Title: BEATLES

3/4 c Butter or margarine
2 1/4 c Sugar
3 Eggs
5 1/4 c Flour
3/4 ts Salt
3/4 ts Baking soda
1 tb Baking powder
1 1/2 c Sour cream
1 1/2 ts Vanilla
1/2 c Semisweet chocolate pieces
2/3 c Sugar
1 tb Ground cinnamon
Cream butter and first amount of sugar. Add eggs and mix well. Sift flour
with salt, soda and baking powder. Alternately add to egg mixture with sour
cream. Add vanilla and fold in chocolate pieces. Drop by heaping teaspoons
onto greased baking sheets. Combine remaining sugar with cinnamon and
sprinkle over each cookie. Bake at 375F 12 minutes.

Title: Garbanzo Sesame Spread

1/3 c Lemon juice, fresh
2 tb Lemon juice, fresh
1/4 c Tahini (sesame paste)
3 tb Green onion, chopped
2 cl Garlic
1/4 ts Salt
Pepper, freshly ground
Cilantro for garnish
Toasted pita wedges
Puree all but cilantro and pita wedges in food processor. Transfer to
bowl, cover and refrigerate at least 30 minutes. Garnish with

PRESSURE COOKED SEITAN

1 1/3 c Quick Mix Seitan
3/4 c Water
Prep time: 30 to 40 minutes
Prepare mix and water as in directions for Basic
Seitan on box. Prepare broth (for 14 oz.) also. Cut
Seitan into 8 even pieces and place with broth in
pressure cooker. Bring to simmer. Attach lid. When
up to pressure, let cook for 25 minutes. Remove from
heat. Let cool so pressure will drop. Seitan is
ready to eat.

finalist in the Culinary Olympics held in Frankfurt,
Germany.

2 cloves peeled garlic, — boiled for 5 minutes
1 pound yellow tomatoes
1 pound yellow bell peppers, peeled with a — vegetable=
peeler a
2 tablespoons olive oil
2 tablespoons champagne vinegar
Ice water
1 yellow squash
4 slices crustless white sandwich bread
Salt and freshly ground black pepper
8 small oil cured olives, pitted and — cut into slivers
1 ripe red tomato, seeded and — cut into dice
In a food processor combine the garlic, yellow tomatoes and bell peppers.
Puree and thin with olive oil, vinegar to taste and some water if too
thick. Season well to taste with salt and pepper.=7F
Seed the squash and cut into 1/4-inch dice. Cut the bread into 1/2-inch
dice, drizzle with olive oil, salt and pepper and bake in a 400 degree oven
for about 10 minutes or until somewhat crisp and brown.
Ladle soup into chilled soup bowls; garnish with squash and croutons and
center some red tomatoes and black olives in middle of each portion if you
like.

Title: Glazed Fresh Strawberry Pie

Yield: 6 servings
3 pt strawberries; fresh, hulled
1 c sugar
3 1/2 tb cornstarch
1/2 c water
1 red food coloring; a few dr
1 baked 9 pie shell
1 sweetened whipped cream
Mash 1 pt of the strawberries, using a fork, and set aside. Combine
the sugar and cornstarch in a 3 quart sauce pan. Stir in the water
and mashed berries. Cook over medium heat, stirring constantly,
until the mixture comes to a boil, then cook 2 minutes longer.
Remove from the heat and stir in the food coloring. Cool to room
temperature. Fold in the remaining 2 pts of strawberries and turn
into the baked pie shell. Chill in the refrigerator at least 2
hours. To serve, top with puffs of sweetened whipped cream

Coffee Sabayon

4 teaspoons instant espresso or coffee —
dissolved in 1/4 cup boiling
4 egg yolks
1/2 cup sugar
1/4 cup rum
Steep instant espresso in boiling water and cool to room temperature. Mix
with 4 egg yolks, and sugar and set in the top of a double boiler. Beat
with an electric beater until mixture is thick and fluffy. Beating
constantly, pour the rum into the egg yolk mixture in a slow thin stream
and continue beating until mixture almost triples in volume; this may take
10 minutes or so.
To serve, spoon mixture into balloon wine glasses or goblets, or chill for
30 minutes and serve as a sauce over ladyfingers or angel food cake.

Title: Green and Gold Squash

1/2 lb Zucchini; 1 ts Dried Leaf Oregano;
1/2 lb Yellow summer squash; 1/4 ts Pepper;
1 cl Garlic; minced 1 ts Virgin olive oil;
Slice zucchini and squash in thin rounds. Mix with garlic, oregano,
and pepper, and place in a steamer basket over boiling water. Cover
and steam 2 minutes or until just tender. Remove from basket to
serving bowl and toss with oil.

PINTO BEAN LOAF

3 c Pinto Beans, cooked/mashed
1 c Tomato sauce
1 c Bread crumbs, finely ground
1/4 c Minced onion
1/4 c Quick oatmeal
3 ts Egg replacer mixed with
4 tb Water, beat til frothy
Fresh ground pepper to taste
1/4 c Catsup or barbeque sauce
Preheat oven to 350 degrees. Combine all
ingredients, except catsup, in a large bowl. Mix
well. Turn into a non-stick loaf pan, 9-1/4 x 5-1/4 x
3, and flatten.
Spread catsup or BBQ sauce over the top. Bake for
45 minutes. NOTE: Makes a good sandwich spread when
cold.

For chewy cookies bake 9-10 minutes. For crispy cookie, bake 12-13

Title: MAPLE SYRUP NUT CAKE

1 c Maple syrup
1/2 c Milk
1 c Chopped nuts
1/2 c White sugar

1/2 c Soft shortening
2 ea Eggs
Sift dry ingredients together into bowl. Add syrup,
shortening and milk; beat 2 minutes. Add eggs and
beat 2 minutes. Add choppeed nuts and mix well. Pour
into 2 greased and floured 9″ pans. Bake in 350ø oven
