Title: EGGPLANT CURRY

Yield: 6 servings
4 lg Eggplants, peeled cubed
2 ts Salt
2 lg Onions, chopped
2 ea Garlic cloves, crushed
4 tb Oil
1 ts Cumin seeds, crushed
1 ts Coriander
3 ea Cardamom pods
2 ts Ginger, grated
1/2 ts Turmeric
1 ts Salt
2 ea Chili peppers, crushed
3 lg Potatoes, chopped
1 ea Tomato, peeled chopped
1 ts Tomato paste
Sprinkle eggplant pieces with salt set aside for 6 to 8 minutes.
Meanwhile in a large skillet, saute onions garlic in the oil until
golden, stirring ensuring that it’s not scorching. Add all the
spices peppers stir-fry a couple of minutes. Squeeze eggplant
pieces to get rid of excess moisture. Dump the pieces into the pot.
Stir until they become limp slightly golden. Add more oil if
necessary Add the potatoes let them brown on all sides. When
potatoes are somewhat tender, but still fork resistant, add tomatoes,
paste 1 1/2 c water. Stir, bring to a boil, reduce heat simmer
until vegetables are tender but not mushy. The sauce should be thick,
like syrup. If too thin, simmer a little longer. Serve over rice.

Title: Jamaican Meat Patties

2 tb Oilve oil
1 Onion;finely chopped
3 Garlic cloves;finely chopped
1 lb Ground beef; lean
1 tb Curry powder
1 ts -salt
1/2 ts -freshly ground black pepper
1/2 c Bread crumbs, dry
1/2 c Chicken stock ;or water
2 Green onions;finely chopped

2 c Flour;all purpose
1/2 ts Tumeric
1/4 ts -salt
2/3 c Shortening or Butter;cold,
-diced
1/4 c -ice water or more if
-necessary
1 Egg; lightly beaten
Heat oil in large heavy skillet. Add onions and
garlic. Cook, stirring till onion wilts. Add ground
meat. Cook, stirring until meat is browned and
combined with onions. Sprinkle with curry, salt and
pepper. Cook about 5 minutes. Stir in breadcrumbs and
stock or water. Cook, stirring often, about 20
minutes. Mixture should be thick but not dry. Stirin
green onions.
Make pastry by combining flour with tumeric and salt.
Cut in butter or shortening until in tiny bites. Add
water; gather into a ball. Roll out to about 1/4″
thivkness and cut into 4″ circles. Gather remaining
dough together and lightly cut out again. Place about
1 Tbsp filling on each circle. Brush edges with
lightly beaten egg, fold over and seal. Preheat oven
to 400F. Place patties on cookie sheets lined with
aluminium foil. Brush lightly with remaining lightly
beaten egg. Bake 25 to 30 till browned. MAKES: Approx
30 Patties These can be made ahead and frozen.

Bar-B-Q’d Lentils

2 1/3 C Lentils — rinsed
5 C Water
1/2 C Molasses
2 Tbsp Brown Sugar
1 Tbsp Vinegar
1/2 C Ketchup
1 Tsp Dry Mustard
1 Tsp Worcestershire Sauce — or vegetarian kind
16 oz Tomato Sauce
2 tbsp Minced Onions
1/4 tsp Liquid Barbecue Smoke® — optional
Add lentils to water, bring to a boil and simmer for 30 min or until
tender but whole. Add remaining ingredients to the cooked lentils and
bake at 350 deg F for 45 min.
