PORTUGUESE POTATO GIBLET STUFFING

Turkey giblets
500 g Floury potatoes, cooked,
-mashed
4 Eggs
20 Black olives, pitted and
-halved
4 tb Parsley, chopped
pn Nutmeg
Salt and pepper

Turkeys appeared on Portuguese tables as early as the
16th century, introduced by explorers, so Portuguese
turkey stuffings have a long history.

Fry the onion gently in the butter, chop the giblets
small add to the onions and cook gently until tender.
Combine the mashed potatoes with the eggs, olives and
parsley, then add the giblet mixture and seasonings.

Beans Kale

Recipe

Try this recipe from Moosewood Restaurant Cooks at Home.

4 cups cooked white beans
lemon juice to taste
salt, pepper, red pepper flakes to taste.

1 pound kale
4 garlic cloves
1 onion

Mix beans, lemon juice, salt and peppers together.
Heat gently and mash slightly.

Chop onions and garlic. Saute until garlic golden.
Slice the greens into shreds and add to garlic onion mix.
Saute until greens wilted.

Suggested serving mound beans on topof greens.

CHOCOLATE FLECK FROZEN YOGURT

3/4 cup Sugar
2 teaspoons Cornstarch
12 ounces evaporated skim milk
1 teaspoon Vanilla extract
1 cup nonfat plain yogurt — stirred
2 ounces semisweet chocolate chips

In medium saucepan, combine sugar and cornstarch. Stir in milk. Cook and stir
over moderate heat until thickened and bubbly. Remove from heat; cool to
lukewarm. Add vanilla and yogurt. Refrigerate until mixture is cold.
Melt chocolate. While chocolate is hot, pour it very slowly into chilled
yogurt mixture while stirring gently. Freeze in ice-cream maker according to
manufacturer’s directions; or follow refrigerator-freezer instructions
previously posted.

Chicken Stew w/Pepper Pineapple

1 pound boned and skinned chicken breast halves — cut up
4 medium carrots — cut 1 inch pieces
1/2 cup chicken broth
2 tablespoons gingerroot — finely chopped
(or 2 teaspoons ground ginger)
1 tablespoon packed brown sugar
2 tablespoons soy sauce
1/2 teaspoon ground allspice
1/2 teaspoon red pepper sauce
1 tablespoon cornstarch
1 8 1/4 oz can pineapple chunks in juice, drained, — reserve juice
1 medium red bell pepper (1 cup) — cut 1 inch pieces
Hot cooked rice — optional

Mix chicken, carrots, broth, gingerroot, brown sugar, soy sauce, allspice and
pepper sauce in a crockpot. Cover and cook on low heat setting for 7 to 8
hours or until vegetables are tender and chicken is no longer pink in the
center. Mix cornstarch and reserved pineapple juice; gradually stir into
chicken mixture. Stir in pineapple and bell pepper. Cover and cook on high
heat setting for about 15 minutes (I put in the green pepper about 45 minutes
before the stew is done.) or until slightly thickened and bubbly. Serve with
rice.

Beef Stew with Biscuits

2 lb Round steak, cubed
4 T Oil
4 T Flour
1/2 c Onion, cut 1/2″ pieces
1/2 c Carrots, halves lenghtwise,
-cut on bias
1/2 c Celery, cut on bias
3 T Tomato paste
4 Beef bouillon cubes
2 c Water
3 c BROWN GRAVY
1 t Paprika
1 Bay leaf
1 t Garlic
Salt and pepper
1 c Peas, cooked

——————BAKING POWDER BISCUITS——————
2 c Flour, sifted
1 T Sugar
4 t Baking powder
1/2 t Salt
1/2 c Shortening
1 Egg, beaten
2/3 c Milk

Marketplace In stew pot, add oil over high heat.
Dredge meat with flour and quickly sear a few pieces
at a time until browned. Add onions, carrots, celery,
and water to pot with meat; simmer 15 mins. Add
remaining ingreds except peas. Mix well; simmer on low
until meat is tender and vegs are cooked. Remove bay
leaf and adjust seasoning if necessary. Just before
servng, add peas and serve stew over biscuits. Baking
Powder Biscuits: Preheat oven 425 F.
Sift together flour, sugar, baking powder, and salt
into a bowl. Cut in shortening. Combine milk and eggs;
mix into flour with a fork until just moistened. Turn
dough onto a lightly floured surface; knead gently.
Roll to 3/4″ thickness. Cut with a 2″ figured cutter
and place on an ungreased baking tray. Bake 12 mins or
until golden.

1 c Zucchini — sliced
1 c Mushrooms — sliced
2 tb Safflower oil
1 c Tofu — baked; cubed
1 c Shiitake Mushroom Gravy
16 Crepes (see recipe)

In a large saucepan, saute the zucchini and mushrooms
in the hot oil over medium-high heat. Add the tofu and
half the gravy. Mix well, then divide the mixture
between the crepes, roll up, and pour the remaining
gravy over them. Serve hot.

Raspberry Cheese Pie

Title: Raspberry Cheese Pie

8 oz Cream cheese; softened, 1 pk
1/2 c Dairy sour cream
1/3 c Sugar
2 ea Eggs; lg
1 ea Unbaked 9-inch pie shell
20 oz Frozen raspberries; thawed
1 x Water
3 ts Cornstarch
1/2 c Whipping cream; whipped

Combine the cream cheese and sour cream in a bowl,
using an electric mixer set at medium speed, until
smooth and fluffy. Add the sugar and eggs blending
well. Pour into the unbaked pie shell. Bake at 375
degrees F. for 35 minutes or until a knife inserted in
the center comes out clean. Chill for at least 1 hour
in the refrigerator. Meanwhile, drain the raspberries,
reserving the juice. Add enough water to the juice to
make 3/4 cup of juice. Blend the cornstarch and juice
together in a 2-quart saucepan. Cook, over medium
heat, stirring constantly, until the mixture comes to
a boil. Cook for 1 minute more. (Mixture will be
very thick.) Remove from the heat and stir in the
raspberries, then cool to room temperature. Fold the
whipped cream into the cooled raspberries and spread
the mixture over the chilled cream cheese layer.
Chill for an additional 2 to 3 hours before serving.

Children’s Chocolate Frosting

2 cups powdered sugar — sifted
3 tablespoons instant nonfat milk powder
1/2 cup unsweetened cocoa powder
6 tablespoons vegetable shortening

In a medium bowl, combine powdered sugar, milk powder ans cocoa powder.
(Sift cocoa if lumpy.) With a pastry blender, cut in the shortening.
Spoon about 1/3 cup of mixture into each of 9 small containers or
ziplock bags and seal tightly. Label with date and contents. Sore in a
cool dry place. Use within 12 weeks. Makes 9 packages Children’s
Chocolate Frosting.

To use:
1 pkg. Children’s Chocolate Frosting Mix
3/4 teaspoon water

In a small bowl combine Children’s Chocolate Frosting and water. Stir
with a spoon until smooth. Makes about 1/4 cup.

Soothing Leek Soup

2 tb Unsalted butter
2 tb Onion — finely chopped
1 lg Leek — rinsed well;
-sliced (about 1 cup)
2 c -double-strength
Chicken broth
1 c Potato — peeled and diced
1 1/2 c Whipping cream
3/4 ts Salt — (to taste)
Freshly grated nutmeg
-to taste (I omitted this )
1/4 c Blue Cheese — crumbled
-or Parmesan
4 Shots dry white wine 🙂

Melt butter in a heavy saucepan. Add onion and leek
and cook slowly; stirring often, until soft. Stir in
broth, then add potato. Cover and cook until potato is
tender. Cool, then process in a food processor or
blender until pureed. In another saucepan, bring
cream to a gentle simmer, cook until just slightly
reduced, then stir in leek mixture and heat until very
hot (but don’t boil). Season with salt, pepper and
nutmeg. Serve hot. Sprinkle 1 Tbl. cheese over each
serving and offer a shot of the wine on the side.

Orange and Almond Dessert Cake

2 juicy oranges — thick skinned
6 eggs
250 grams ground almonds — coarsely chopped
185 grams caster sugar
1 tablespoon baking powder

Wash oranges, place in saucepan and cover with water. Simmer gantly for 2
hours ir until very tender. Cool slightly, halve the oranges and discard
pips. Chop skin and pulp roughly the puree in a good processor. Beat the
eggs until light coloured, add remaining ingredients and blend throughly. Pou
into a buttered and floured tin [ about 22 CM] and bake in a preheated 190
degree C oven for about 1 hour or until cake is golden and just firm to the
touch. Leave in the tin until quite cold. Serve with whipped cream. I like
to either simmer orange rind shreds in a sugar syrup and serve a small pile of
those beside the cake and decorate with candied peel, together with a few
orange segments marinated in a little syrup and sometimes with a good dash of
Grand Marnier. Pass the cream separately.

NOTES : Based on a Spanish recipe, this dessert cake is very easily made. It
can be made for Passover, but if so, the baking powder must be omitted and the
eggs seperated. The whites are whipped stifly and folded in after the other
ingredients are mixed.
