Barbecued Lima Beans (USDA)

2 pounds dry lima beans — small
3 quarts boiling water
8 ounces salt pork — finely diced
1/4 cup instant minced onion
3 tablespoons prepared mustard
2 teaspoons Worcestershire sauce
2 teaspoons chili powder
1/8 teaspoon garlic powder
2 cans tomato soup, condensed — (10 1/2-oz each)
1/4 cup vinegar
1 1/3 tablespoons brown sugar
2 cups bean cooking liquid

Line four 8×8-inch baking pans with heat-resistant freezer wrap. Allow
enough extra wrap to fold over top. Use one pan for each six servings or
one-fourth of the recipe. Do not line pans for food to be served without
freezing.

Add beans to boiling water; return to boiling. Boil beans 2 minutes;
then soak beans 1 hour (or overnight, if preferred).
Cook beans slowly until tender, about 45 minutes. Drain; save 2 cups
cooking liquid.
Brown salt pork with onion. Mix remaining ingredients with salt pork
mixture. Add beans; stir gently. Pour one-fourth of mixture into each
baking pan.

TO SERVE WITHOUT FREEZING
Preheat oven to 400 F. (hot). Bake 30 minutes.

TO FREEZE
Cool for 30 minutes at room temperature. Complete wrapping by pulling
paper up over top of food. Put edges of wrap together and fold several
times so paper lies directly on top of food. Fold ends of freezer wrap
over the top and seal with freezer tape. Label with name of food, date of
freezing, and last date the food should be used for best eating quality
(about 6 months). Freeze immediately for 10 to 12 hours before removing
packages from the pans.

TO HEAT FROZEN FOOD
Preheat oven to 400 F. (hot). Remove freezer wrap. Place food in
baking pan. Bake 1 hour or until center is hot.

NOTES : This recipe is for 24 servings (about 1/2 cup each). Directions are
given for dividing the prepared food into four parts of six servings each.
One part may be completely cooked and served at the time of preparation.
The remaining parts may be frozen.

    3 x Egg Whites
    1/8 ts Mace
    12 x Soda crackers, crushed
    3/4 c Chopped Walnuts
    1 c Sugar
    1 ts Vanilla
    1 ts Baking Powder

    MMMMM———————STRAWBERRY FILLING————————–
    1 1/2 c Fresh Strawberries, crushed
    1 ts Lemon peel
    1/4 c Cold water
    1/4 c Sugar
    Envelope unflavored Gelatin
    30 x Whole, fresh Strawberries

    MERINGUE CRACKER CRUST:
    Beat egg whites until stiff. Combine sugar and mace; add 1 T at a
    time to egg whites, beating well after each addition. Add vanilla.
    Combine crushed crackers, baking powder and nuts. Fold into egg white
    mixture. Spoon into buttered 10″ pie plate, pushing mixture to
    conform to shape of pie plate.. Bake at 350 deg F for 30 minutes.
    Cool. (This crust is excellent for chiffon or ice cream pie.)
    STRAWBERRY FILLING:
    Combine crushed strawberries, sugar and lemon peel. Soften gelatin
    in cold water in pan. Heat gently to melt the gelatin. Add to crushed
    berry mixture. Chill until mixture begins to thicken. Spread half the
    mixture over the bottom of cooled crust. Add enough whole berries,
    stem end down and close together, to fill pie. Carefully spoon
    remaining crushed berry mixture around whole berries. Chill until
    firm. Serve with whipped cream, if desired.

    16 oz Light Sour Cream
    3 oz Parmesan cheese
    14 oz Can Artichoke Hearts — drain, rinse, chop
    10 oz Pk chopped spinach — thaw, drain well
    6 oz Monterey jack cheese — shred

    Combine sour cream and 2 oz of parmesan cheese (reserve other ounce
    for topping later) in a 2qt casserole dish. Stir in spinach and
    artichokes. Mix well. Cover top with monterey jack and other ounce of
    parmesan cheese. Bake for 15 minutes at 400~ and then broil for about 5
    minutes or until cheese is golden brown. Serve with tortilla chips and
    side dishes of sour cream and your favorite salsa. This makes about 4
    times what you are served at a restaurant so you may want to adjust the
    ingredients. (wrv)

  • Orange Granola Cookies

    Title: Orange Granola Cookies

    2 c Flour
    2 1/2 ts Baking powder
    1 1/2 ts Cinnamon
    1/2 ts Baking soda
    1/2 ts Salt
    1/4 ts Ground cloves
    1/2 c Butter or margarine,softened
    1/2 c Sugar
    1 Egg
    1/3 c Frozen orange-juice
    Concentrate, thawed,
    Undiluted
    1/2 c Honey
    1 c Raisins
    1 c Uncooked oats
    1/2 c Sunflower seed

    Stir together flour, baking powder, cinnamon, soda, salt and cloves; set
    aside. In large bowl cream butter and sugar until light and fluffy. Beat
    in egg. Alternately stir in flour mixture, orange concentrate and honey
    until blended. Stir in raisins, oats and sunflower seed. Drop by
    tablespoonfuls 2 inches apart on greased baking sheets. Bake in preheated
    350 degree oven 15-20 minutes or until lightly browned. Cool on rack.

    1 pkg flour tortillas
    8 oz cream cheese — softened
    8 oz sour cream
    4 oz can chopped green chilies — drained
    1/2 can black olives — chopped
    1 cup shredded Cheddar cheese
    garlic powder to taste
    salsa

    Mix together cream cheese, sour cream, garlic powder, chilies, and black
    olives. Spread over tortillas; roll up. Wrap each roll-up in plastic
    wrap and refrigerate overnight. To serve cut each roll-up into wheels;
    pass salsa for dipping.

  • Title: CHOCOLATE BREAD PUDDING (FINSAND)

    1/2 c Chocolate chips;
    3 c Skim milk;
    2 Eggs;
    1/2 ts Salt;
    1/3 c Granulated sugar replacement
    2 ts Vanilla extract;
    8 sl Dry bread;

    Melt the chocolate chips in 1 cup of the skim milk
    over medium heat. Stir in the remaining milk. Set
    aside. Beat eggs unitl frothy; add salt, sugar
    replacement and vanilla extract. Beat well. Stir egg
    mixture into chocolate/milk mixture. Trim crust from
    bread and cut into slices into small cubes. Drop cubes
    into greased 1 1/2-qt casseole or baking dish. Pour
    chocalate mixture over the bread cubes; be sure to
    saturate all the cubes. Set casserole in pan of hot
    water. Bake at 350 degrees for 1 hour or until pudding
    ic completely set. Serve warm or cold. Food Exchange

    1 tablespoon olive oil

    2 teaspoons cumin
    1 teaspoon paprika — sweet
    1/2 teaspoon ground turmeric
    1/4 teaspoon cayenne pepper
    3 garlic cloves — minced
    1/2 small yellow onion — minced
    1/3 cup chopped fresh cilantro — (coriander)
    1/4 cup chopped fresh parsley
    1/3 cup fresh lemon juice
    3 tablespoons olive oil
    Salt and freshly ground pepper

    1 pound tuna steak — or swordfish fillet
    1 tablespoon olive oil
    –:–
    1 lemon — cut into 6 wedges

    1. Prepare a fire in an outdoor charcoal grill or preheat a broiler (griller).

    2. In a large pot over high heat, bring the water to a boil. Cook the pasta
    (12-15 minutes); drain and toss with 1 tablespoon oil. Cover and cool
    completely in the refrigerator, 1-24 hours.

    3. To make the sauce, in the work bowl of a food processor with the metal
    blade or a blender, combine the cumin, paprika, turmeric, cayenne, garlic,
    onion, cilantro, parsley, lemon juice, 3 tablespoons of the olive oil and
    salt and pepper to taste and puree until smooth.

    4. Coat the tuna or swordfish with the remaining 1 tablespoon olive oil.
    Grill the fish over a medium-hot fire or broil (grill), turning
    occasionally, until opaque throughout when pierced with a knife, 64
    minutes. Set aside until the fish is cool enough to handle. Place on a
    cutting surface and cut into 1-inch (2.5-cm) cubes.

    5. In a large bowl, combine the sauce, orecchiette and fish. Toss to mix well.

    6. To serve, place in a serving bowl or divide among individual plates and
    garnish with the lemon wedges. Add tomato slices and lettuce leaves for
    more color. Serve at room temperature.

  • CHRISTMAS/THANKSGIVING STUFFING

    1/2 lb Beef, ground
    2 tb Butter
    1 t Salt
    1/2 c White rice, raw
    1 Poultry liver
    -(from the bird you
    -are going to stuff)
    1/2 c Pine nuts
    1/2 c Almonds (blanched),
    -whole
    10 Prunes, pitted
    1/2 c Raisins
    10 Chestnuts (up to 15)

    Cook the chestnuts: Cut a groove on each chestnut and
    roast them on the stove (if you’ve got an electric
    stove, placing the chestnuts on the burner will do the
    trick, though you’ll have to do some cleaning
    afterwards.) When they’re done, peel them. Watch your
    hands.

    Brown the beef with half the butter. Add the rice,
    salt and a little water, and let it cook on low heat,
    until the water is absorbed.

    Boil the liver, mince it and add it into the rice and
    meat. Add the almonds, prunes, raisins, chestnuts
    (cut in chunks) and pine nuts. Add a small amount of
    water and let everything simmer until the water is
    absorbed.

    The stuffing is ready to use. Add the remaining
    butter and bake it. I usually wrap the stuffing in
    aluminum foil, put it in a separate pan and bake it
    along with the chicken. When the chicken is ready, the
    stuffing is ready too!

    NOTES:

    * Holiday stuffing with fruit and nuts — This is an
    elaborate version of the type of poultry stuffing made
    in Greece. People there have never heard of bread
    stuffings and, once you taste this recipe, you’ll
    never want to hear about bread stuffings either! I got
    the recipe from my mother, who got it from a friend,
    who got it from her sister-in-law, who… Yield:
    stuffs 5-6 lb poultry.

    * If the chestnut-roasting procedure is to messy for
    you, then just boil them.

    * The amounts in the ingredients list are there for
    completeness’ sake. You should really interpret them
    as a few, a handful or one small package. The only
    thing you have to bear in mind is that putting more
    prunes will make the stuffing sourer, and putting more
    raisins will make it sweeter.

    * The original recipe suggested using unpitted
    prunes. I believe that using pitted prunes is safer
    for the teeth!
