Title: Royal Icing

1 lb Confectioner’s sugar 1/8 ts Cream of tartar
3 Egg whites, room temp.
Sift the entire pound of sugar to remove all the lumps.
Place egg whites in mixing bowl and add sugar and cream of tartar to
whites while stirring.
When all the sugar is incorporated, using an electric mixer, beat until
thick and very white. Mixture will hold a peak.
This should take 5-7 minutes.
When finished, cover icing tightly with a damp cloth or plastic wrap as it
dries very quickly and will form a crust.
To tint icing, use a small amount of color at a time.
Paste food colors will not change the consistency as liquid colors will.
For a quarter cup of icing, dip the tip of a toothpick into the color,
then into the icing. Stir well.
If you desire more color, dip again. Proceed gradually.
For strong colors like red, royal blue and dark purple, you will need 1/8
teaspoon to 1/4 cup icing.
Note: If you plan to make several colors, a muffin tin makes a handy
palette.

CATHE’S POTATO SOUP

1 lg Potato
2 c Water
1 t Garlic, minced
1/2 ts Garlic salt
1 t Black pepper, coarse
2 tb Butter
1/2 c Half-and-half
1 1/2 tb Paprika (or more)
dr Tabasco sauce
Cut potato into chunks and boil in water until quite
done, a little over-done. You should end up with
about a cup of water in the pot. Mash potato chunks
in pot with water; will be a juicy, mushy mixture.
Stir in spices, butter and half-and-half; mix well.
Add paprika a teaspoon or so at at time (to taste)
until mixture thickens. Stir in Tabasco sauce and
serve.

Title: ANTIPASTO SALAD

1 Cauliflower;small in small
3 Carrots; large, thinly slic
1 Green pepper; diced
1 c Black olives
2 1/2 c Pasta; rotini
Dressing:
1 1/4 c Oil; vegetable or corn
3/4 c Vinegar; cider
2 Garlic cloves; peeled min
1 ts Sugar; granulated
Salt pepper
In large bowl, toss together cauliflower, carrots,
green pepper and olives. Cook rotini in large pot of
boiling salted water till tender but firm about 8 to
10 minutes, drain and rinse in cold water. Dressing:
Combine oil, vinegar, garlic and sugar, adding salt
and pepper to taste; mix well. Pour all but 1/3 cup
dressing over salad, tossing to mix, reserve remaining
dressing. Cover and refrigerate overnight. Just before
serving, taste and readjust seasonings and add
remaining dressing if necessary.

1 16 ounce package cole slaw — (cabbage
carrots)
1 cup toasted slivered almonds
2 green onions — (to taste)
1/2 cup oil — (scant)
1 package oriental ramen noodles — regular flavor)
1 teaspoon sugar
Brown slivered almonds in ungreased frying pan on low heat (do not
burn!)
Mix cabbage, almonds and green onions
Mix oil, sugar and seasoning packet from noodles, pour over cabbage
mixture
Immediately before serving, crunch up noodles and add to cabbage

1/3 c. olive oil
2 c. finely chopped onions
8 c. peeled, seeded, coarsely chopped tomatoes (put through blender, if
desired)
2 (6 oz.) cans tomato paste
2 tbsp. oregano, crumbled
2 tsp. basil, crumbled
1 bay leaf
2 tbsp. sugar
1 tbsp. salt
1/2 tsp. pepper
2 tbsp. finely chopped garlic
Heat oil in large stainless steel pan, 6 to 8 quarts. Add onions
and cook over medium heat for 6 to 8 minutes until transparent. Add
garlic and cook another minute. Stir in tomatoes, paste, oregano,
basil, bay leaf, salt, pepper and bring to a boil. Then simmer,
uncovered for an hour or until thick. Stir occasionally. When
finished the sauce should be thin and fairly smooth. Remove bay
leaf. Taste and season. May be canned or frozen. 5 to 6 pints.

Title: NASTY SPIDER CAKE

1 Cake mix
1 pk Green jello prepared
Black frosting
8 Licorice sticks
8 Gumdrops
(once made as a tease for a woman who HATED spiders)
Take your average cake mix. Bake it up in 2 metal bowls–1 bigger
than the other. Once unmolded, cut the bigger one (the “body”) in
half, horizontally. CAREFULLY scoop out an adequate cavity in each
half. FILL with well-whipped set green Jello, and reattach the
halves. Frost black, arrange on serving platter. Use licorice stix as
legs. Use 2 BIG green gumdrops and 6 little ones as eyes. When the
cake is cut into, it spurts green goop, just like a real spider when
stepped on.
Why not add a red hourglass to the back and make it toxic? 😉

OYSTER AND PLANTATION SOUP

2 teaspoons salt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons white pepper
1 teaspoon dried basil
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon dried tarragon leaves
1 teaspoon dried ancho chile peppers
1/2 teaspoon dried thyme leaves
1 tablespoon all purpose flour
1 cup chicken stock
2 tablespoons butter
1 cup chopped onion
2 ripe plantains *see note
2 13 ounce cans unsweeteed cocnut milk
1 cup heavy cream
1 pint fresh shucked oysters — in their liquor,
— liquid inside shell
combine the seasoning mix ingredients in small bowl. Dissolve the flour in 2
tablespoons of the stock. Melt butter in a heavy 5 quart pot over high heat.
When it sizzles, add the onions and plantations and cook, stirring constantly,
until the onions begin to brown and the plantains are tender, about 8 minutes.
Add the remaining stock and deglaze the pot (that’s just a fancy professional
chef’s term for scraping and using the liquid to loosen the brown bits.) Add
the seasoning mix, flour-stock mixture, and coconut milk. Stir well, then
stir in the heavy cream. Bring just to a boil, stirring constantly, and add
the oysters and their liquor. Return to a gently boil, reduce the heat to
medium, and cook, stirring occasionally, just untilt he oysters are heated
through. about 3 minutes. Remove fromt he heat and serve.
