recipe. (Pour the
    remaining mushroom water into a plastic container or airtight bag, label
    and freeze for up to a year to use in soups and sauces.) Wash the fresh
    mushrooms and pat dry. (Slice chanterelles and cultivated mushrooms, trim
    and discard the stems of shiitake mushrooms, and trim and discard root tips
    of oyster mushrooms.) Melt the butter in a medium skillet over medium heat
    and add the reconstituted dried mushrooms, garlic, shallots and salt. Cook,
    stirring, for 10 minutes. Add the fresh mushrooms and continue to cook
    another 10 minutes. Add the reserved mushroom water and sherry. Increase
    the heat to high and cook until the liquid reduces by about 2/3. Add the
    cream and cook until the liquid reduces to a saucelike consistency and is
    thick enough to coat a spoon.

  • Title: Almost Fat-Free Ginger Cookies

    2 c All-purpose flour
    1 tb Ground ginger
    2 ts Baking soda
    1 1/2 ts Ground cinnamon
    1/2 ts Ground cloves
    1/2 ts Salt
    3/4 c Prune Butter *
    1/2 c Sugar
    1 Egg
    1/4 c Molasses
    Sugar for rolling

    Preheat oven to 350F. Into a medium bowl, sift together flour,
    ginger, baking soda, cinnamon, cloves, and salt.

    In a large bowl with electric mixer, beat Prune Butter and sugar until
    well-blended. Beat in egg and molasses until well-blended. Stir in
    flour mixture until completely mixed.

    Place a little sugar in a medium bowl. Scoop out heaping
    teaspoonfuls of mixture. Using your palms, roll into 3/4-inch balls
    and drop into the sugar. Roll to cover the surface completely; then
    place balls 2 inches apart on ungreased baking sheets.

    Bake until cookies are slightly rounded and tops appear lightly
    browned and crackles. Remove baking sheets to wire racks to cool
    slightly. The, using a metal pancake turner or palette knife, remove
    cookies to wire racks to cool completely. Repeat with remaining
    cookie dough and sugar. Store in airtight containers.

    * Prune butter is from “Secrets of Fat Free Baking” by Sandra
    Woodruff. To make one cup, combine 8 oz prunes and 6 tb water or
    fruit juice in food processor. (I used apple juice for the batch for
    this recipe.)

    Notes: The cookies have 39.5 calores (3.6% from fat) and 0.2g fat
    each. They also have more dietary fiber, potassiumn and calcium than
    the originals, and less cholesterol. They were delicious, but
    rolling them into balls was a nightmare. They stuck to everything.
    They may need more flour. They also didn’t flaten out as much as the
    originals. They kept their ball shape, for the most part.

    The Chef’s Comments:
    “Yesterday i took a cookie recipe that I wanted to try, and I made
    exactly according to the recipe (it was great!) and then I made
    another batch, using the Prune Butter technique. For cookies, the
    book suggests replacing all of the fat with Prune Butter, and removing
    as much sugar as 1/2 to 2/3 the amount of Prune Butter used, to keep
    sweetness consistent witht he original recipe. The low-fat recipe was
    a difficult texture to work with, and they didn’t spread out nicely
    when cooking. They remained little clumps. But they did taste very
    good. I have a hard time telling the difference between the two,
    believe it or not. Who would have thought substituting prunes for
    crisco was a wise choice??” – Lisa

  • Maple Pecan Pie

    Title: MAPLE PECAN PIE

    Yield: 1 servings

    1/4 c Butter or margarine, melted
    1 c Dark brown sugar
    1 c Dark amber maple syrup
    3 ea Eggs, well beaten
    1/4 t Salt
    1 t Vanilla
    1 c Pecans
    1 ea 9″ pie shell

    Cream butter or margarine and sugar. Add syrup, eggs, salt, and
    vanilla. Mix together and add pecans. Bake 5 minutes at 450øF then
    reduce heat to 350øF and bake about 40 minutes until firm. Makes one
    9″ pie.

    1 Can 15-Ounce, Red or pink salmon — drained and

    3 Eggs
    1/3 Cup Cracker crumbs — reserve 1 tablespoon
    1 Teaspoon Salt
    1/4 Teaspoon Freshly ground pepper
    Butter

    Preheat oven to 350F. Butter 1 1/2-quart baking dish. Combine all
    ingredients except butter and reserved crumbs in a large bowl and mix
    well. Turn into prepared dish. Sprinkle with remaining cracker
    crumbs. Dot with butter. Bake until set, about 1 hour. Serve
    immediately.

    DOUBLE FROSTED BROWNIES

    First layer:
    2 1/2 ounces unsweetened chocolate
    1/2 cup butter
    2 eggs
    1 cup sugar
    1/2 cup flour
    1/4 teaspoon salt
    1 teaspoon vanilla
    1/2 cup chopped pecans
    Second layer:
    1/2 cup butter
    3 tablespoons milk
    2 tablespoons vanilla instant pudding mix
    2 1/2 cup powdered sugar
    Third layer:
    1 package semi-sweet chocolate chips
    1 1/2 tablespoons butter
    3 tablespoons water

    First layer: preheat oven to 350. Melt chocolate and butter together. Beat
    eggs and add sugar.
    Mix well. Stir into chocolate and butter. Mix flour and salt and blend into
    chocolate mixture. Add
    vanilla and nuts. Spread in greased 11 by 7-inch glass dish. Bake 22 minutes
    and let cool.
    Second layer: cream butter. Combine milk and pudding mix and add to butter.
    Gradually stir in
    powdered sugar. Spread on top of brownie and refrigerate until firm.
    Third layer: melt chocolate chips in butter and water over very low heat.
    When slightly cool,
    spread over top and refrigerate.

  • Moghul Vegetable Curry

    Title: Moghul Vegetable Curry

    4 c Diced mixed vegetables
    (carrots, potatoes, beans,
    Peas)
    1/4 c Blanched almonds
    6 Cloves
    2 ts Cardamom seeds
    1 ts Dried fenugreek seeds
    5cm cinnamon stick, broken
    2 ts Chopped garlic
    1/2 ts Chilli powder
    1/2 ts Ground turmeric
    Hot water
    3 T Ghee
    1 l Onion, finely sliced
    1/4 ts Ground saffron
    1/2 c Natural yoghurt
    1/2 c Water

    Place almonds, cloves, cardamom, fenugreek leaves, cinnamon, garlic,
    chilli powder and turmeric in container of electric blender with enough
    hot water to enable blades to move freely. Blend to a paste on high speed,
    remove contents and set aside.

    Heat ghee in a saucepan and fry onion till soft and golden. Stir in the
    paste and fry till it smells fragrant and ghee comes to the surface. Add
    saffron powder and stir in mixed vegetables and yoghurt . Add salt and
    water and bring to boil, cover and simmer till vegetables are tender.

    STUFFED ESCAROLE LEAVES WITH MARINATED CHICKP

    3 c Dried chickpeas
    2 ts Dried sage
    5 ea Bay leaves
    1/4 ts Salt
    1 pn Freshly ground black pepper
    4 md Tomatoes, seeded diced
    2 ts Minced garlic
    2 tb Chopped fresh parsley
    2 tb White wine vinegar
    1 lg Head escarole
    — washed and cored

    Rinse chickpeas, place in a large bowl and cover with
    9 cups water. Refrigerate and let soak overnight.
    In a large pot, bring two quarts of water to a boil.
    Add sage and bay leaves.
    Drain chickpeas and rinse well. Add chickpeas to
    boiling water and cook until they are soft, about 30
    to 45 minutes. Drain chickpeas, reserving 2 cups of
    cooking liquid. Sprinkle chickpeas with salt and
    pepper, and lightly mash them with a fork. Set aside
    to cool. In a large bowl toss tomatoes with garlic and
    parsley. Add cooled chickpeas and toss with just
    enough reserved cooking liquid to moisten. Add
    vinegar to taste. Bring a small saucepan of salted
    water to a boil. Fill a large bowl with ice water and
    set aside. Place escarole leaves in a strainer and
    submerge in boiling water until leaves are soft, about
    2 minutes. Remove leaves from water and immediately
    plunge them into ice water. Drain and pat dry.
    Lay leaves out flat nad place about 2 or 3 tablespoons
    of chickpea mixture at broad end of each leaf. Roll
    up like a cigar, turning sides in to enclose filling.
    Serve at room temperature.

    No Bake Fudge Cookies

    No Bake Fudge Cookies

    Serving Size : 48

    2 cups Sugar
    1/2 cup Milk
    1/2 cup Butter or Margarine
    ***
    3/4 cup Peanut Butter
    3 cups Quick-cooking oats
    6 tablespoons Cocoa Powder
    1 teaspoon Vanilla

    Boil first three ingredient for one minute, over medium heat in a large pan
    (dutch oven size). Next, add peanut butter and cocoa and mix well with a
    wire whisk. Remove from heat, and stir in vanilla. Add quick oats, until
    mixture will just hold it’s shape when dropped from a spoon. You may need
    to increase the amount of oats by as much as 1/2 cup, depending one your
    altitude and humidity. Drop mixture by teaspoonfuls or use cookie scoop to
    drop mixture onto cookie sheets which have been lined with waxed paper.
    Cool before serving.
