Shrimp and Sweet Corn Ravioli with Corn Coulis and Blackpepper

Sauce:
1 onion, finely diced
4 ears of corn, kernels removed from cob — cobs reserved
1 tablespoons olive oil
4 cups water
Salt
Pepper
Cayenne pepper
2 to 3 tablespoons unsalted butter
1 spice bag

In saute pan heat olive oil and cook onions until transparent. Add corn and
cook until very tender,
about 7 – 10 minutes. Set aside. Slice cobs. Place cob slices in a sauce
pan and cover with water.
Bring to a boil and add spice bag. Let simmer until you have 2 cups of
liquid. Strain broth and
discard cobs and spice bag. Add broth to onions and corn mixture. Let
simmer for about 5 minutes
and then place in a food processor. Process until smooth. Pass through a
strainer and season with
salt, pepper and cayenne to taste. Whisk in butter. Set aside and keep
warm.

* Spice Bag: 1/2 bay leaf, 1 sprig of thyme, 10 white peppercorns, 5
parsley stems placed
together in tied cheesecloth

Black Bean Soup

2 teaspoons salad oil
2 large onions — chopped
2 14 oz cans lowfat chicken broth
1 28 oz can crushed tomatoes
1 15 oz can diced tomatoes
2 teaspoons cumin seed — or to taste
2 15 oz cans black beans
1 15 oz can lowfat refried beans
5 drops green Tabasco Sauce — or to taste

Heat oil in a 6-8 quart pan over medium heat. Add onion and cook, stirring
frequently, until golden brown (about 20 minutes). Add chicken broth. Add
tomatoes, cumin, beans and green Tabasco. Mix well to break up refried beans.
Remove half the mixture and puree with a blender. Return pureed portion to
cooking pot. Taste and correct seasonings. Bring to a simmer and cook another
six or seven minutes, stirring frequently, until soup begins to thicken and
flavors are blended. Serve with one or more of the following condiments:
shredded lowfat cheddar cheese, nonfat sour cream, cilantro sprigs, baked
tortilla chips

NOTES : We now use a hand-held blender to puree part of the soup. Remove and
reserve about 4 cups of soup before pureeing with the hand blender, then return
the unpureed portion to the soup pot and stir.

Chicken Tortellini Soup

1 T Butter
2/3 c Carrots, diced
1 c Celery, diced
1 c Onion, diced
3 Chicken bouillon cubes
5 1/2 c Water
1 T Parsley, chpd
1/8 t Ground thyme
1/4 t Garlic powder
Salt and white pepper
1/2 lb Tortellini, cooked

Tony’s Town Square Restaurant, Main St, USA, Magic
Kingdom In 3 qt saucepan, melt butter. Add carrots;
saute 2-3 mins. Add chicken and cook 5 mins until
chicken is done. Add celery and onions; cook 4-5 mins.
Dissolve bouillon cubes in water; add to soup with
remaining ingreds except tortellini. Simmer until all
vegs are tender. Salt and pepper; add tortellini.

Spinach-grapefruit Salad

Title: SPINACH-GRAPEFRUIT SALAD

1 lb Fresh Spinach
1 sm Head Radicchio, Separated
Into Leaves
2 tb Lemon Juice
2 tb Vegetable Oil
1 ts Sugar 1/2 t. Pepper
1/4 ts Paprika, 1/8 t. Red Pepper
2 c Peeled, Cubed Ripe Papaya
2 lg Pink Grapefruit, Peeled
Sectioned
2 md Oranges,
Peeled Sectioned
1/2 md Onion Thin Onion Rings

Remove Stems From Spinach. Wash Pat Dry On Paper Towels. Tear Into
Bite-Size Pieces. Combine Spinach Radicchio in A Large Bowl. Toss
Well.
Combine Lemon Juice, Oil, Sugar, Pepper, Paprika, Salt Red
Pepper in A Jar. Cover Tightly Shake Vigorously.
Add To Spinach Mixture, Tossing Gently. Add Papaya, Orange
Onion. Toss Gently.

Creamy Waldorf Salad

Title: CREAMY WALDORF SALAD

1 c Sour cream
1 tb Sugar
1/2 ts Salt
1 tb Lemon juice
2 lg Red apples; chopped
1 c Celery; chopped
1/3 c Chopped walnuts

Sour cream replaces the mayonnaise that usually dresses this
traditional American salad of crunchy apples, walnuts and celery.

Combine sour cream, sugar, salt and lemon juice. Combine apples,
celery and walnuts and fold in dressing mixture. Serve immediately.

Mango Sorbet Mixture

4 Medium-size mangoes
2/3 c Light corn syrup
1/2 c Lemon juice

Peel, pit, and cut mangoes to make 3 cups chunks. In a blender or food
processor, whirl fruit with corn syrup and lemon juice until smooth.

Fine-crumb Pie Shell-ada

1 1/4 c Fine crumbs (graham cracker,
1 1/2 c -or Dry cereal,zwieback,etc
3 tb Margarine (melted)
1 tb Water
1 Spices (optional)
1 Sugar replacement (optional)

Combine crumbs with melted margarine and water; add
spices and sugar replacement, if desired. Spread
dough evenly in 8-10 inch pie pan, pressing firmly
onto sides and bottom. Either chill until set, or bake
at 325F for 8-10 minutes.

Chicken Noodle Soup

3 qt Cold Water
1 Onion, Sliced
1 Carrot, Sliced
1 Bay Leaf
1 ts Parsley
Salt Pepper

Wash and clean chicken carefully; cut in pieces. Cover with the cold
water. Add the vegetables and seasoning and let simmer for 3 hours or
until chicken is tender. Skim off fat. Remove the chicken and add 2

4 Slices angel food cake
4 Scoops vanilla ice cream

In a bowl mix berries with sugar and Grand Marnier.

On each plate, set a slice of cake and top it with a scoop

cream. Spoon berry mixture over and around the cake.

3 c Apple juice, or Orange-pineapple juice
Grape juice, or 5 Gelatin envelopes
Orange juice, or

Soften gelatin in 1 cup fruit juice in medium mixing bowl. Bring one
cup juice to a boil and stir in gelatin/juice mix. Continue stirring
until gelatin is dissolved. Add remaining cup of juice. Pour into 8
inch square pan and refrigerate until firm.

*Kids love these cut with cookie cuuters into their favorite shapes.
*Holiday treats are always welcome – orange-pineapple pumpkins at
Haloween, red fruit-berry bells at Christmas, use your imagination
and enjoy! *A drop of food coloring in white grape juice will
transform it to any “season”. *Great in a candy dish for nibblers.
