Spicy Bean Soup With Corn

1/4 cup dry sherry or apple juice
1/3 cup chopped onion
1/4 cup chopped celery
1/4 cup diced red bell peppers
1/3 cup diced canned or fresh tomatoes
1 cup frozen corn kernels
3 cups defatted stock
2 cups cooked white beans — rinsed and drained
2 teaspoons minced fresh parsley
1 teaspoon minced fresh garlic
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon cayenne pepper — or to taste
Salt — black pepper

This bean soup sports a colorful mixture of vegetables and rich spices
reminiscent of Mexican cuisine. It tastes even better after a night in the
refrigerator. Serve topped with crushed tortilla chips and low-fat sour
cream, if desired.

Heat sherry in large soup pot over medium-high heat until bubbling. Add
onion and cook, stirring, 3 minutes until soft but not browned. Add
celery, bell peppers, tomatoes and corn and cook 5 minutes.

Add stock, beans, parsley, garlic, cumin and coriander and bring to boil.
Lower heat to medium and cook 20 minutes. Add cayenne and salt and pepper
to taste. Makes 4 servings.

    Peanut Butter Puffs

    1/2 cup peanut butter
    1/2 cup powdered sugar — sifted
    2 tablespoons butter
    1 teaspoon vanilla
    7 sheets phyllo dough
    1/3 cup butter — melted
    1/2 cup semisweet chocolate pieces — melted
    1/4 cup pecans — chop

    For cookie filling, stir together the peanut butter, powdered sugar, 2
    tablespoons of butter and vanilla until well mixed. Set aside.

    Brush 1 sheet of phyllo dough with some of the melted butter. (Keep
    remaining sheets covered with a damp towel to prevent them from drying out.)
    Cut phyllo sheet lengthwise into 4 long strips. Place a slightly rounded
    teaspoon of the peanut butter filing about 1″ from one end of one of the
    strips. Starting at the same end with the filing, fold a corner of the dough
    over the filling so it lines up with the other side of the strip, forming a
    triangle. Continue folding like a flag in a triangular shape, using the
    entire strip. Repeat with the remaining cut strips and sheets of phyllo.
    Brush each triangle with melted butter and place on an ungreased cookie
    sheet, seam side down. Bake in a 400 oven for 6 to 8 minutes or until
    golden. Cool on wire racks.

    Pipe or drizzle the tops of the triangles with melted chocolate (thin
    chocolate with melted shortening, if necessary). Or, if desired, spread
    cookies with chocolate and sprinkle with chopped pecans. Cool until
    chocolate sets. Serve immediately or cover and chill for up to 2 days.
    Makes 28.

    You can freeze the UNFROSTED triangles to have on hand for last minute
    holiday entertaining or gift giving. Decorate with chocolate and nuts just
    before serving.

    2 pounds Beef — ground
    1/2 teaspoon Salt
    1 can Soup — condensed onion
    1 tablespoon Chili powder
    (more to taste)
    2 teaspoons Cumin
    1/2 teaspoon Black pepper — ground
    2 cans Tomato sauce (8 oz)
    1 can Kidney beans (21 oz)
    2 teaspoons Cocoa
    8 ounces Coca-Cola

    Brown ground beef for 20 minutes, or until dark and crumbly. Pour off excess
    fat. Add salt, onion soup, chili powder, cumin, pepper and tomato sauce. Simmer
    for awhile, then add undrained kidney beans, cocoa and Coke.
    Simmer until ready.

  • Caramel Oatmeal Chewies

    Title: Caramel Oatmeal Chewies

    1 3/4 c Quaker Oats, uncooked
    — (quick or old-fashioned)
    1 1/2 c All-purpose flour
    3/4 c Brown sugar, firmly packed
    1/2 ts Baking soda
    1/4 ts Salt (optional)
    3/4 c Margarine or butter; melted
    1 c Chopped nuts
    6 oz Semisweet chocolate pieces
    1 c Topping
    –(buttscotch caramel fudge)
    1/4 c All-purpose flour

    Heat oven to 350 F. Lightly grease 13 x 9-inch baking pan. Combine oats,
    1-1/2 cups flour, brown sugar, baking soda and salt; mix well. Add
    margarine; mix until crumbly. Reserve 1 cup for topping; set aside.
    Press remaining oat mixture onto bottom of prepared pan. Bake 10 to 12
    minutes or until light golden brown; cool 10 minutes. Top with nuts and
    chocolate pieces. Combine caramel topping and 1/4 cup flour, mixing until
    smooth; drizzle over chocolate pieces to within 1/4-inch of edge.
    Sprinkle with reserved oat mixture. Bake 18 to 22 minutes or until golden
    brown. Cool completely; cut into bars. Store tightly covered.

    1/2 c Cornstarch
    3 c Cold Water, divided

    RAINBOW FINGER PAINTS

    Food Coloring (red, yellow, green, blue)

    In a large bowl, place cornstarch and blend in 1 cup water. Add remaining
    water. Microwave on high 8-9 minutes or until thickened, stirring every 2
    minutes. Pour 1/2 cup thickened mixture into each of six small bowls. Add
    desired food coloring. Cool.

    PLAY DOUGH

    2 C Flour 1/2 C Salt 2 TBSP Cream of Tartar 2 C Water 2 TBSP Cooking Oil
    Food coloring as desired Oil of cloves, wintergreen

    In a large saucepan, add flour, salt, cream of tartar, water and oil. Cook
    over a low heat until of dough consistency. Let cool, then add food
    coloring and flavorings.

    Makes 4 cups

    1 md Sized onion — sliced
    1 md Sized tomato — diced
    4 c – 5 cups rice water
    2 ea Japanese eggplany — sliced
    -thick
    – diagonally
    2 c Oriental radish (diakon)
    -sliced
    – diagonally
    1 t Fish sauce (patis)
    1 ea Hot chili pepper — optional
    1 ea Lemon — juice of
    Salt and pepper to taste
    1 ea Bn fresh spinach — cut into
    – 3-inch pieces
    Lemon slices

    In a covered soup pot over medium high heat, bring
    rice water, onion and tomato to a boil. Reduce heat
    to medium, add diakon, eggplants, juice of one lemon,
    hot chili pepper, fish sauce, a little salt and
    pepper, and simmer for 8 minutes. Add fish and simmer
    for another 10-15 minutes until cooked. Turn off heat.
    Correct sesonings to taste. Add spinach and cover for
    1-2 minutes. Serve immediately. For extra tartness,
    sprinkle a little lemon juice on individual bowl
    servings. Serves 4-5.

  • B/M MOZZARELLA TOMATO BREAD

    2 tb Sugar
    1 t Salt
    1 tb Butter
    1 c Shredded Mozzarella
    1 tb Sundried tomatoes — crumbled
    2 tb Dehydrated onion
    1 t Minced basil
    2 c Bread flour
    1 tb Dry milk
    2 ts Dry yeast

    I’ve been playing around with these ingredients and my husband thinks
    I should “go public” with this recipe! It’s for a bread machine, but
    you could make it by hand in the conventional way, too. In my
    Zojirushi machine the crust is rather dark (but still delicious) so
    other machines may need a light crust setting. Enjoy! Place ingred.
    in B/M in order given (start at bottom for>>>> Welbilt/Dak) set crust
    to light and bake on white bread setting. I’m munching on the “heel”
    as I type and am thinking about how good a sandwich will be in a few
    hours! Maybe next time I’ll add pepperoni and have all the sandwich
    ingredients in each slice. It has a real pizza taste! LINDA IN

    Brown Seed Bread

    2 c Flour, all purpose 1 c Whole wheat flour
    1 c Natural bran 1 c Quick cooking rolled oats
    2 T Sesame seeds 2 T Poppy seeds
    1 T Baking powder 1 1/2 t Baking soda
    1 t Salt 1/4 c Liquid honey
    2 c Plain yogurt

    In large bowl, combine all-purpose and whole wheat flours, natural bran,
    rolled oats, sesame and poppy seeds, baking powder, baking soda and salt;
    stir in honey. Add enough of the yogurt to make sticky dough. Knead
    lightly in bowl until dough is well blended. Fit dough into one greased
    9×5 in. (2L) loaf pan.
    Bake in 375F oven for 40 min., or until tester comes out clean.

    2 egg yolks
    1 teaspoon fresh lemon juice
    1/4 teaspoon salt
    1/8 teaspoon Tabasco sauce
    2 teaspoons water
    1 stick (1/4 pound) butter, — melted warm
    About 1/4 cup finely chopped tasso or — spiced ham

    In a stainless steel bowl set over a pot of simmering water over medium heat,
    whisk the egg yolks with the lemon juice, salt, Tabasco, and water until pale
    yellow and slightly thick. Be careful not to let the bowl touch the water.

    Remove the bowl from the pot whisking vigorously, add the butter, 1 teaspoon
    at a time, until all is incorporated. Add the tasso and continue whisking for
    30 seconds. Serve immediately.

    Yield: 3/4 cup
