1/2 Lb (2 Sticks) Unsalted Butter
2/3 Cup Sifted Confectioner’s Sugar Plus More
For Rolling
1 Tsp Vanilla Extract
1/2 Tsp Almond Extract
1 Cup Coarsely Chopped Almonds
2 1/3 Cups Sifted All-Purpose Flour

1. Heat oven to 350° and line baking sheets with parchment paper. Cream
together butter and 2/3 cup sugar until fluffy. Beat in extracts, then add
almonds. Stir in flour and beat until well mixed.

2. Divide dough in half and roll each half into a log 1 inch in diameter. Cut
each log into 3/4-inch pieces, and roll each piece into a cylinder 2 inches
long. Place cylinders 1 to 2 inches apart on baking sheets, and form into
crescents.

3. Bake for 15 to 20 minutes, or until lightly golden. Let crescents cool, then
roll in additional sugar.

GARIDES TOURKOLIMANO ( GREEK SHRIMP)

3 lb Raw large shrimp
1/2 c Lemon juice
1/2 c Butter — whipped
1 Garlic clove — minced
1 c Chopped green onion tops
3 Lg tomatoes — peeled,in wedges
1 t Oregano
Salt pepper
1 lb Feta cheese, crumbled
3/4 c Cream sherry

Peel and devein shrimp. Sprinkle with lemon juice and
set aside. Melt butter in large skillet. Saute
garlic, green onion tops and tomato wedges. Add
shrimp and season with oregano, salt and pepper to
taste. Turn shrimp frequently and saute until pink.
Add feta cheese and cream sherry. Bring to boil and
cook 3 to 4 minutes. Remove shrimp carefully to
casserole. Spoon cheese-sherry mixture over shrimp.

2 lg Packages of cream cheese
1 cn Shrimp or crab, undrained
2 Inches of grated ginger root
1 lg Package wonton skins

The Japanese Furo or wooden tub brings a touch of the
Orient to enhance the moonlit spell as you play the
perfect hostess in your terry kimono. Serve any or
all of the following enchanted nibblers.

Menu – Wonton, Rangoon Petite Chicken Wings, Lomi Lomi
Cherries, Banana, Kumquat Pineapple Kabobs,
Sparkling Cider, Kiwi Cocktails

Serving Suggestions Try teal blue linen on your “Lazy
Susan” to hold Japanese rice bowls brimming with the
Oriental favroites. Your guests in the Furo may sip
sparkling cider in silver goblets while the deck-side
group enjoy Kiwi cocktails in frosted champagne
glasses. In cold weather, offer cups of Japanese tea
with sprig of mint. Teal Blue napkins are ideal to
wipe sticky fingers.

Wonton Rangoon

Mix the cream cheese with the shrimp/crab. Place a
teaspoon or less of the mix in each wonton skin. Roll
each skin into a long roll. Freeze ahead or use
immediately. When ready to serve, cook the rolls
quickly in about 1/2″ of fat until browned on both
sides or brown in 400~ oven. Try cooking both ways for
a variety of tastes.

Pettie Chicken Wings Marinade: equal parts soy sauce
whiskey garlic powder brown sugar to taste

To prepare chicken wings, cut off the wing tips at the
joint and discard. Disjoint the next two bones and
with sharp knife, divide the section that has two
bones, thus making three ‘drumsticks’ from each wing.
Marinate in the sauce at least 1/2 hour, overnight if
possible. When ready to cook, bake at 400~ for
approximately 20 minutes or deep fry.

Lomi Lomi Cherries 1 pint cherry tomatoes 3 oz smoked
salmon OR 1 can shrimp pieces 1 minced onion 1 minced
green pepper

Cut the tops from the cherry tomatoes ands scoop out
the seed and pulp with a demitasse spoon. Combine the
salmon/shrimp, onion and green pepper. Refill the
tomatoes and chill at least 1 hour before serving. For
a change of pace, fill each tomato with a smoked
oyster.

Banana, Kumquat Pineapple Kabobs 9 firm bananas, cut
into 4 chunks each (36 pieces total) 36 preserved
kumquats, drained 1 fresh pineapple, cut into 36 chunks

Sauce: 9 Tb honey 9 Tb melted butter 3 tsp ground
ginger

Alternate fruits on 12 bamboo skewers and broil on a
hibachi about 4 inches from the coals. Brush with
sauce. Turn and baste until golden brown on both
sides.

Sparkling Cider (non-alcoholic beverage) Chill
bottles of sparkling cider. Fill iced silver champagne
glasses.

Kiwi Cocktails (alcoholic beverage) 1 kiwi fruit,
peeled 8 oz light rum 4 Tb sugar syrup 2 Tb lemon juice

Puree kiwi in blender. Add rum, sugar syrup lemon
juice. Blend, then sake with cracked ice and strain
into prechilled glasses or serve over ice. [ Food for

Reduced Fat Pumpkin Pie

1 ea pie crust (9 inch) — unbaked
15 oz canned pumpkin
14 oz fat-free sweetened condensed milk
4 ea egg whites
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
1 tsp salt

Preheat oven to 425 F.

In mixer bowl, combine all ingredients except pastry shell; mix well.
Pour into pastry shell. Bake 15 minutes. Reduce oven temperature to
350 F., bake 25 to 30 minutes longer or until knife inserted 1 inch from
edges comes out clean. Cool. Garnish as desired. Refrigerate
leftovers.

CARAMEL BREAKFAST ROLLS

2 Loaves frozen bread dough
– (1 lb. loaves) — thawed
1 c Brown sugar — firmly packed
1 pk Vanilla pudding (regular)
1/2 c Milk (or half-and-half)
1/2 c Nuts — chopped, divided
1/2 c Raisins — divided

Cut 1 loaf of dough into small pieces; place dough
pieces in a greased 13x9x2inch baking dish.

Combine brown sugar, pudding mix, butter, and milk;
mix well. Drizzle half of the brown sugar mixture
over dough pieces; sprinkle with 1/4 cup nuts and 1/4
cup raisins.

Cut remaining loaf of dough into small pieces; place
dough pieces over first layer. Drizzle remaining
brown brown sugar mixture over dough pieces; sprinkle
with remaining nuts and raisins. Cover and
refrigerate several hours or overnight. Bake at 325
degrees for 50 to 60 minutes.

Yield: 10 to 12 servings.

NOTE: chopped maraschino cherries and crushed
pineapple may be substituted for nuts and raisins.

Impossible Chicken Pie

2 c Cooked diced chicken
1/2 c Peas and carrots
1/4 c Mushroom pieces
1 1/3 c Milk
4 x Eggs
3/4 c Bisquick
1/2 ts Salt
1/4 ts Pepper

Heat oven to 400. Grease a ten inch pie plate. Mix
chicken, peas, carrots, mushrooms and onion in pie
plate. Beat remaining ingredients in blender until
smooth. (15 seconds) Pour into pie plate. Bake at 400
for 30-35 minutes. Cool 5 minutes before serving.

Savory Beans

Title: Frijoles a la Charra (Savory Beans)

1 c Pink beans, dried; or pinto
1/4 lb Pork rind, fresh; cut into
;small squares
1/4 Onion; sliced
2 cl Garlic; finely chopped
1 1/4 ts Salt
1/4 lb Bacon; cut into small pieces
2 tb Lard; or pork drippings
2 md Tomato; peeled, seeded and
;chopped, juice strained and
;reserved
3 Serrano chilies; stemmed and
;finely chopped
2 lg Coriander sprigs

Put the beans, pork-rind squares, onion and garlic into a bean pot
or large saucepan. Add 6 cups of water and bring it to a boil.
Reduce the heat, cover the pot, and let the beans cook gently until
they are tender, about 1 1/2 hours. Add the salt and cook the beans,
uncovered, for another 15 minutes.
In a separate pan, cook the bacon gently in the lard or drippings
until it is slightly browned. Add the tomatoes with their juice, and
stir in the chilies and coriander. Cook the tomato mixture over a
fairly high heat for about 10 minutes, until it is well seasoned and
thick.
Add the tomato mixture to the beans and let everything cook,
uncovered, over low heat for about 15 minutes.
Serve in small individual bowls with grilled meat, or add some more
liquid and serve as a soup. misc04

2 cups pitted cherries, blueberries, or apples
3/4 cup water
1/3 cup sugar — optional
1/2 teaspoon cinnamon — or cardamom
1 teaspoon lemon juice
3 tablespoons dry bread crumbs

Combine fruit water and sugar in saucepan. bring to boil. Simmer until fruit
is tender and water is almost gone. Remove from heat. mash slightly with
potato masher. Add cinnamon and lemon juice. Cook and stir over low heat
until thick. Stir in enough bread crumbs to further thicken.

Nearly Instant South American Tomato and Scallion Soup

3 cups roughly chopped tomatoes
1 bunch sliced green onions — (or more)
1/3 cup olive oil
3 tablespoons red wine vinegar — (or rice vinegar)
1 teaspoon salt
1/2 teaspoon black pepper

Toss together. Let sit around in the fridge for awhile. Serve. Feeds four
or so.
