ITALIAN LENTIL MINESTRONE SOUP

2 c Dried lentils
12 c Divided cold water
1 cn (6 oz) tomato paste
3 Minced celery ribs
1 c Coarsely chopped cabbage
1 c Sliced mushrooms
1 Chopped onion
1 t Italian herbs OR
1/2 ts Dried oregano and
1/2 ts Basil
1 t Garlic salt
Pepper to taste
Pinch of hot pepper flakes
6 tb Grated parmesan cheese

Soak lentils overnight in 6 cup water; drain, discard
water. Combine lentils with remaining 6 cup water.
Heat to boiling. Stir in remaining ingredients, except
cheese. Cover and simmer for 45 minutes. Serve
sprinkled with parmesan cheese.

GRILLED PEACHES WITH RASPBERRY PUREE

1/2 (10-oz) pkg frozen
-raspberries in light syrup,
-slightly thawed
1 1/2 ts Lemon juice
2 md Peaches, peeled, halved and
-pitted
1 1/2 tb Brown sugar
1/4 ts Ground cinnamon
1 1/2 ts Rum flavoring
1 1/2 ts Margarine

Grilled Peaches with Raspberry Puree

Combine raspberries and lemon juice in container of an
electric blender or food processor; top with cover,
and process until smooth. Strain raspberry puree;
discard seeds. Cover and chill.

Cut 1 (18 X 18 inch) sheet of heavy duty aluminum
foil. Place peach halves, cut side up, on foil.
Combine brown sugar and cinnamon; spoon evenly into
center of each peach half.

Sprinkle with rum flavoring, and dot with margarine.
Fold foil over peaches, and loosely seal.

Place grill rack over medium coals; place peach bundle
on rack, and cook 15 minutes or until peaches are
thoroughly heated.

To serve, spoon 2 Tbsp raspberry puree over each
grilled peach half.

Apricot Fizz

Title: Apricot Fizz

Ingredients 3 c Diet gingerale;
3 c Apricot juice; -unsweetened 1 tb Lemon juice

Chill apricot juice and ginger ale throughly. To serve, combine
apricot juice, ginger ale, and lemon juice; stir well, and pour into
individual glasses.

1 package cream cheese — softened
1 pound cheddar cheese — grated
1/4 cup parmesan cheese — grated
1/4 cup green pepper — chopped fine
1/4 cup green onion — chopped fine
1 tablespoon milk
1/4 cup parsley — chopped fine
1/4 cup pecans — chopped fine
1/4 cup red pepper — chopped fine

Mix together until smooth and creamy. On serving platter, place drinking
glass upside down in the middle. Drop spoons of “dough” around the glass,
using all. Smooth into ring, remove glass gently. Mix the pecans, parsley
and pepper together. Pat mixture onto ring, until completely coated. Chill
for at least 4 hours or overnight. Makes one wreath.

HAMMELSUPPE (MUTTON SOUP)

600 g Mutton
1 t Salt
1 Onion
1/2 Celariac (celery root)
1 Leek
1 Carrot
3 md Carrots
4 ts Fine farina
1 Egg yolk
2 ts Cream or milk

Serves four.

Potato dumplings (Kartoffelkloesse), parsley, nutmeg

Cut well washed pieces of mutton into bite sized
pieces. Place in water (1 1/2 liters) with salt and
bring to a boil. Add the the celeriac and carrots,
finely cut onion, and then put in cubed potato. Cook
for 1 1/2 hours. If the potatoes do not fall apart,
run them through a sieve. One half hour before the
soup is finished, sprinkle in the farina. When fully
cooked, put walnut-sized pieces of potato dumpling
into the soup. After ten minutes stir in chopped
parsley, nutmeg, and add in the egg yolk that was
beaten into the cream or milk.

Quick Vegetable Soup

Title: Quick Vegetable Soup

Yield: 1 servings

1 lb Ground beef
1 pk (16-oz) frozen mixed soup
-Vegetables
4 c V-8 cocktail juice
4 c Water
2 tb Beef flavor instant
-Bouillon
1 ts Basil leaves
1 ts Marjoram leaves
1 ts Salt
1/2 ts Onion salt
1/2 ts Pepper
1/4 ts Garlic powder
1/2 lb Package spaghetti broken
-Into thirds and uncooked
Grated Parmesan cheese opt

In dutch oven, brown ground beef; drain. Stir in next ten ingredients.
Bring to a boil. Reduce heat; simmer 30 minutes. Prepare spaghetti
according to package directions; drain. Add to soup mixture; heat
through. Serve with Parmesan cheese. Refrigerate or freeze leftovers.

Sesame Seed Cookies

SESAME SEED COOKIES

1 1/2 c AM Sesame Seeds
— lightly roasted on
— cookie sheet in oven
1 c Coconut
2 c AM Whole Wheat Flour
1 t Non-alum baking powder
1 t Baking soda
1/2 ts Sea salt (optional)
1/3 c AM Unrefined Vegetable Oil
1 Egg or egg replacer
1/2 c Honey
2 ts Vanilla
1 c Soy milk

Beat together oil, honey, egg and vanilla. Mix all
the dry ingredients and add to the liquid mixture.
Stir in milk. Drop by the teaspoon onto an ungreased
cookie sheet. Flatten with a fork. Bake at 350 F.
for 10 minutes. Makes approximately 48 cookies.

Chocolate Bars

Title: Chocolate Bars

Yield: 32 servings

2 c All-purpose flour; 1/2 ts Salt;
1 c Sugar; 1 c Margarine (2 Sticks); at
1/2 c Cocoa; Room temperature
1 ts Baking soda; 2 lg Eggs;
Dry substitute equal to 1/3 2 ts Vanilla;
Cup sugar 1/2 c Semisweet chocolate chips;
1/2 ts Cinnamon;

Place flour, sugar, cocoa, baking soda, dry sugar substitute,
cinnamon, and salt in a mixer bowl and mix a low speed to blend well.
Add margarine, eggs, vanilla and water, and mix at medium speed to
blend well. Spread batter evenly in an 11″ by 15″ jelly roll pan that
has been sprayed with pan spray or greased with margarine. Bake at
325 degrees for 20 to 25 minutes, or until bars pull away the sides
of the pan and a cake tester comes out clean from the center. Place
on wire rack and sprinkle chocolate chips evenly over the top of the
hot bars. Mark four by eight and cool until chocolate has hardended.
Cut as marked. (Might be a good idea to cut even more sugar out of
this.)

Food Exchange per serving: 1 STARCH EXCHANGE + 1 FAT EXCHANGE

Low-sodium diets: Omit salt. Use salt-free margarine.

Title: VEGETABLE ALMONDINE BAKE

3 oz Wheat flakes
3 oz Onion; chopped
3 oz Tomato; chopped
3 oz Green pepper; chopped
1 1/2 oz Scallions; chopped
1 1/2 oz Almonds; blanched, slivered
1/4 ts Thyme
1/4 ts Sage
1/4 ts Curry
1/2 ts Salt
2 tb Sesame oil

Preheat oven to 375 deg. Lightly grease 4 x 8 baking dish with sesame oil.
Cook wheat flakes in 12 ounces of water for 10 to 12 minutes. Saute
vegetables, almonds, thyme, sage, curry and salt in a skillet with sesame
oil for 5 minutes. Combine with wheat flakes and transfer to baking dish
and bake for 15 minutes.
Serves 2.

Ground Chicken Salad

1 lb Ground chicken
2 tb Oil
1 Clove garlic, minced
1/2 c Yellow onion chopped
1 1/2 ts Seasoned salt
1 ts Paprika
1/4 ts Pepper
1 tb Worcestershire sauce
1 Sm head iceberg lettuce chop
1/2 x Avocado, diced
2 x Tomatoes, diced
1/2 c Green onions chopped
1/3 c Sliced olives
3/4 c Grated cheddar cheese
3/4 c Grated jack cheese

MMMMM———————–SALAD DRESSING—————————-
1/4 c Red wine vinegar
3/4 c Olive oil
1 tb Tomato sauce
1 tb Lemon juice
Clove garlic, minced
1/2 ts Salt
1/4 ts Pepper
1/2 ts Paprika
1/2 ts Sugar

Saute chicken in oil with garlic, onion, salt, paprika, pepper and
worcestershire sauce for about 10 mins. Cool completely. Toss lettuce
with avocado, tomatoes, green onions, olives and cheeses. Mix with
cooked and cooled chicken. For dressing, whisk together vinegar, oil,
tomato sauce, lemon juice, garlic, salt, pepper, paprika and sugar.
Pour dressing over salad. Toss. Serve immediately.
