2 1/3 Cups All-purpose flour
1 1/2 Teaspoons Baking Powder
1/4 Teaspoon Salt
2 Sticks Butter — room temperature
1 2/3 Cups Granulated sugar
5 Large Eggs
1 1/2 Teaspoons Almond extract
3 Ounces Semisweet chocolate chips (1/2 Cup) — melted
Confectioner’s sugar — optional

1. Heat the oven to 325F. Grease and lightly flour a 10-cup Bundt or
fluted tube pan.

2. In a small bowl, beat the butter with an electric mixer until
smooth.

3. In a large bowl, beat the butter with an electric mixer until
smooth. Add the sugar and beat until pale and fluffy.

4. Add the eggs one at a time, beating well after each addition.
Beat in the almond extract.

5. With the mixer on low speed, beat in the flour mixture until
smooth.

6. Put about 1 1/2 cups of the batter into a small bowl. Stir in the
melted chocolate until well blended.

7. Alternately put large spoonfuls of white and chocolate batter
into the prepared pan. Swirl gently with a thin knife to marbleize
the batter slightly. Tap the pan on the countertop to remove any air
bubbles.

8. Bake for 1 hour and 20 minutes, or until a toothpick inserted near
the center of the cake comes out clean. Set the pan on a wire rack to
cool for 20 minutes. Invert the cake onto the rack and cool
completely. Just before serving, sift confectioner’s sugar over the
top.

Oniony Tempeh

ONIONY TEMPEH

1 pk Tempeh
1/2 Onions — thinly sliced
1 t Butter
1 Garlic cloves, crushed
1 Chili peppers
1/2 ts Sauce, soy
1 t Sugar, brown

Dice tempeh and deep fry until crunchy. Fry onion in
butter until limp; add
garlic and chili pepper and saute briefly. Add fried
tempeh and stir around.
Add sweet soy sauce and brown sugar. Keep stirring
the mixture. Tempeh is fermented soy beans and paste
sold in “bricks.” The idea is to coat the tempeh with
the sugary, spicy, oniony, flavor…so you won’t taste
the tempeh. (G)

Cornucopia

Recipe

Title: CORNUCOPIA

3 cn Soft-breadstick dough
1 lg Egg, beaten with:
1 tb Water

——————ASSORTED RAW VEGETABLES——————
Sugar snap peas, red and
Yellow cherry tomatoes,
Baby carrots, baby squash,
Cauliflower and broccli
Floretts.

1. Preheat oven to 350 degrees F. Lightly spray a
cookie sheet, at least 17“x 14”, with non-stick
cooking spray.

2. Tear off a 30“x 18″ sheet of heavy duty aluminum
foil. Fold in 1/2 to 18”x 15". Roll diagonally to
form a hollow cone, about 18″ long with a diameter of
5″ at the widest end (Cornucopia opening). Fasten end
with clear tape. Stuff cone with crumpled regular
foil until form is rigid. Bend tail of cone up then
down at end. Spray outside of cone with non-stick
cooking spray. Place on cookie sheet.

3. Open and unroll first can of breadstick dough on
work surface. Seperate breadsticks. Begin by wraping
one breadstick around tip of cone. Brush end of next
breadstick with Glaze and press to attach to end of
first breadstick. Continue spiral-wrapping cone,
slightly overlapping dough until there are 3
breadsticks left.

4. Pinch one end of the 3 breadsticks together, then
braid. Brush bread around opening of Cornucopia with
Glaze. Gently press on braid. Brush entire
Cornucopia with Glaze.

5. Bake 45 minutes in preheated oven or until bread
is a rich brown. (If parts start to darken too much,
cover them with poeces of foil.)

6. Remove from oven and let cool completely on cookie
sheet on a wire rack. Carefully remove foil when
cool. (If freezing, leave foil in bread for support.
Remove when thawed.)

7. Fill Cornucopia with the assorted raw vegetables
directly on table and let them spill out of opening

NOTE– To prevent this center-piece from absorbing
atmospheric moisture, the baked Cornucopia cone can be
sprayed with shellac or clear enamel. If treated in
this manner, the Cornucopia will be inedible but can
be preserved and re-used.

Venison Stew

Recipe

1 1/2 lbs lean venison, cut into cubes
olive oil (no substitutes)
2 onions,sliced
2 potatoes, peeled and diced
2 stalks celery,diced
2 carrots, peeled and diced
water
1 pint dry red wine
salt and pepper to taste
1/2 clove garlic,mashed
bay leaf

Pat meat dry with paper towels (it browns better). Brown cubes
in heavy iron pot in a few spoonsful of olive oil. Add onions and
stir until golden and limp. Add carrots, potatoes and celery. Pour in red wine.
Add water to almost cover. Add garlic salt and bay leaf. Season to taste with
salt and pepper. Put lid on pot and simmer for about 2 hours or
until meat is tender. If gravy cooks away, add a little hot water.

Good with buttered noodles.

Makes: 4 servings.

Asparagus Mushrooms in Tarragon Cream

2 pounds asparagus
2 tablespoons butter
3 cloves garlic — minced
1 tablespoon dried tarragon
3/4 pound mushrooms — thickly sliced
1/2 teaspoon salt
1 tablespoon unbleached flour
1 1/2 cups half and half
1/2 teaspoon nutmeg
1/2 cup parmesan cheese
black pepper — to taste
1 lemon — cut in 6 wedges
12 ounces pasta

Break off the tough ends of the asparagus stalks cut the asparagus at a
slant into 3″ lengths. Melt the butter in a large skillet; add the garlic
tarragon and stir to distribute. Add the asparagus mushrooms, sprinkle with
the salt; stir. Saute over medium heat for about 10 minutes. Sprinkle the
flour over the vegetables stir to distribute. Add the half and half
nutmeg. Reduce the heat to low. Bring to a simmer cook for about 5 minutes
until the sauce is slightly thickened.

Meanwhile, bring several quarts of water to a boil cook the pasta al dente.
Drain the pasta very well. Toss the pasta with the sauce in a warm serving
bowl. Add the parmesan cheese and a few grinds of fresh black pepper toss
again. Serve immediately with the lemon wedges. Pass additional parmesan, if
desired.

Serving Ideas : Serve with steamed or glazed carrots.

NOTES : This dish is perfect in spring when fresh slender asparagus is at its
peak.

1 x Cornstarch
3 tb Soy sauce
1 x Sugar
1 x Pepper
1 lb Sirloin tip; sliced 1/8 in.
1 x Oil (Peanut)
1 ea Onion; sliced
2 ea Green peppers; sliced
2 ea Stalks celery; sliced
1/4 c Cold water
1/2 ts MSG

3,4 ea tomatoes; cut into wedges 3,4 ea green
onions; 2″ strips Mix 2 teaspoons cornstarch, soy
sauce, 1 teaspoon sugar, pinch of salt and pepper; add
sirloin.
Marinate for 10 to 15 minutes. Drain sirloin; fry in
small amount of hot oil over high heat until meat
loses red color. Push to outer edge of pan. Add small
amount of oil; cook onion, green peppers and celery
for 5 minutes. Make paste of 2 tablespoons cornstarch
and water; stir in 1 teaspoon sugar, msg and salt and
pepper to taste. Add to sirloin mixture; cook
stirring, until sauce is clear. Add tomatoes and
green onions, remove from heat. Serve. 4-6 servings.

Tea-Smoked Chicken Salad

Title: Tea-Smoked Chicken Salad

1/4 ts Szechuan peppercorns,
Crushed*
1/8 ts Granulated sugar
1/8 ts Ground ginger
10 oz Skinless boneless chicken
Thighs
1 md Scallion, quartered
3 sl Pared fresh ginger root
2 cl Garlic, crushed
1/2 c Uncooked, regular long-grain
Rice
2 tb Firmly packed light or dark
Brown sugar
1 tb Plus 1 1/2 tsp. Lapsang
Souchong tea leaves*
1/2 Cinnamon stick
3 3 1/2″ x 1/2″ strips orange
Zest**
4 c Torn lettuce leaves
1 1/2 c Drained, canned, sliced
Water chestnuts
3 tb Low-sodium chicken broth
2 tb Fresh lemon juice
1 tb Peanut oil
1 md Papaya, pared, seeded and
Diced

In small bowl, combine salt, peppercorns, granulated
sugar and ground ginger; rub into chicken. Place
scallion, ginger root and garlic on top of chicken;
refrigerate, covered, 1 hour.

Set a steamer rack or round baking rack into large
saucepan; add 1-2 inches water, being careful that
water does not reach top of rack. Spray large heat
resistant plate with nonstick cooking spray (plate
should fit into saucepan).

Bring water in saucepan to a boil; reduce heat. Place
chicken with scallion, ginger root and garlic, along
with any accumulated juices, on prepared plate; set
plate on rack. Cook chicken over simmering water,
covered, 5 minutes, until almost cooked through.
Remove chicken and rack from saucepan; discard liquid
in saucepan.

Spray same rack with nonstick cooking spray; transfer
chicken to rack, discarding scallion, ginger root and
garlic.

Line same saucepan with foil. Sprinkle foil with
rice, brown sugar and tea leaves; add cinnamon stick
and orange zest. Place saucepan over medium heat; cook
until mixture begins to smoke. Set prepared rack into
saucepan; cook, covered, 12 minutes, until chicken is
cooked through. Remove chicken from saucepan; set
aside to cool.

While chicken is cooling, in large bowl, combine
lettuce, waterchestnuts, broth, lemon juice and oil,
tossing well to coat thoroughly; divide evenly among 4
plates. Slice cooled chicken; arrange 1/4 of the
chicken and papaya on each portion of salad.

*Szechuan peppercorns and Lapsang Souchong tea leaves
can be purchased in Asian food stores or the Asian
food sectin of some supermarkets. If loose tea leaves
are not available, use three tea bags and open to
release leaves, discarding bag.

**The zest of the orange is the peel without any of
the pith (white membrane). To remove zest from
orange, use a zester or vegetable peeler; wrap orange
in plastic wrap and refrigerate for use at another
time.

EACH SERVING PROVIDES: 3/4 fat; 1/2 fruit, 2
vegetables; 2 proteins; 1/2 bread

PER SERVING: 186 calories; 16g protein; 7g fat; 17g
carbohydrate; 68mg calcium; 349mg sodium; 59mg
cholesterol; 1g dietary fiber

6 Sheets Jus-rol Fillo Pastry,
-thawed
Vegetable oil
1 sm Bunch spring onions, finely
-chopped
3 Cloves of garlic, crushed
1 In piece fresh ginger,
-peeled and crushed
4 oz Fresh beansprouts
4 oz Finely chopped celery
8 oz Frozen prawns, thawed
1 tb Soy sauce
1/2 ts Soft brown sugar

Heat 1 tb oil in a wok or frying pan, stir-fry the
onions, garlic and ginger for a few min. Add
beansprouts and celery, stir-fry for a further 2 min.
Turn vegetables into a bowl, add prawns and mix with
soy sauce, sugar and season to taste. Cool. Divide
drained filling into 12 portions. Cut each sheet of
fillo in half crossways. Place a portion of filling at
one end of a pastry square. Roll up just enough to
enclose filling then fold in the ends, sealing with
water. Continue to roll and again seal with water.
Deep fry at 180C (350F) for about 5min. Drain well and
serve.

Frozen Lemon Cream Pie

Title: Frozen Lemon Cream Pie

1 9-inch Graham Cracker Crust
3 Large Uncracked Eggs.
1/2 c Plus 2 T Sugar
1/4 c Lemon Juice
1/2 pt (1 C) Whipping Cream,Whipped

Separate Eggs. Be sure to use only Grade A Uncracked Eggs! In large
mixer bowl, beat egg yolks and 1/2 cup sugar until light; stir in
lemon juice. In small mixer bowl, beat egg whites until soft peaks
form; gradually add remaining 2 T sugar, beating until stiff peaks
form. Fold egg white mixture into lemon juice mixture; fold in half
the whipped cream. Fold in remaining whipped cream. Spoon into
prepared crust. Freeze at least 3 hours or until firm. Serve more
whipped cream or Blueberry ‘n’ Spice Sauce.

Graham crackers 1/2 ts Nutmeg
1/4 c Diet margarine; melted. 1/2 c Brown Sugar Twin
8 oz Lite cream cheese (soft) 1/2 c Skim milk
1 lg Can 100% pumpkin 2 pk Sugarfree Instant Pudding
1 ts Cinnamon -(Vanilla flavor)
1/4 ts Cloves 12 oz Lite Cool Whip
1/4 ts Allspice

Place whole graham crackers in a 13 X 9-inch pan. Melt margarine, and
brush over crackers.

Put cream cheese in bowl and beat with electric mixer. Mix spices in
pumpkin, and add to cream cheese. Beat together.

Add sugar twin, milk and sprinkle in dry pudding mix. Mix in the
pumpkin and cream cheese mixture. Beat until well blended. Fold in
Cool Whip. Pour in pan, and spread over crackers. Cover with plastic
wrap, and refrigerate overnight
