Antipasto

Recipe

Title: Antipasto

Yield: 10 servings

2 ea Green peppers
2 ea Stalks of celery
1 ea Garlic clove
1 ea Flowerets of med cauliflower
1 c Tuna fish drained
1 t Granulated sugar
1 ea Medium onion
3 ea Carrots
1/2 lb Sliced mushrooms
2 T Oil
1 ea Juice of one lemon
13 oz Bottle of ketchup

Finely chop peppers, onion, celery, carrots, garlic, mushrooms and
cauliflower; cook in hot oil for 5 minutes, mix well. Cook 5
minutes. Pour into sterilzed jars, cool and refrigerate. When
serving, place antipasto in a pretty dish, surround with crackers.

  • Mushroom Vegetable Soup

    Title: Mushroom Vegetable Soup

    Yield: 6 servings

    1 lb Mushrooms; fresh 2 c Water
    2 tb Margarine, divided 1/4 c Tomato paste;
    1 c Carrot; finely chopped 2 ts Parsley flakes or
    1 c Celery; finely chopped 1/4 c Fresh parsley; minced
    1 c Onion; finely chopped 1 Bay leaf;
    1 Garlic; clove minced 1/2 ts Ground pepper; freshly
    13 3/4 oz Can condensed beef broth; 2 tb Dry sherry

    Wash mushrooms; slice half of them and set aside. Chop remaining
    mushrooms and saute them in 1 tb margarine in a large pot. Add all
    the vegetables (except the sliced mushrooms) and cook 6-7 minutes,
    stirring often. Stir in all other ingredients except the mushrooms,
    the remaining margarine, and the sherry. Simmer, covered, for 1
    hour. Puree soup in the blender or food proscessor fitted with steel
    blade. Saute the sliced mushrooms in the remaining 1 tb of margarine.
    Return pureed soup to pot; and sauteed mushrooms and sherry. Reheat
    over moderate heat, stirring.

    Food Exchanges per serving: 2 VEGETABLES EXCHANGES + 1 FAT EXCHANGE

    CHO: 12g; PRO: 5g; FAT: 5g; CAL: 108;
    Low-sodium diets: Omit salt. Substitute unsalted beef broth and
    unsalted margarine.

    Amount Measure Ingredient — Preparation Method

    1 ea Crushed pineapple, 20 oz can
    1/2 c Chutney, cut-up
    2 tb Brown sugar
    2 tb Butter
    1 t Salt
    1 t Ginger, ground

    In a saucepan combine all ingredients. Bring to a
    boil; reduce heat and simmer 15 minutes. Use to baste
    lamb, pork or ham the last 15 minutes of grilling.
    Pass remainder.

    1/2 tsp olive oil
    2 c ground turkey breast — cooked
    1/2 c onions — chopped
    1/2 c bell peppers — chopped
    3 c frozen corn — thawed
    4 c Hash Brown Potatoes
    3/4 c skim milk
    1/2 tsp salt
    1/4 tsp black pepper
    1/2 c fat-free cheddar cheese — grated

    Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray;
    set aside. In a skillet, heat oil over medium heat. Add turkey, onions, and
    bell peppers. Cook until turkey is longer pink and vegetables are tender.
    Stir in corn, hash brown potatoes, milk, salt, and black pepper. Bake,
    covered, for 30 minutes or until heated through. Top with cheddar cheese.
    Bake for 3 minutes more or until cheese has melted.

  • Title: Baking Powder Biscuits Ii

    3 c Ready-mixed flour 1 c Milk
    7 tb Shortening

    Sift flour, measure, and sift. Cut in shortening with 2 spatulas. Add
    milk. Turn onto lightly floured board. Knead lightly and pat into sheet
    1/2 inch thick. Cut with floured cutter. Bake in hot oven (450ø F) 12

  • Peanut Butter Sandwich Loaf

    Amount Measure Ingredient — Preparation Method

    2 cups all-purpose flour
    2 teaspoons double-acting baking powder
    3/4 teaspoon salt
    1/3 cup sugar
    3/4 cup creamy peanut butter
    1 cup milk
    1 egg
    1/4 teaspoon orange extract — optional

    1. Sift flour and mix thoroughly with the salt, sugar and baking powder.
    Add the peanut butter and mix in with a pastry blender.
    2. Beat the egg and add the milk and orange extract to the egg; blend.
    Pour this mixture into the flour mixture and stir until thoroughly combined
    but do not beat.
    3. Grease a 9 x 5-inch loaf pan. Pour mixture into pan and bake in
    preheated 350-degree oven for 50-55 minutes. Cool before slicing.

  • Grilled Chicken Salad

    Title: Grilled Chicken Salad

    4 Boneless, skinless chicken
    -breast halves
    2 T Low-sodium soy sauce
    2 T Dark sesame oil
    2 T Lemon juice
    2 t Sugar
    1/2 c Slivered almonds
    1 lg Ripe mango
    1 cn Sliced water chestnuts,
    -rinsed and drained (8 oz)
    6 c Torn leaf lettuce

    1. Prepare grill and ignite charcoal or preheat broiler; preheat oven
    to 350’F. Trim all fat from chicken breasts and cut lengthwise into
    1/2″ wide strips; set aside.

    2. In small bowl whisk together soy sauce, sesame oil, lemon juice and
    sugar; divide in half. Toss half the soy sauce mixture with the
    chicken strips and reserve half for the salad dressing.

    3. Thread chicken on skewers and grill over medium coals about 4
    minutes per side, or until done.

    4. Meanwhile, toast almonds on a dry cookie sheet at 350’F. for five
    minutes, or just until lightly browned. Peel and cut up mango; drain,
    rinse and drain water chestnuts. Wash and tear lettuce into bite-size
    pieces. Combine almonds, mango and lettuce in large bowl. When
    chicken is cooked, add to salad and toss with remaining soy sauce
    mixture.

    Vanilla Wafer Cake

    Vanilla Wafer Cake

    1 package Vanilla wafers — crushed>>>>
    2 cups Sugar
    (12 oz. box)
    6 Eggs
    2 Sticks of oleo
    1 cup Coconut
    1/2 cup Sweet milk
    1 cup Pecans

    Cream sugar and butter until fluffy, add eggs, 1 at a time, beating
    after each addition. Add milk and crushed wafers. Fold in coconut and
    pecans. Pour into prepared tube or Bundt pan and bake at 300 F. for 1
    hr.
    or until done.

    When cake tests done, remove from oven and let cool in pan on rack for
    15 min. Turn out onto another rack (or same rack) and continue
    cooling.

    When cake is completely cool, either glaze, dust with 10x sugar or ice
    as desired.

  • Chocolate Mousse Flan

    Title: Chocolate Mousse Flan

    1 c Flour; all purpose
    Pastry:
    2 tb Sugar; icing
    1 oz Chocolate; melted (1 square
    1/2 c Butter; softened
    Mousse filling:
    1/3 c Whipping cream
    5 oz Chocolate; 5 squares
    2 tb Butter
    2 Eggs
    1/4 c Sugar
    Garnish:
    3 oz Chocolate; 3 squares
    Sugar; icing

    You need a 9 1/2″ flan pan with a removable bottom to make this
    spectacular looking dessert.
    PASTRY: Combine flour, icing sugar and 1 melted square chocolate.
    Cut in 1/2 cup softened butter (with pastry blender or in food
    processor) till mixture resembles coarse crumbs, form into ball with
    hands. Press into bottom and sides of flan ring pan with removable
    bottom that has been greased. Chill 1 hour. Bake at 425F for 10
    minutes; cool.
    MOUSSE FILLING: Bring 1/2 cup whipping cream to a boil, Add 5
    sqaures chocolate and 2 tbsp butter, stir until melted. Blend in 2
    eggs yolks well, remove from heat. Beat egg whites till frothy,
    gradually add 1/4 cup sugar, beating till stiff peaks form. Gently
    fold into chocolate mixture; pour into pastry crust, chill 10 minutes.
    GARNISH: Shortly before serving, sprinkle 3 squares (coarsely
    grated- use a vegetable peeler to make curls) over mousse. Lay 3
    strips of wax paper across flan. Sift icing sugar over flan; remove
    wax paper.
    NB: Don’t make or serve this on a hot day; it will melt.

    CHIPITS BLACK FOREST COOKIES

    1/2 c Butter, softened
    2/3 c Lightly packed brown sugar
    1 Egg
    1 c All-purpose flour
    1 1/4 c Granola cereal
    1/2 c Flaked coconut
    1/2 c Maraschino cherries, chopped
    1/4 c Chopped nuts
    1/2 t Baking powder
    1/2 t Grated orange rind, optional
    1 pk Milk chocolate chips

    Cream butter with sugar and add egg until light. Stir in remaining
    ingredients. Mix well. Drop by tablespoon onto ungreased baking sheet.
    Bake at 350F (180C) for 10-12 minutes or until golden brown. Cool.
