Title: Spinach
Categories: Diabetic, Side dishes, Vegetables
Yield: 4 sweet ones
2 lb Fresh spinach; 2 cl Garlic; minced
1 ts Seasame oil; 1 tb Toasted seasame seeds;
Rinse spinach leaves well and trim large stems. In a large non-stick,
heat sesame oil and saute garlic. Add wet spinach leaves and cook
until wilted, about 5 minutes. Drain; stir in sesame seeds. Serve
warm or at room temperature.

Carrot with Fennel

1 tablespoon olive oil — or canola oil
1 Spanish onion — coarsely chopped
2 pounds carrots — peeled and sliced
8 cups chicken broth — or vegetable stock
1 teaspoon dried fennel seed
Directions:
1. Heat oil over low flame in a 3-quart soup pot. Add onion and carrots and
cook, covered, until vegetables are tender, 15 to 20 minutes.
2. Add stock and fennel and bring to a boil. Reduce heat to low and simmer for
20 minutes.
3. Remove solids and place in a food processor or blender. Process until
smooth, gradually adding remaining broth.

IMPOSSIBLE BANANA CREAM

1 c Milk
1/3 c Margarine, melted
1 t Vanilla
3 Eggs
1 1/2 c Sugar
1/2 c Bisquick
2 Bananas, sliced
1 c Whipping cream, chilled
2 tb Sugar, confectionary
Heat oven to 350 deg. Grease 9 in. pie plate. Place
milk, margarine, vanilla, eggs, sugar and Bisquick in
blender and blend for 30 seconds. Pour into plate.
Bake about 30 min. Arrange bananas on pie. Beat
whipping cream and powdered sugar until stiff. Spread
over top of pie, covering bananas. Suggestion: Slice
bananas after pie is baked and just before covering
with whipped cream.)

Cream Dressing

1/2 teaspoon Salt
1 tablespoon Flour
1 teaspoon Dry mustard
1 tablespoon Sugar
2 tablespoons Butter
2 Egg yolks
3/4 cup Cream
1/4 cup Vinegar
Mix flour, salt, mustard and sugar in the top of a double boiler. Add
butter and stir til mixed. While beating, add the egg yolks; stir well.
Add the cream and lastly the vinegar.cook over hot water until it
thickens. Strain if necessary. chill and serve cold.

Banana Malt
1 – 2 frozen very ripe bananas
1 – 2 Tbs Malt powder
~1 C Rice Milk (maybe more?)
1 tsp vanilla (optional)
Break or slice the banana into small chunks and put in a blender. Add
malt powder. Add a small amount of the rice milk and start to blend.
Add more rice milk as necessary until the banana goes from chunks
to puree, then blend for another minute or two before adding the rest
of the rice milk and optional vanilla.
If you try to blend all the ingredients at once you’re likely to
end up with un-blended banana chunks.
This recipe is a good way to use over-ripe bananas, which we peel and
freeze when they’ve been on the counter for a bit too long.

Funnel Cakes from Bidemika

3 eggs
3 cups flour — (3 to 4)
2 cups milk
1/2 tsp salt
1/4 cup sugar
2 tsp baking powder
Beat eggs, sugar, and milk. Sift half the flour, the salt, baking
powder together, then add to the milk and egg mixture. Beat the batter
smooth and add only as much more flour as needed. Batter should be
thin enough to run thru a funnel. Keeping funnel bottom covered w/your
finger fill the funnel. Drop batter from funnel into coils or other
intricate shapes into hot oil ( 375). Serve hot with molasses, jam. or
sprinkle w/powdered sugar.

Title: QUICK VEGETABLE STOCK

3 ea Carrots, large
1 ea Turnip, large
2 ea Stalks celery
2 ea Onions. large
2 tb Butter
3 qt Water
2 ts Salt
6 ea Large sprig parsley
1/2 ea Bay leaf
1 ts Thyme leaves
Scrub and coarsley chop carrots, turnip, celery, peel and chop
onions. Melt butter in 8-quart pan over medium heat. Add chopped
vegetables and cook, stirring occasionally, until vegetables turn
golden (about 15 minutes). Add water, salt, parsley, bay leaf, and
thyme leaves. Cover and bring to a boil. Reduce heat and simmer for
1-1/2 hours. Strain and discard vegetables. Makes 2-1/2 quarts
stock. You can adjust the seasoning to suit your taste by adding 2
cloves, peeled garlic, several peppercorns, or your favorite herbs.
You can freeze extra stock for future use.

1/2 ts Dry mustard
1 t Worcestershire sauce
Saute onions, pepper and celery in oil until tender.
Add remaining ingredients. Heat through. Serve on buns.

Title: SWEET AND SOUR PORK #1

Yield: 6 servings
1 1/2 lb Pork steak or 1 lb cooked
-ham
1 tb Oil (optional)
1 cn (20-oz) pineapple chunks
-packed in its own juice
1 c Liquid – pineapple + water
1 pk Brown gravy mix
3 tb Vinegar
1/4 ts Minced ginger
1 Chopped green pepper (opt)
If you are using pork steak, freeze it just until firm
and then slice it into very thin strips. For ham, cut
into long strips about 3/8-inch on a side.
Brown meat in frying pan or wok, use oil if necessary.
Drain pineapple juice from canned pineapple into a
measuring cup and add water if necessary to get
correct amount of liquid. Add this to fry pan or wok.
Stir in brown gravy mix, vinegar and ginger. Add
pineapple and green pepper. Simmer about 10 minutes,
just until liquid begins to thicken. Serve over rice.

12 oz Chocolate chips
14 oz Can condensed milk
1 ts Peppermint flavoring
Melt chocolate and milk slowly over low heat. Stir in peppermint.
Drop by sm spoonfuls onto waxed paper. Allow to dry and set for
several hours or overnight. Store in a covered container, but do not
refrigerate.
