QUINOA TABOULI SALAD

2 c Eden Quinoa — rinsed
3/4 c Fresh parsley, chopped
3/4 c Ripe tomatoes — diced
1 Cucumber — peeled
— seeded diced
1 bn Green onions — chopped
5 Sprigs fresh mint — chopped
4 tb Eden Extra Virgin Olive Oil
2 tb Eden Ume Plum Vinegar
— (or more to taste)
2 Garlic cloves
— peeled and pressed
Cook Quinoa according to package directions. Cool. Combine Quinoa,
parsley, tomatoes, cucumbers, garlic, green onions, and mint. Mix well.
Combine olive oil, ume plum vinegar and garlic and mix into salad.
Prep Time: 30-45 min. * Cooking Time: 25 min. * Yield 8-10 servings

Title: Boston Baked Beans

4 c Navy beans 3 t Salt
1 ea Onion, chopped 4 T Brown sugar
1 T Dry mustard 1/2 lb Salt pork
Soak beans overnight. Drain, cover with fresh water. Bring to boil, simmer
until tender, drain. Pour 1/2 of beans into bean pot. Combine remaining
ingredients and add to pot. Pour in remaining beans. Cover with boiling
water and bake 8 hours at 250 degrees. Watch add more water if
necessary.

Title: Orange-Carrot Salad

1 pk Orange-flavored gelatin; 6oz
2 c Water; boiling
1 1/2 c Water; cold
2 lg Carrots; shredded
11 oz Mandarin oranges; drained
15 1/2 oz Crushed pineapple; undrained
1/2 c Pecans; chopped
Lettuce
Carrot curls
Pecan halves
Dissolve gelatin in boiling water, and stir in cold water. Chill
until partially set.
Fold in carrots, oranges, pineapple, and chopped pecans into thickened
gelatin. Spoon into an oiled 2 quart mold; chill until set. Unmold
on lettuce, and garnish with carrot curls and pecan halves.

Title: Caviar, Dill And Purple Onion Dip

1/2 c Cream Cheese; Softened
3/4 c Sour Cream
3 oz Red Or Black Caviar
1 t Lemon Juice
1 tb Fresh Dill; Chopped, OR
1 t Dried Dill; Crushed
2 t Purple Onion; Diced

1 ea Egg; Lg, Hard Boiled
Beat the cream cheese to a smooth consistency. Blend in the sour
cream and add the remaining ingredients, blending well. Cover and
chill. Just before serving, garnish with the egg which has been
finely chopped. Makes about 1 1/2 cups of dip.
SUGGESTED DIPPERS: Cocktail Rye Bread, Toast Triangles, Cucumber,
Turnips, Red Bell Peppers Strips.
