16 Girl Scout thin mint cookies
3 Egg whites
1/8 teaspoon Salt
3/4 cup Sugar
1/2 cup Chopped nuts
1/2 teaspoon Vanilla
1 cup Heavy cream — whipped
Shaved chocolate — opt.
Preheat oven to 325. Roll cookies between two sheets of wax paper to make fine
crumbs (can freeze cookies a few minutes for easy rolling). Beat egg whites and
salt until stiff and glossy. Fold in crumbs; nuts and vanilla. Spread in
buttered 8 inch pie plate. Bake for 35 minutes. Cool and refrigerate 3 hours.
Cover w/whipped cream and shaved chocolate. Denise Bradshaw

2/3 c Milk
1/2 c Grated cheddar cheese
1/4 c Butter — melted
1/4 ts Garlic salt
ds Italian seasoning — generous
Combine first 3 ingredients. It will be sticky. Spoon
into 12 well-greased muffin tins. Do not use paper
liners. Combine last 3 ingredients and spread evenly
over the raw batter. Bake for about 10-15 minutes at
450 until nicely browned.

Title: HOMEMADE OREO COOKIES

Yield: 50 cookies
1 pk Devils food cake mix
2 Eggs
2 tb Vegetable oil
2 tb ;Water
1/2 c Chocolate drink powder
1 pk Gelatin, unflavored
1 c Vegetable shortening
4 1/2 c Sugar, confectioners
1 ts Vanilla
Blend cake mix, eggs, water, oil and chocolate drink
powder and shape into a ball. Let stand 20 min. Form
dough into 1/2″ balls and place on greased cookie
sheets. Flatten each with the smooth bottom of a
drinking glass, greased once and dipped into the
chocolate drink powder each time. Bake at 400 degrees
for eight minutes. Remove cookies at once and
immediately flatten with the back of a spatula. Let
cool 20 min. Makes 100 halves.
For filling, place gelatin in a heatproof cup. Add
1/4 cup cold water, stir well and place in pan of hot
water until mix clears and gelatin is softened. Beat
shortening until fluffy. Add sugar gradually and beat
for 10 minutes. Mix in vanilla, beat in cooled gelatin
mix. Spread about 1 teaspoon filling between two
cookies. Press gently together so that filling comes
to the edges of cookies. Chill until set.

Title: Fluffy Frosting

1/2 c Sugar
2 t Water
2 Packets Sweet Low
2 Larger egg whites
1/4 t Cream of tartar
1/2 t Vanilla
Combine sugar, water, Sweet’n Low, egg whites, and cream of tartar in
top of a double boiler and beat at high speed for 1 minute. Set over
simmering water in the bottom of the double boiler. Continue to beat
at high speed for 4-5 minutes or until soft peaks form. Remove from
heat. Add vanilla to frosting and continue beating at high speed 1/2
minutes or until thick enough to spread on a cooled cake. Use about
2 1/2 tablespoons per portion if frosting individually; or use this
amount to frost a 2-layer cake or a 9-inch square cake, both of which
would then be cut in 16 equal servings.

Here is one of Mary McDougall’s recipes from the May issue of
Vegetarian Times. I did not follow the recipe exactly, my
substitutions are denoted by <>.
Mushrooms with Wild Rice
1 cup wild rice
3 cups water
1 Tbs low-sodium soy sauce
1/4 cup minced scallions
1 medium yellow onion, chopped
2 stalks celery, chopped
1/4 cup water <1/2 cup water>
1/2 lb white button mushrooms, sliced
8 fresh shiitake mushrooms <6 huge ones, discard the stems>
2/3 cup chopped oyster mushrooms
1/4 cup trimmed enoki mushrooms
12 snow peas, quartered
1/2 red bell pepper, diced
2 Tbs low-sodium soy sauce
1/2 tsp dried sage
1/4 tsp poultry seasoning
Freshly ground black pepper to taste
Place rice, water, soysauce, and scallions in a saucepan with a
tight-fitting lid. Bring to a boil, reduce heat, cover and cook over
medium heat until liquid has evaporated and rice is tender, about 1
hour . Set aside.
Place onion, celery and water in a large pan. Cook and stir for
several minutes, until vegetables soften slightly. Add button,
shiitake and oyster mushrooms . Cook, stirring
occasionally, for 10 minutes.
Gently stir in cooked rice, enoki mushrooms, snow peas, red pepper and
seasonings. Cook over low heat for another 15 minutes .
Serves 4
Per serving: 152 calories, 6 gr protein, 0.1 gram fat, 31 gram carb, 0
chol, 829 mg sodium, 3 gr fiber.

SEAFOOD SEASONING MIX

1/4 c Salt
2 c Red pepper
1 tb Finely ground black peeper
1 tb White pepper
2 tb Paprika
1 1/2 tb Onion powder
1 tb Garlic powder
1 t Sweet basil
1/2 ts Dry hot mustard
1/2 ts Ground bay leaves
1/4 ts File powder
1/4 ts Thyme
1/4 ts Tarragon
1/8 ts Oregano
1/8 ts Rosemary
Mix all ingredients together well. Store in a tightly covered glass jar
for use as needed. Excellent for seasoning all seafood. Use as you would
any seasoning mix, and do not add extra salt to the dish.
Lagniappe: This seasoning mix lends itself to seafood, but you may use it
as you like. About 4 calories per teaspoon.

Title: Earl’s Mozzarella Meat Loaf

Yield: 8 servings
1 lg Onion; coarsely chopped 2 Egg whites
1 T Olive oil 4 oz Part-skim mozarella cheese
1 Sweet red pepper; chopped -cut in 1/4-inch cubes
1 cl Garlic; finely chopped 1/2 c Grated Parmesan cheese
1 ts Leaf basil; crumbled 2 T Parsley; chopped
1/2 ts Lef thyme; crumbled 3/4 ts Salt; optional
1 1/2 lb Lean ground beef 1/8 ts Pepper
1/2 lb Ground pork 1/4 c Catsup
1 c Old-fashioned oats; uncooked
Preheat oven to moderate (375 degrees). Line jelly-roll pan with
aluminum foil.
Saute onion in oil in large skillet over medium heat 3 minutes. Add
red pepper, garlic, basil, and thyme, saute 5 minutes.
Combine beef, pork, oats, egg, whites, mozzarella, Parmesan, parsley,
optional salt, and pepper in large bowl. Add vegetable mixture.
Shape into large oval on prepared pan.
Bake in moderate oven (375 degrees) for 30 minutes. Brush loaf with
catsup. Bake 25 minutes or until cooked through. Let stand 10 minute
before slicing.
Judi’s Notes: I would bake this meat loaf in a loaf pan due to
possible grease escaping from the jelly roll pan. I would also spoon
off some of the fat from the loaf after 30 minutes.

IRISH COFFEE MUFFINS

1 tb Baking powder
1/2 ts Salt
1/2 c Sugar
1 Egg, beaten
1/3 c Butter, melted
1/2 c Heavy cream, unwhipped
1/4 c Irish whiskey
1/4 c Coffee liqueur
Preheat oven to 400 F.
Sift the first 4 ingredients together.
Stir in remaining ingredients, until moistened.
Fill paper-lined muffin tins full, and bake
approximately 20 minutes.
Makes 12 muffins.

CARAMEL APPLE PIE

2 whole 9 inch pie crust
6 cups apples — peeled and sliced
3/4 cup sugar
1/4 cup flour
1/4 teaspoon salt
2 tablespoons butter
1/3 cup caramel topping
4 tablespoons pecans — chopped
Heat oven to 425 .
Line 9″ pie pan with pie dough.
Combine apples, sugar, flour and salt in a big bowl. Lightly toss.
Spoon apple mixture into pie crust lined pan. Dot with butter. Top
with the other crust and flute edges. Cut slits in several places.
Bake for 35-45 minutes or until apples are tender. Remove pie from
oven.
Immediately drizzle the ice cream topping over pie and sprinkle
with pecans.

Three Flavored Fried Rice

1 cup Cooked chicken — diced
3 tablespoon Oil
4 cup Rice; cold — cooked
2 Green onions chopped
2 tablespoon Soy sauce
1 cup Raw shrimp; shelled
1/4 teaspoon Black pepper
deveined and diced
1 sm Piece ginger or dash
1/4 teaspoon Salt (optional)
ground ginger
2 Eggs — slightly beaten
1 cup Lettuce — shredded
1 cup Cooked pork — diced
Set ingredients prepared and measured by the stove in order listed. Set wok
over high heat for 30 seconds, swirl in half the fat, count to 20, add green
onions and ginger and brown lightly. Add shrimp. Stir-fry 3 minutes.
Salt. Add eggs. Scramble until not quite cooked. Remove to a warm plate.
Swirl remaining fat into the wok, count to 20, add pork and chicken, and
stir-fry 2 minutes. Add rice, soy sauce, and pepper, stir and toss until
heated. Add scrambled eggs and toss a half minute. Add lettuce; stir and toss
until mixed. Serve at once before lettuce wilts.
