TURKEY CHOWDER

1/2 c Chopped onion
1 c Sliced celery
2 tb Margarine
2 tb Flour
1/2 ts Salt
1/4 ts Ground black pepper
1 t Dried thyme
5 c Turkey or chicken broth
2 Potatoes, peeled, cubed
1 c Chopped carrots
1 c Sliced zucchini
1/2 c Unsweetened apple juice
3 c Cooked chopped turkey
Saute the onion and celery in the margarine. Add the
flour, salt, pepper and thyme. Gradually add the
broth. Add the potatoes and carrots. Cover and
simmer for 15 minutes or until the vegetables are
tender. Add the zucchini, apple juice, and turkey.
Continue cooking over low heat for 10 minutes.

Mix together. Put heaping tsp of batter on waffle iron section. Bake
50-60 sec, or until done. (No, why don’t you stop BEFORE it’s done.

Frosting: powdered sugar, milk, vanilla, food coloring.

Title: CHINESE GOOSEBERRY CREAM

Yield: 6 servings
1 c Cooked Chinese gooseberry
-pulp
2 Eggs
1 c Boiled milk
1 tb Cornflour
1/2 ts Vanilla
3 oz Sugar
1/2 c Whipped cream
1/8 ts Salt
Method: 1. Beat the egg yolks well. Add the salt, cornflour and
vanilla and after stirring add the milk gradually, continuing to stir.
2. Cook the mixture over boiling water until it thickens and stir in
half the sugar.
3. Beat the egg whites until they are stiff and whilst beating add in
the rest of the sugar.
4. When the yolk mixture has cooled, fold in the egg whites, the
pulped gooseberries, and the whipped cream.
5. Pour the mixture into a serving bowl and place sliced gooseberries
around the top.

Combine first 3 ingredients. It will be sticky. Spoon
into 12 well-greased muffin tins. Do not use paper
liners. Combine last 3 ingredients and spread evenly
over the raw batter. Bake for about 10-15 minutes at
450 until nicely browned.

Title: Creole Garlic Soup

4 ea Garlic cloves,lg, peeled 1/4 c Butter or margarine, soft
2 c Beef broth (10 1/2 oz) 2 tb Parmesan cheese, grated
2 c Water 1 c Dry sherry
4 ea French bread slices
1. Add Garlic Cloves to Beef broth in suacepan; cover and simmer 15
minutes, or untill Garlic is soft. 2. Remove Garlic and reserve; add Water
adn sherry to broth and heat to serving temperature. 3. Toast bread on
one side under btOiler; remove and spead untoasted side with Butter 4.
Mash reserved Garlic and spread over bread; sprinkle with Cheese. 5. BrOil
toast until brown and bubbly, about 30 seconds. 6. place a piece of toast
in ea ch of the four soup bowls; ladle hot
soup over and serve ***NOTE this soup shows the spanish influence on
Creole cooking.*****

1/4 c water

1 1/2 c chicken broth
2 c potatoes — peeled and cubed

1/2 c celery — sliced

1/4 c unbleached flour
1 1/2 c skim milk
2 c fat-free cheddar cheese — grated
4 c chicken, skinless light meat — cooked and cubed
1/4 tsp poultry seasoning
Preheat oven to 425. To prepare crust, combine 1 cup baking mix and water
until soft dough forms; beat vigorously. Gently smooth dough into a ball on
floured surface. Knead 5 times. Follow directions accordingly for crust. To
prepare filling, heat broth in a saucepan. Add potatoes, carrots, celery,
onions, and bell peppers. Simmer 15 minutes or until all is tender. Blend
flour with milk. Stir into broth mixture. Cook and stir over medium heat
until slightly thickened. Stir in cheese, chicken, and poultry seasoning.
Heat until cheese melts. Spoon into a 2-quart casserole dish. Place crust
over filling in casserole. Seal edges. Make slits in crust for steam. Bake,
for 40 minutes or until golden brown.

2 cups Sliced Zucchini
1 10 oz Package Frozen Sweet — Corn, defrosted

Cheddar In a skillet, heat oil over medium-high. Saute garlic, peppers,
mushrooms and onion until tender. Add tomatoes with liquid, tomato sauce, chili
powder, sugar and cumin; heat to boiling. Reduce heat to low; add beans,
zucchini and corn. Simmer, uncovered, about 10 minutes or until zucchini is
tender. Spoon into bowls; sprinkle with cheese if desired. Yield: 6 Servings
(2-1/2 Qts) Diabetic Exchanges: One serving (prepared with low-salt tomato
sauce and no cheese) equals 2 starch, 2 vegetable, 1 fat; also, 252 calories,

2 c Apple juice concentrate
1/4 c Freshly squeezed lemon juice

1 Honey to taste
8 Thin slices of lemon, for

Steep tea bags in the boiling water for 10 minutes.
Gently squeeze tea bags and remove. Add apple juice
concentrate, lemon juice, cold water and honey. Heat
and serve warm in mugs. Garnish with lemon slices.
Per serving (without honey): 119 calories (1 percent
from protein, 97 percent from carbohydrate, 2 percent
from fat), less than 1 gram protein, 30 grams
carbohydrate, less than 1 gram fat, 0 cholesterol, 19
milligrams sodium.

The high percentage of water in most fresh foods makes
them very perishable. They spoil or lose their quality
for several reasons:
* growth of undesirable microorganisms- bacteria,
molds, and yeasts, * activity of food enzymes,
* reactions with oxygen,
* moisture loss.
Microorganisms live and multiply quickly on the
surfaces of fresh food and on the inside of bruised,
insect-damaged, and diseased food. Oxygen and enzymes
are present throughout fresh food tissues. Proper
canning practices include:
* carefully selecting and washing fresh food,
* peeling some fresh foods,
* hot packing many foods,
* adding acids (lemon juice or vinegar) to some foods,
* using acceptable jars and self-sealing lids,
* processing jars in a boiling-water or pressure
canner for the correct period of time.
Collectively, these practices remove oxygen; destroy
enzymes; prevent the growth of undesirable bacteria,
yeasts, and molds; and help form a high vacuum in
jars. Good vacuums form tight seals which keep liquid
in and air and microorganisms out.
