WHOLE WHEAT ORANGE ANISE BREAD – PAN-1

2 1/4 c Whole wheat flour
1 tb Dry milk
1 t Salt
1 tb Butter
2 tb Orange zest
1 1/2 ts Anise
1/2 c Orange juice
1/2 c Water
1 t Dry yeast

Bake (Rapid) mode may be used. Place all ingredients (except liquids
and yeast) inside the bread pan. Add liquid ingredients. Close cover
and place dry yeast into the yeast holder. SELECT: WHOLE WHEAT BAKE
MODE. Press start. 5:00 will show.

  • Brownie Cookies

    Recipe

    Title: Brownie Cookies
    Categories: Cookies
    Yield: 48 servings

    4 oz Semisweet chocolate 1 oz Unsweetened chocolate
    2 1/3 c Sifted all-purpose flour 1 1/2 ts Baking soda
    1/2 ts Baking powder 1/4 lb Unsalted butter
    1 c Granulated sugar 1 tb Vanilla extract
    2 ea Egg 1 tb Milk
    3/4 c Finely chopped walnuts

    1. Melt the chocolate over hot water. 2. Sift the flour, baking soda, and
    baking powder together. Set aside. 3. In the bowl of a mixer, cream the
    butter. Add the sugar slowly and continue to beat. Add the vanilla, then
    the eggs 1 at a time. Add the chocolate and stir to blend. 4. Stir in the
    dry ingredients and the milk by hand. When just blended, mix in the
    walnuts. Cover and refrigerate dough for 30 minutes before rolling. 5.
    Preheat oven to 375 degres. Lightly grease a cookie sheet. 6. To form the
    cookies, scoop out a portion of dough and roll out on a well-floured
    surface. When dough is 1/4 inch thick, cut it into rounds or other desired
    shapes. Re-roll scraps and cut again. 7. Place on cookie sheet (leave room
    for expansion) and bake for 6 to 8 minutes. Watch for any hot spots in the
    oven and don’t let these cookies overbrown. VARIATION: For the Brownie
    Cookie Crust, make 1 recipe of Brownie Cookies and chill the dough briefly.
    Lightly grease the back side of a large baking sheet. Roll the dough out
    onto the baking sheet as thinly as possible so that the baked product will
    crumble easily. Bake crust at 375 degrees for 5 to 7 minutes. Let crust
    harden, then slide the cookie from the sheet and cool completely. Roll over
    the cookie with a rolling pin until it is crushed to a fine crumb. (There
    should be about 2 1/4 cups of crumbs.) Melt 1 stick plus 1 tablespoon of
    unsalted butter. Mix it into the crumbs and pack the mixture over the
    bottom and up the sides of a 10-inch springform pan. Freeze for 30 minutes
    before filling in order to set the crust. Note: When I made this, I made
    individual cookie crumb crusts for the “Kit’s Chocolate Mousse” recipe by
    using a large muffin pan. Line each cup with waxed paper for easy removal.

    Corny Frank Chowder

    CORNY FRANK CHOWDER

    1 lb Franks, cut into 1-inch
    -pieces
    1/2 c Chopped green peppers
    1/2 c Chopped onion
    2 tb Butter or margarine
    1 oz Can cream style corn
    1 c Milk
    3/4 lb Velveeta processed cheese,
    -cubed
    1 d Pepper

    Saute the frankfurters, peppers, onion in margarine in
    a 3-qt. saucepan. Add the remaining ingredients. Stir
    until the cheese spread is melted.

    Speckled Soup

    Title: SPECKLED SOUP

    Yield: 8 servings

    1 1/2 c White beans
    4 c Water or stock
    2 Cloves garlic, minced
    2 Stalks celery, chopped
    2 Carrots, chopped
    1 Onion, chopped
    2 tb Olive oil
    1 tb Dried basil
    1/2 lb Green beans in 1″ pieces, or
    1/2 lb Zucchini, sliced in
    -half-moons
    2 tb Lemon juice
    3/4 ts Salt

    1. Soak beans in water to cover by 2″ overnight. Drain in the
    morning.

    2. Saute garlic, onion, celery, and carrots in oil for about 10 min.

    3. Add soaked beans and the 4 c water or stock.

    4. Simmer until beans are tender, about 45 min.

    5. Add basil and green beans or zucchini and simmer another 30 min
    or so, until tender.

    6. Before serving, stir in lemon juice, salt and pepper.

    Serves 8 preschool or 6 school-age children 1 meat alternative

    REDUCE CHOLESTEROL ~ Use vegetable oil or margarine instead of butter
    ~ Substitute 2 egg whites for 1 egg, or use egg substitute ~ Use more
    vegetables and grains and less meat in recipe ~ Use soy-based product
    to replace part of meat eg. tofu ~ Use nonfat milk products instead
    of whole milk

    REDUCE FAT CONTENT ~ Use reduced calorie mayonnaise and salad
    dressing ~ Blend cottage cheese or yogurt with milk for sour cream
    topping ~ Replace regular whipping cream with low-cal topping or
    yogurt ~ Remove visible fat from meat and skin from poultry before
    cooking ~ Decrease oil in marinades and salad dressing; increase
    vinegar, water and seasonings ~ Use foods canned in their own juice
    or water ~ De-fat meat drippings by refrigerating and skimming fat
    off the top ~ Decrease the amount of fat used in baked goods by 1/3
    to 1/2 and increase fluids called for to reach desired consistency. ~
    Cheese that is finely grated or thinly sliced goes further ~ Pour
    some of the fat off the top of “natural” peanut butters

    REDUCE SODIUM CONTENT ~ Use low-salt or no-salt-added products ~
    Increase your use of herbs and spices in place of salt in recipes ~
    Use fresh foods whenever possible in place of canned or processed
    (soup mixes, cured meats etc) or rinse canned foods (tuna) with water
    ~ Do not add salt to water when cooking pasta or other foods

    REDUCE SUGAR CONTENT ~ Decrease the amount of sugar called for in
    traditional recipes by at least 1/3; substitute fruit juices, nectars
    or pureed fruits. ~ Use fruit canned in water or fruit juice ~ Use
    non caloric sweeteners if needed to increase the sweetness of a
    recipe without added calories. (Most baked desserts require at least
    3/4 tsp. sugar per serving to achieve a desirable flavor.)
