Title: FRENCH APPLE CAKE WITH APRICOT GLAZE

Yield: 12 servings

2 tb Margarine
1 c Sugar
1 Egg
2 c White flour
2 1/2 pt Baking powder
1 c Skim milk mixed with 1 ts
6 Granny Smith apples
1 TOPPING
1/3 c Brown sugar
1/2 ts Cinnamon
1/4 ts Freshly ground nutmeg
3 tb Margarine, no salt
1 GLAZE
1/2 c Apricot jam
1 ts Lemon juice
1 About 1 tsp water

Method: Preheat oven to 350# F. Spray a 9″ x 12″
baking dish with a nonstick spray Cream margarine with
sugar. Beat in egg. Sift together dry ingredients.
into egg mixture alternating with milk and vanilla. In
food processor, pro egg with sugar until well mixed.
Add margarine and process and then milk. dry
ingredients into processor and pulse 3 or 4 times,
just until mixed. ( wash processor – reserve for next
step.) Spread batter evenly into prepare dish.

Top with fruit. Mix topping ingredients together in
food processor or mixe Dot over top of cake. Bake 30
~ 40 minutes or until skewer comes out clean Cool
completely.

For glaze, heat together apricot jam, lemon juice and
water. Strain into s saucepan or glass measuring jug.
Heat on top of stove or in microwave unti boiling and
slightly reduced. If reduced too much, add a bit more
water. onto completely cooled cake with pastry brush.
Serve and enjoy.

Nutritional value per servings: 253 calories, 3.8 g
protein (6%), 54 g carbohydrate (83%), 3 g total fat
(11%) (.7 g saturated fat), 23 mg cholest 146 mg
sodium.

  • Title: Diabetic Washington’s Cherry Pie

    9″ unbaked pie shell 2 x Egg yolks
    2 c Unsweetened cherries 1/4 c Evaporated milk
    1/4 c Soft margarine 1/2 ts Vanilla extract
    1 tb Flour 2 x Egg whites
    1/2 c Sugar replacement 2 ts Granulated sugar
    replacement

    Drain cherries; pout into unbaked pie shell. Cream margarine,
    flour, and sugar replacement. Add egg yolks and beat until smooth.
    Add evaporated milk and vanilla extract. Pour over cherries. Bake at
    450F for 10 minutes. Reduce heat. Bake at 350F for 30 minutes.
    Whip egg whites until soft peaks form. Add granulated sugar
    replacement; whip until thick and stiff. Top pie filling with
    meringue, carefully sealing edges. Bake at 350F for 12-15 minutes, or
    until delicately brown.
    1 serving (1/8 of pie) = 1 fruit, 1 fat, plus pie shell exchange
    calories = 88 plus pie shell calories

  • Title: BAGNA CAUDI (ON ZITI WITH CARROTS)

    1/4 c Butter
    1/4 c Olive oil
    15 Cloves garlic, chopped fine
    4 oz Anchovies, chopped
    1 qt Heavy cream
    1 ts Dijon mustard
    2 tb Roast Garlic mashed
    1/2 lb Ziti, cooked
    1/4 c Matchstick-sliced carrots,
    Par-boiled

    The Sauce: Saute the chopped garlic in butter and oil
    until lightly browned. Add the chopped anchovies. Cook
    until the anchovies are dissolved. Add the cream,
    mustard and roast garlic. Reduce by one-fourth. Final
    assembly: Heat the sauce, then add the cooked ziti and
    carrots. Toss until thoroughly coated and serve
    immediately.

    2 tb Margarine or butter
    1/2 c Chopped celery
    1/2 c Chopped onion
    1 t Dried thyme leaves,
    -crushed*
    1 t Dried sage leaves,
    -crushed*
    1/8 ts Pepper
    4 oz Can mushroom stems and
    -pieces, drained
    14 oz Pkg. unseasoned whole wheat
    -and white dry bread cubes
    1/4 c Water
    14 L/2-oz l/3-less-salt
    -chicken broth (not
    -condensed)

    Use a combination of whole wheat and white bread for
    added flavor, texture and fiber

    Heat oven to 325C~. Melt margarine in large saucepan
    over medium heat. Add celery and onion; cook and stir
    until tender. Stir in thyme, sage, pepper and
    mushrooms. Add bread cubes; mix well. Gradually pour
    water and broth over bread mixture; toss to moisten
    evenly. Spoon stuffing mixture into ungreased 2-quart
    casserole; cover

    Bake at 325!F. for 45 to 50 minutes or until
    thoroughly heated.10 (3/4-Cup) servings.

    TiP: * One and one-half teaspoons poultry seasoning
    can be substituted for the thyme and sage.

  • Strawberry Jam Squares

    Title: STRAWBERRY JAM SQUARES
    Categories: Cookies, Christmas
    Yield: 35 squares

    1 c Butter
    1 c Sugar
    2 Egg yolks
    2 c Unsifted flour
    1 c Chopped walnuts
    3/4 c Strawberry jam

    1. In a medium bowl cream butter and sugar. Beat in
    egg yolks. Gradually stir in the flour, then the nuts.
    Form mix into a ball, and cut in half. 2. Wrap 1/2 of
    the dough in plastic and chill in the freezer. Pat the
    remaining half into an ungreased 8x8x2 pan. Spread on
    the jam. Take the remaining half and roll between 2
    pieces on plastic wrap. Then place on the covered half
    in the pan. 3. Bake at 325F for 55-60 minutes, or
    until lightly browned. NOTE: This is VERY sweet and
    VERY rich!!
