Title: Cinnamon Apple Fruit Stix

24 oz Jar MOTTS Cinnamon Apple
-Sauce
2 ts Cinnamon
1/2 ts Food coloring, if desired
Heat oven to 250. Line jelly roll pan with plastic wrap, securing ends with
tape. In medium bowl, combine all ingredients. Pour into prepared pan;
spread evenly. Bake at 250 for 1 1/4 hours. Turn off oven. Let stand in
oven 2 to 3 hours until dry. Cut into 8 squares carefully remove plastic
wrpa. Roll up jelly roll fashion. 8 snacks.
TIP: For ease in spreading, place another piece of plastic wrap on top of
apple sauce mixture; spread evenly with knife. Remove top piece of plastic
wrap before baking.

ORANGE POPPYSEED MUFFINS

3 c Flour
2 1/4 c Sugar
1 1/2 ts Baking powder
1 1/2 ts Salt
1/4 c Poppy seeds
3 Eggs
1 c Sour cream
1/2 c Vegetable oil
1 1/2 c Orange juice
2 ts Orange extract
Stir together flour, sugar, baking powder, salt and
poppyseeds and set aside. Whisk eggs, sour cream, oil,
orange juice and extract and add dry ingredients just
until moistened. Divide batter into 24 greased muffin
cups. Bake at 350 degrees for 25 to 30 minutes or
until golden brown.

Title: Jalapeno Poppers
Categories: Chiles, Appetizers, Cheese
Yield: 24 servings
Cut jalapeno’s in half, seed and vein. Press cream cheese into each
half. Dip into egg, then roll in bread crumbs. Freeze (to soften the
peppers). Back at 350 for about 20 minutes.

Couscous with Zucchini
slice 3 small zucchini
slice one small onion
put in saucepan with 3 cups veggie stock or soy veggie chicken flavor
stock
add your favorite seasonings, could be curry or lots of garlic or some
Mrs. Dash.
bring to a boil, simmer 15 or 20 minutes
add 2 cups couscous
turn off heat
let stand 5 or 10 minutes
serves 2 as main dish or 4 to 6 as side dish
P.s. this is pretty basic, use your favorite veggies, mushrooms,
carrots, green beans, anything. You can’t go wrong. Quick and easy

Title: Spinach Saute

Yield: 4 servings
1 lb Spinach, fresh 2 tb Oil, salad; to 3 tb.
1 lg Tomato; peeled and cut in Salt; to taste
-thin wedges Pepper; to taste
2 Garlic cloves; crushed
Wash spinach thoroughly and drain. Saute tomato and garlic in salad
oil in a large skillet. Add spinach; cover and cook over low heat 15
minutes, stirring once or twice. Add salt and pepper to taste. Cook,
uncovered, 5 to 10 minutes longer, stirring occasionally.
Food Exchanges per serving: 1 VEGETABLE EXCHANGE + 1 FAT EXCHANGE
