4 c VEAL STOCK,OR LOW
SODIUM BEEF BROTH
1/2 ts SALT
FRESHLY GROUND PEPPER
1/8 ts FRESHLY GRATED NUTMEG

MELT BUTTER IN 3 QUART,HEAVY PAN OVER LOW
HEAT,PREFERABLY CAST IRON OR COPPER.ADD ONIONS AND
COOK,COVERED,15 MINUTES.UNCOVER AND CONTINUE TO COOK
30 TO 40 MINUTES,STIRRING FREQUENTLY,OR UNTIL ONIONS
TURN A DEEP GOLDEN COLOR.ADD STOCK AND NUTMEG.COVER
AND BRING TO BOIL.REDUCE HEAT AND SIMMER MINUTES.
MEANWHILE,BRING BEER TO BOIL IN SMALL PAN OVER
MEDIUM HEAT.BOIL UNTIL REDUCED BY HALF.REMOVE FROM
HEAT,ADD CHEESE,STIRRING UNTIL MELTED.TRANSFER MIXTURE
TO BLENDER,ADD 1 CUP ONION SOUP,AND BLEND UNTIL
SMOOTH.RESERVE,REMOVE ONION MIXTURE FROM HEAT AND
STRAIN RESERVING LIQUID.TRANSFERE ONIONS TO BLENDER OR
FOOD PROCESSOR AND PUREE UNTIL VERY SMOOTH.RETURN
PUREE TO PAN.ADD RESERVED LIQUID AND CHEESE
MIXTURE,ADD SALT AND SEASON TO TASTE WITH PEPPER.SERVE

    12 lb Very ripe fresh tomatoes
    16 tb Sweet butter
    4 tb Olive oil
    4 Onion, finely minced
    12 tb Flour
    16 c Boiling water
    4 Bouquet Garni*
    Salt freshly ground
    -white pepper
    24 tb Sour cream
    8 tb Finely chopped fresh dill

    8 c Cooked rice
    4 c Chicken stock

    * Bouquet Garni – In a piece of cheesecloth, tie the following: 3 to 4
    sprigs of parsley, 1 bay leaf, 1/2 celery stalk with leaves, 1/2 t dry
    thyme and 1 t fresh marjoram. Leave the string long enough to hang
    the garni in the pot and tie the string to the pot handle for easy
    removal. Drop the tomatoes into boiling water for 1 minute. Drain
    and peel. Chop coarsely and reserve. In a large saucepan, heat 1 T
    of butter and oil. Add the onion and cook over low heat until lightly
    browned. Add the remaining butter. When the butter is melted, add
    the flour and cook until it is golden brown. Be careful not to burn
    it! Add the chopped tomatoes stirring constantly. Then add the
    boiling water, Bouquet Garni, salt and pepper. Cover and simmer the
    soup for 35 minutes. Remove the soup from the heat. Remove the
    Bouquet. Cool the soup and puree it in the blender. If it seems too
    thick, thin it out with a little chicken stock or water. Serve the
    soup in individual bowls, each topped with 1 T sour cream and a
    sprinkling of dill. Notes: For a hearty soup, omit the sour cream and

  • Ham Pinwheels

    Title: HAM PINWHEELS

    Yield: 1 servings

    1 Cream cheese, softened
    1 ts Onion, gratred
    1 ts Horseradish
    1 ds Worcestershire sauce
    100 Ham, slices

    Blend cream cheese, onion, horseradish and
    Worcestershire sauce until of spreading consistency.
    Separate meat slices. Lay out five slices slightly
    overlapping on an 18″ piece of aluminum foil. Lay out
    two more rows to form a rectangle of meat. Spread
    with cheese mixture. Roll up as jelly roll using foil
    to bring up meat at beginning of roll. Use fingers to
    roll until complete. Chill. Just before serving,
    slice into one inch slices. Can be used with Corned

  • Caraway Cakes

    Title: Caraway Cakes

    1/4 c Butter or butter substitute
    1 c Sugar
    1 ts Lemon juice
    1/4 ts Vanilla
    2 Eggs
    1/2 c Milk
    1 ts Grated lemon rind
    1 1/2 c Flour
    1 ts Caraway seed
    1 ts Baking powder

    Cream sugar and butter or butter substitute. Add egg yolks. Beat
    thoroughly. Add lemon juice, flavoring, and grated lemon rind. Sift
    flour, measure, and sift with salt and baking powder. Add alternately
    with milk to first mixture. Add caraway seed. Mix thoroughly. Fold
    in stiffly beaten egg whites. Fill well-oiled muffin tins 2/3 full.
    Bake in moderate oven (375 F) about 30 minutes. The Household

  • FRESH PINEAPPLE WITH RUM CREAM

    1 md Pineapple
    8 sl Cantaloupe, thin slices
    — (garnish)



    —–RUM CREAM—–
    3 ea Egg yolks
    3 tb Sugar, superfine
    2 tb Rum, dark
    1/2 c Butter, unsalted, chilled
    — and cut into pieces
    1/3 c Cream, whipping

    For Rum Cream:
    ÿÿÿÿÿ

    In the top of a double boiler, blend the egg yolks and sugar.
    Place this over boiling water and whisk until warm to the touch. Add
    the butter, 1 or 2 pieces at a time. When all of the butter has been
    incorporated, whisk until lightly thickened, 1 or 2 minutes longer.

    Remove from heat and cool, whisking occasionally. When cool,
    gradually whisk in the rum and fold in about 1/3 cup of whipped cream.

    Cut off the base and stem of the pineapple, reserving a few small
    leaves for garnish. Quarter the pineapple lengthwise and then remove
    the skin and core with a sharp knife. Slice each quarter lengthwise
    into 1/4-inch-thick slices.

    To Assemble:
    ÿÿÿÿ

    Arrange the pineapple slices on chilled plates, overlapping
    slightly. Gently curl the cantaloupe slices in the shape of an “S”
    and place 2 pieces on each plate as garnish. Garnish with reserved
    pineapple leaves. Spoon some of the rum cream over the pineapple and
    serve remainder of the cream on the side.

    1 lb Lean ground beef
    1 tb Butter or margarine
    1 ea Med onion; finely chopped
    1 ea Medium green or red pepper*
    16 oz Can kidney beans, drained
    16 oz Can tomatoes**
    8 oz Can tomato sauce
    1 ea Clove garlic; minced
    1 ea Small bay leaf
    1/2 ts Salt
    1 ts Pepper
    1/4 ts Cumin
    1/4 ts Dried basil
    1/4 ts Crushed oregano leaves

    2-3 t chili powder *Finely chopped **drained, cut
    into bite size pieces In a heavy pot melt butter.
    Crumble meat into pot. Cook a few minutes until meat
    is no longer pink. Remove. To the pot, add onion and
    pepper. Cook a few minutes, stirring, until vegetables
    are soft. Add meat. Stir to combine. Add remaining
    ingredients. Heat to a boil.Reduce heat. Cook,
    stirring occasionally, at least 45 minutes. Remove bay

    1 1/4 cups water — or
    chicken broth
    2 tablespoons butter
    1 cup couscous — instant
    Salt
    freshly ground black pepper

    In a saucepan bring the water or broth to the boil. Add the butter, couscous,
    salt, and pepper. Stir. Cover. Remove the pan from the heat and let to stand 5
    minutes. Stir the couscous with a fork to fluff it up. Yield: 2 to 3 servings

  • General Tsaos Chicken

    Recipe

    Title: GENERAL TSAO’S CHICKEN

    3/4 lb Boneless chicken breast
    2 ts Dark soy sauce
    2 ts Rice wine or dry Sherry
    1 ts Finely chopped ginger root
    1 ts Cornstarch
    1 ts Sesame oil
    1/3 c Peanut oil
    2 Dried red chilies, cut in
    -half lengthwise
    1 tb Coarsely chopped fresh
    -orange peel or
    2 ts Soaked and coarsely chopped
    -dried citrus peel
    1/2 ts Finely ground roasted
    -Sichun peppercorns
    2 ts Dark soy sauce
    1/4 ts Salt
    1 ts Sugar
    1/2 ts Sesame oil

    Cut chicken into thin slices, 2 inches long, cutting
    against the grain. Put it into a bowl together with
    the soy sauce, rice wine, ginger, cornstarch and
    1 ts sesame oil. Mix well, let mixture marinate for
    about 20 minutes. Heat the oil in a wok or large
    skillet until it is very hot. Remove the chicken from
    the marinade with a slotted spoon. Add it to the pan
    and stir-fry it for 2 minutes until it browns. Remove
    it and leave to drain in a
    colander or sieve. Pour off most of the oil, leaving
    about 2 ts. Reheat the
    pan over a high heat and add the dried chilies.
    Stir-fry them for 10 seconds, then return the chicken
    to the pan. Add the rest of the ingredients and
    stir-fry for 4 minutes, mixing well. Serve immediately
    over white rice.

    2 lg Tomatoes, peeled and
    -chopped.
    4 Tomatillos, husked and
    -chopped.
    2 Fresh Anaheim chiles, seeded
    -and chopped.
    5 Green onions, chopped.
    2 Fresh jalapeno pepper,
    -seeded and chopped
    1 t Ground cumin
    1 t Fresh lime juice
    1 t Sugar
    1 t Minced fresh cilantro
    1/2 ts Freshly ground black pepper
    -(one half, not 1 to 2!)
    1/4 ts Salt.

    Makes about 2 cups.

    In lidded jar, combine all ingredients and marinate
    for at least one hour. May be stored for about 2-3
    weeks in refrigerator.

  • Cheese Almond Ball

    CHEESE ALMOND BALL

    8 oz Cream cheese, softened
    1 c Sharp cheddar cheese
    -shredded
    8 oz Sharp cold pack cheese food
    -plain or with wine
    1 tb Grated onion
    1 c Toasted sliced almonds
    2 tb Chopped parsley

    Beat cheese, milk, onion and 3/4 cup almonds until well blended. Chill at
    least one hour.

    Shape into a ball; wrap in waxed paper and chill several hours or
    overnight. Chop remaining almonds; add parsley. Roll ball in almond
    parsley mixture.

    Rewrap cheese ball until ready for use. Remove from fridge about one hour
    before needed, unwrap and let come to room temperature.

    Serve with assorted crackers.
