Tom’s Bean Loaf (I made it up as I went along)
6 oz canned kidney beans
1 cup cooked brown rice
finely chopped vegetables
garlic (lots)
3 tbsp Country-style dijon mustard (I used Grey Poupon — don’t know if
other brands exist)
2 tbsp molasses
Mash the beans into paste and add the mustard and molasses. Mix well.
You can chop up whatever vegetables you like — I used onion, yellow,
red and green peppers, and celery. Once I’d chopped the vegetables, I
think I had about a cup of them. Chop up the garlic. I used about
half a head. Also note that the measurements on the mustard and
molasses are approximate. I judged the amounts of them I wanted by
the consistency of the paste rather than actually measuring them. I
am sure about the bean and rice measurements, though. Finally, I put
all the ingredients together and mixed them, sprayed a loaf pan with
non-stick spray, and put the whole thing in the oven at F 350. I
baked the thing for 45 minutes and it was still a bit juicier than I
wanted. You might want to try baking it for an hour. I poured some
mushroom gravy from a can over it and it was both tasty and hearty.

HAMMELSUPPE (MUTTON SOUP)

600 g Mutton
1 t Salt
1 Onion
1/2 Celariac (celery root)
1 Leek
1 Carrot
3 md Carrots
4 ts Fine farina
1 Egg yolk
2 ts Cream or milk
Serves four.
Potato dumplings (Kartoffelkloesse), parsley, nutmeg
Cut well washed pieces of mutton into bite sized
pieces. Place in water (1 1/2 liters) with salt and
bring to a boil. Add the the celeriac and carrots,
finely cut onion, and then put in cubed potato. Cook
for 1 1/2 hours. If the potatoes do not fall apart,
run them through a sieve. One half hour before the
soup is finished, sprinkle in the farina. When fully
cooked, put walnut-sized pieces of potato dumpling
into the soup. After ten minutes stir in chopped
parsley, nutmeg, and add in the egg yolk that was
beaten into the cream or milk.

Title: Quick Vegetable Soup

1 lb Ground beef
1 pk (16-oz) frozen mixed soup
-Vegetables
4 c V-8 cocktail juice
4 c Water
2 tb Beef flavor instant
-Bouillon
1 ts Basil leaves
1 ts Marjoram leaves
1 ts Salt
1/2 ts Onion salt
1/2 ts Pepper
1/4 ts Garlic powder
1/2 lb Package spaghetti broken
-Into thirds and uncooked
Grated Parmesan cheese opt
In dutch oven, brown ground beef; drain. Stir in next ten ingredients.
Bring to a boil. Reduce heat; simmer 30 minutes. Prepare spaghetti
according to package directions; drain. Add to soup mixture; heat
through. Serve with Parmesan cheese. Refrigerate or freeze leftovers.

SESAME SEED COOKIES

1 1/2 c AM Sesame Seeds
— lightly roasted on
— cookie sheet in oven
1 c Coconut
2 c AM Whole Wheat Flour
1 t Non-alum baking powder
1 t Baking soda
1/2 ts Sea salt (optional)
1/3 c AM Unrefined Vegetable Oil
1 Egg or egg replacer
1/2 c Honey
2 ts Vanilla
1 c Soy milk
Beat together oil, honey, egg and vanilla. Mix all
the dry ingredients and add to the liquid mixture.
Stir in milk. Drop by the teaspoon onto an ungreased
cookie sheet. Flatten with a fork. Bake at 350 F.
for 10 minutes. Makes approximately 48 cookies.

Title: Chocolate Bars

Yield: 32 servings
2 c All-purpose flour; 1/2 ts Salt;
1 c Sugar; 1 c Margarine (2 Sticks); at
1/2 c Cocoa; Room temperature
1 ts Baking soda; 2 lg Eggs;
Dry substitute equal to 1/3 2 ts Vanilla;
Cup sugar 1/2 c Semisweet chocolate chips;
1/2 ts Cinnamon;
Place flour, sugar, cocoa, baking soda, dry sugar substitute,
cinnamon, and salt in a mixer bowl and mix a low speed to blend well.
Add margarine, eggs, vanilla and water, and mix at medium speed to
blend well. Spread batter evenly in an 11″ by 15″ jelly roll pan that
has been sprayed with pan spray or greased with margarine. Bake at
325 degrees for 20 to 25 minutes, or until bars pull away the sides
of the pan and a cake tester comes out clean from the center. Place
on wire rack and sprinkle chocolate chips evenly over the top of the
hot bars. Mark four by eight and cool until chocolate has hardended.
Cut as marked. (Might be a good idea to cut even more sugar out of
this.)

Title: VEGETABLE ALMONDINE BAKE

3 oz Wheat flakes
3 oz Onion; chopped
3 oz Tomato; chopped
3 oz Green pepper; chopped
1 1/2 oz Scallions; chopped
1 1/2 oz Almonds; blanched, slivered
1/4 ts Thyme
1/4 ts Sage
1/4 ts Curry
1/2 ts Salt
2 tb Sesame oil
Preheat oven to 375 deg. Lightly grease 4 x 8 baking dish with sesame oil.
Cook wheat flakes in 12 ounces of water for 10 to 12 minutes. Saute
vegetables, almonds, thyme, sage, curry and salt in a skillet with sesame
oil for 5 minutes. Combine with wheat flakes and transfer to baking dish
and bake for 15 minutes.
Serves 2.

2 tb Oil
1 Clove garlic, minced
1/2 c Yellow onion chopped
1 1/2 ts Seasoned salt
1 ts Paprika
1/4 ts Pepper
1 tb Worcestershire sauce
1 Sm head iceberg lettuce chop
1/2 x Avocado, diced
2 x Tomatoes, diced
1/2 c Green onions chopped
1/3 c Sliced olives
3/4 c Grated cheddar cheese
3/4 c Grated jack cheese

1/4 c Red wine vinegar
3/4 c Olive oil
1 tb Tomato sauce
1 tb Lemon juice
Clove garlic, minced
1/2 ts Salt
1/4 ts Pepper
1/2 ts Paprika
1/2 ts Sugar
Saute chicken in oil with garlic, onion, salt, paprika, pepper and
worcestershire sauce for about 10 mins. Cool completely. Toss lettuce
with avocado, tomatoes, green onions, olives and cheeses. Mix with
cooked and cooled chicken. For dressing, whisk together vinegar, oil,
tomato sauce, lemon juice, garlic, salt, pepper, paprika and sugar.
Pour dressing over salad. Toss. Serve immediately.

Chocolate Truffles

2/3 c. whipping cream
3 tbsp. butter
1 tbsp. sugar
6 oz. semisweet chocolate
2 tbsp. desired liquor
Cornstarch
Combine and cream butter and sugar over low heat until very hot.
Remove and stir in chocolate until melted and blended. Add liquor,
may divide mixture and use different kinds. Chill 1 hour or until
cool, stirring often. Drop by teaspoon onto waxed paper lined
tray. Chill 30 minutes. Roll in cornstarch, brush off excess.
Coat with melted chocolate chips and wax (dipping chocolate).

Title: Litter Box Cookies

1/2 c Honey
2/3 c Butter or margarine (1 1/3
-stick)
1 Egg
1 ts Vanilla or peppermint
-extract
2 c Whole wheat flour
1/3 c Cocoa powder
Grapenuts cereal
Gingerbread ingredients:
1/4 c Honey
1/4 c Molasses
2/3 c Butter or margarine (1 1/3
-stick)
2 1/3 c Whole wheat flour
1/2 ts Ground ginger
1/2 ts Ground cinnamon
1/2 ts Ground cloves
Grapenuts cereal
Mix-ins:
Coconut
Chocolate chips
Butterscotch chips
Peanut butter chips
Microwave the honey until it bubbles (about 1 minute). Add the butter, and
the molasses, if any. Add the egg, mix well, then mix in all the other
stuff. Add mix-ins of your choice to some or all of the batter.
Chill 1 hour in the freezer or several hours in the fridge. Roll dough
logs
of random length and the diameter of cat poops. Roll logs in grape-nuts
and
bake at 350 degrees till done (10 to 15 minutes).
Serve in a disposable cat litter box on a bed of grapenuts, with a cat
litter scoop.

Title: ASIAN RICE SALAD

2 c Leftover Asian rice pilaf
2 Cloves garlic, minced (or
1 teaspoon bottled)
1/2 c Sliced water chestnuts,
Coarsely chopped
1/4 c Thin carrot slices
1/4 c Thin celery slices
1 tb Roasted peanuts, coarsely
Chopped
3 tb Oil (preferably peanut)
1 To 3 tablespoons rice or red
Wine vinegar
1/2 ts Sugar
Optional:
3 Green onions (white and
Green tops), sliced
1. Fluff leftover rice pilaf with a fork. Add garlic,
water chestnuts, carrots, celery, green onions and
peanuts. 2. Combine oil, vinegar and sugar in a small
jar, cover and shake to combine. Pour over the salad
and serve at once.
