Title: Alligator Cacciatora Banquet

Yield: 100 servings
3 ea Adult Alligators
15 lb Zucchini sliced
3 cn Black pitted olives sliced
1 c Black pepper
4 c Oregano
1 pk Bay leaves (small box)
4 c Vegetable oil
50 lb Canned whole tomatoes
10 lb Sliced onions
1 c Salt
1/2 c Crushed red pepper
4 c Diced fresh parsley
20 lb Assorted green Red
1 ea Whole bulb of garlic
peppers Alligators… Discard head, feet and tail.
Wash and cut into individual portions. (so how much do
3 adult alligators weigh anyway?) Borrow, beg or steal
huge cooking pot. Use medium heat for oil and garlic.
Add alligator portions, turning often. Add tomatoes,
bring to boil, simmer, add salt, pepper, red pepper,
oregano, bay leaves, and parsley. Cover and simmer for
2 1/2 hours. Last 30 minutes add onions, peppers,
zucchini. Last 5 min. add sliced olives. Serve with
salad topped with favorite Italian dressing and crisp
bread. “New Orleans Cooks The Italian Way” Locovozzi
Mollicone (note: this is a real recipe and there is a
whole Italian area of New Orleans which as you can see
is spicy like cajun, but truely Italian. I have though
of ways to make this with some other meat, because we
just don’t have alligators in Milwaukee! Maybe
buffalo?)

Title: TEXAS PUDDING CAKE

1 1/4 c Flour
1/2 c Softened margarine
1 c Pecans
1 pk (8-oz.) softened cream
– cheese
1 c Confectioners’ sugar
1 (16-oz) container whipped
– topping, divided
1 (4-oz) box instant chocolate
– pudding
1 2/3 c Milk
Pecans
Mix flour, margarine, and pecans by hand or on low speed with mixture.
Spread mixture in a 13x9x2-inch pan. Bake at 350 degrees for 30 minutes.
Allow to cool completely.
Cream the cream cheese. Add confectioners’ sugar and mix well. Mix 8-oz.
whipped topping with cream cheese mixture. Evenly spread half of cream
cheese mixture on baked crust. Mix pudding and milk. Spread over cheese
layer. Spread remaining cheese mixture on top of pudding. Top with
remaining whipped topping. Garnish with pecans.

Title: HORSERADISH CHEESE SPREAD

1 lb Processed cheese, cut into
-cubes
1 c Mayonnaise
1/2 c Horseradish
assorted crackers
Melt cheese in the top of a double boiler or
microwave. Stir in mayonnaise and horseradish. Pour
into a small crock or ceramic bowl. Chill. Serve with
crackers. Makes about 2-1/2 cups.

1 Tablespoon Honey — (2 Tsp)
1 Teaspoon Caraway Seed — (1/2 Tsp)
1/2 Teaspoon Fennel Seeds — (1/4 Tsp)
1 1/2 oranges — (1 orange)
— grated rind
2 Teaspoons Active Dry Yeast — (1 1/2 Tsp)
The fennel seeds add an unusual licorice flavor to this bread. Thinly
sliced it’s good enough for any smorgasbord.
Place all ingredients in bread pan and press “start”.
After the baking cycle ends, remove bread from pan, place on cake rack, and
allow to cool 1 hour before slicing.

1/4 c White wine vinegar

In a large saucepan place all of the ingredients.
Bring the liquid to a boil and then simmer it for 30
minutes. Let it cool. Chef Tim Owen says: “Court
bouillon is used mainly for cooking fish and
shellfish. Foods that are cooked in the liquid will
absorb the flavor of the ingredients in the bouillon.”

Title: Pickled Dilled Beans

4 c White vinegar (5 percent)
4 c Water
1 ts Hot red pepper flakes

Yield: About 8 pints
Procedure: Wash and trim ends from beans and cut to 4-inch lengths. In
each sterile pint jar, place 1 to 2 dill heads and, if desired, 1 clove
of garlic. Place whole beans upright in jars, leaving 1/2-inch
headspace. Trim beans to ensure proper fit, if necessary. Combine salt,
vinegar water, and pepper flakes (if desired). Bring to a boil. Add hot
solution to beans, leaving 1/2-inch headspace.
Adjust lids and process according to the recommendations in Table 1.

boiling-water canner.

3 tb Peanut oil
1. Place fish in glass bowl.
2. Combine remaining ingredients except oil; pour over fish.
3. Cover and chill for 2 hours, turning occasionally.
4. Reserving marinade, thread fish chunks on skewers.
5. Basting often with marinade, cook over low coals or under a broiler 10
to 15 minutes, or until fish flakes easily.

Cut rhubarb into small pieces, add sugar and let mixture stand overnight.
In the morning, boil until thick and add 1 pint of chopped figs plus the
juice and rind of 1 lemon. Cook rapidly until mixture is thick and clear.
Pack while hot into sterile, hot jars. Seal immediately.

Preheat oven to 500 deg F. Press the beans through a colander. Addspices.
Shape mixture into patties. Combine egg and milk. Dippatties into egg, then
into cornmeal. Place in well oiled roastingpan. Bake until sausages are
browned on all sides, turning during cooking.
