Two Bean Salad

Recipe

3 cups water
1-1/2 cups great northern beans
1-1/2 cups small kidney beans (chili beans)
1 or 2 large ripe tomatoes
steamed swiss chard (red)
bay leaf

soak bean overnight, drain.
put beans, water, and bay leaf in pressure cooker.
Cook for 10 minutes at high.
Quick-release steam by putting cooker under cold water
chop tomatoes and swiss chard and gently mix with beans

enjoy over rice, pasta, or by itself.

you can probably substitute spinach for the chard.

    16 California dried figs
    1 No.2 can pie cherries
    1 t Cinnamon
    2 tb Cake flour
    1 c Sugar
    3 tb Butter — melted
    Biscuit dough

    With scissors, snip off fig stems, and cut figs into small bits. In a
    pudding dish, combine figs, cherries and their syrup. Mix cinnamon, cake
    flour and sugar together and stir into fruit. Melt butter and stir into
    fruit. Make half the amount of your favorite biscuit recipe – or use
    biscuit mix – and be sure to add 1 Tbsp. sugar and 1 tsp. cinnamon and 3
    Tbsps. more milk than the recipe calls for. Drop biscuit dough from a
    teaspoon onto the fruit. Bake in a hot oven (450 F.) for 6 minutes, then
    lower heat to moderate (350 F.) for about 20 minutes or until cobbler is
    bubbly and biscuits are quite done. Serves 5 or 6. Extra good when
    served with top milk or cream flavored with cinnamon, vanilla and
    generously sweetened.

    2 cans clams
    2 large potatoes — diced
    1/4 cup butter
    1 small Maui onion — chopped
    2 cups half and half
    salt and pepper — to taste
    Sherry — optional

    Drain clams; reserve liquid. Saute onions in butter. Add potatoes
    and clam juice and cook until tender. Add clams, half and half and
    sherry. Heat and season. Do NOT boil. Yield: 4 servings.

    1 pound Chicken breast meat — cut
    bite-sized pieces
    1 cup Onion — chopped
    1/2 cup Celery — sliced
    1/2 cup Carrots — sliced
    2 Cloves garlic — minced
    1 cup Fresh tomato salsa — (see following recip
    28 ounces Can tomatoes
    28 ounces Can water
    3 teaspoons Chili powder
    1/2 teaspoon Cumin
    1/3 Bag garbanzo beans (soaked)
    1 Green pepper — chopped
    4 Chicken boullion cubes

    2 cans Chicken broth — salt/pepper to taste

    Brown chicken, onions, garlic. Add all tomatoes, water, and beans and simmer 30
    min. Add all other ingredients and simmer until beans and vegetables are
    tender.

    4 c vegetable stock
    1 c garbanzo beans — soaked overnight
    1 c onion — diced
    1 c tomatoes — diced
    1 tbsp fresh ginger — minced
    2 tsps ground coriander
    1 tsp garlic — minced
    1/4 tsp ground cumin
    fresh ground pepper — to taste
    salt — to taste
    1 tsp lime juice
    1 tbsp parsley — chopped

    Combine stock and garbanzo beans, bring to a boil and simmer covered about an
    hour, until tender. Reserve 1 c. liquid when drain. In large saucepan, combine
    garbanzos, reserved liquid, onion, tomato, ginger, coriander, garlic and
    cumin. Bring to a boil and simmer covered 20 minutes. Season to taste with
    salt and pepper. Garnish with lime juice and chopped parsley.

  • Apple Crescents

    Title: Apple Crescents

    1 tb Yeast
    1/2 c Milk, body temperature
    1/2 c Butter
    1/8 c Maple syrup
    1 Egg
    1 ts Lemon rind
    2 c Whole wheat pastry flour

    MMMMM————————–FILLING——————————-
    1 c Diced green apples
    1/3 c Dates, diced
    1/4 c Butter

    Dissolve yeast in warm milk; set aside. Melt together butter and
    maple syrup; let cool; add egg, lemon rind, flour, and yeast mixture.
    Mix together until you have a dough. Refrigerate overnight. Roll
    dough into 9″ circles, one for each 4 rolls; cut each circle into 4
    pie-shaped wedges.

    Cut together apples, dates and butter. Spread fruit mixture over
    dough wedges. Roll up each crescent, beginning at the wide end.
    Place on unoiled cookie sheets, turning ends to form crescent shape;
    let rise to double in size, about 2 1/2 hours. Bake at 350 degrees
    10-15 minutes until golden brown.

  • Curried Penne with Shrimp

    8 ounces penne
    1 cup heavy cream
    1 tablespoon Madras curry powder
    2 scallions — chopped
    1 tablespoon fresh lemon juice
    1/2 pound cooked medium shrimp — shelled deveined*

    * Can also use cooked chicken.

    In a large pot of boiling salted water, cook penne until tender but still firm,
    10-12 minutes; drain well.
    Return pasta to pot.
    Add cream, curry powder, and scallions.
    Cook over medium heat, tossing gently, 8-10 minutes, until thickened slightly.
    Stir in lemon juice and shrimp; heat through.
    Serve topped with a sprinkling of grated Parmesan cheese, if desired.

    Serves 2 very generously.

    3 plum tomatoes — coarsely chopped
    1/2 red onion — finely chopped
    4 green onions — chopped
    1 shredded carrot — optional

    1/2 cup black olives, chopped — optional
    2 jalapeno peppers — seeded and chopped
    6 garlic cloves — peeled and chopped
    1 tablespoon chopped fresh parsley
    2 tablespoons chopped fresh cilantro
    1/4 cup fresh lime juice
    1/4 cup grated lime peel
    Salt
    Freshly ground black pepper

    In a large bowl, mix together the tomatoes, red onion, green onion, carrot,
    olives, jalapeno peppers, garlic, parsley, cilantro, lime juice, lime peel,
    and salt and pepper to taste. Let sit 2 hours before serving to allow the
    flavors to marry. Makes 2 cups

  • Cappuccino-Pistachio Shortbread

    1 envelope cappuccino coffee mix — 0.77-ounce
    1 tablespoon water
    3/4 cup butter or margarine — softened
    1/2 cup powdered sugar
    2 cups all-purpose flour
    1 cup pistachio nuts — chopped
    1 ounce semisweet chocolate
    1 teaspoon shortening

    Preheat oven to 350 degrees. Dissolve the coffee in water in a medium
    bowl. Stir in the margarine and powdered sugar. Stir in the flour and 1/2
    cup pistachios, using your hands if necessary, until a stiff dough forms.
    Divide the dough in half. Shape each half into a ball. Pat each ball into
    a 6-inch round, about 1/2-inch thick, on a lightly floured surface. Cut
    each round into 16 wedges. Arrange the wedges on an ungreased cookie sheet
    about 1/2 inch apart with the pointed ends toward the center. Bake for
    about 15 minutes, or until golden brown. Immediately remove from the
    cookie sheet. Cool completely on wire racks. Place the remaining 1/2 cup
    pistachios in a small dish. Place the chocolate and shortening in a small
    microwavable bowl. Microwave uncovered on medium power for 3 to 4 minutes,
    stirring after 2 minutes, until the mixture can be stirred smooth and is
    drizzling consistency. Dip one edge of each cookie into the chocolate,
    then into the nuts. Place on waxed
    paper until the chocolate is firm. Nutrition Analysis: 100 calories, 1g
    protein, 10g carbohydrate, 6g fat, 0mg cholesterol, 55mg sodium.
