Wolfgang Puck’s Lentil Soup With Lamb Meatballs

2 tablespoons olive oil
2 medium onions — peeled and chopped
2 medium carrots — peeled and diced
5 large clov garlic — minced
1 stalk celery — trimmed and diced
1 large branch fresh thyme — stem removed and

1 tablespoon turmeric
2 teaspoons ground cumin
1 pound uncooked lentils — red preferred
7 cups hot chicken or vegetable broth
Salt — to taste
Freshly ground black pepper
1/2 lemon — Juice of
Additional stock if needed for proper
— consistency
1 cup plain yogurt — Garnish
1 tablespoon chopped mint — Garnish
1/2 teaspoon lemon zest — Garnish
***LAMB MEATBALLS***
1 pound ground lamb
2/3 cup blanched and toasted almonds* — coarsely ground
2/3 cup fresh sourdough bread crumbs — not too small
1 small onion — finely chopped
1/4 cup golden raisins — chopped
1 egg — lightly beaten
4 cloves garlic — minced
2 tablespoons fresh cilantro — minced
1/4 teaspoon dried red chile flakes
Salt and pepper — to taste

Procedure: In a large pot or Dutch oven, heat olive oil over medium-high heat.
Add onions, carrots, garlic and celery; cook on medium heat, stirring frequentl
y, until onions are transparent. Stir in thyme leaves, turmeric and cumin; cook
1 minute. Add broth and lentils. Bring to’ boil and reduce heat to simmer; ski
m. Simmer for 25 to 30 minutes; lentils should be soft. Add salt and pepper to
taste. Process 1/2 of mixture in a food processor fitted with the metal blade o
r in a blender. Stir pureed portion back into the soup. Add salt and pepper to
taste.

Prepare the meatballs

*Cook’s notes: To toast almonds, place them in a single layer on a baking sheet
and place in a 350 degree oven for 3 to 5 minutes. Watch them carefully becaus
e they can burn easily. Preliminaries: Preheat oven to 400 degrees. Procedure:
Combine all ingredients in a large bowl; using clean hands, combine ingredients
. Form into 1-inch meatballs and place on foil-lined jelly-roll pan. Place in a
preheated 400-degree oven for about 10 to 13 minutes. Test to make sure they a
re thoroughly cooked. Makes about 16 meatballs. Add meatballs to soup and cook
on low heat for 5 minutes. In a small bowl, combine yogurt, mint and lemon zest
. Presentation: Ladle hot soup into 8 to 10 individual soup bowls. Drizzle with
garnishing mixture. Serve immediately.

Yield: Makes 8 to 10 servings.

    Title: PISTACHIO SALAD

    1 pk Pistachio pudding
    1 cn Crushed pineapple and juice
    (Large can)
    1 c Miniature marshmallows
    1 lg Carton of Cool Whip
    Nuts

    Mix pudding, crushed pineapple and juice together. Add marshmallows. Add
    Cool Whip. Add sufficient nuts to topping. Mix well and refrigerate.

    Ranger Cookies

    1/2 c Butter Or Margarine;Softened
    1/2 c Brown Sugar; Packed
    1/2 c Sugar; Granulated
    1 ea Egg; Large
    1 t Vanilla
    1 1/4 c Flour; Unbleached
    1/2 t Baking Powder
    1/2 t Baking Soda
    1/2 t Salt
    2 c Rice Cereal; Crisp
    1 1/2 c Coconut; Flaked
    1 c Dates; Pitted And Chopped

    Cream sugars and butter. add egg, and vinilla; beat well. Stir together
    flour, baking powder, baking soda, and salt; stir into creamed mixture.
    Stir in crisp rice cereal (Rice Krispies for example), coconut, and dates.
    Form into 3/4-inch balls; place 2 1/2 inches apart on ujngreased cookie
    sheet. Bake at 350 degrees F. until lightly browned, about 10 minutes.
    Cool slightly before removing to a rack to cool completely.

    Makes 5 dozen.

    1 tsp CINNAMON
    2/3 c SHORTNING
    3 c APPLES — grated
    1 1/2 tsp SALT
    2 tsp BAKING SODA
    2 2/3 c SUGAR
    2/3 c RAISINS
    3 c FLOUR
    1/2 tsp BAKING POWDER
    4 ea EGGS
    2/3 c CHOPPED NUTS
    2/3 c WATER

    MIX THE INGREDIENTS TOGETHER IN THE ORDER GIVEN.
    STERILIZE 7 TO 9 WIDE MOUTH PINT JARS AND LIDS.
    GREASE THEM WITH SHORTNING. FILL THE JARS HALF FULL AND BAKE ON THE MIDDLE
    WIRE
    WIRE RACK IN THE OVEN.
    BAKE FOR 45 MINUTES AT 325 DEGREES. AS SOON AS THE CAKE IS DONE, REMOVE THE
    BOTT
    LES FROM THE OVEN ONE AT A TIME. WIPE THE RIM OF THE BOTTLE CLEAN WITH CLOTH
    AND
    PUT ON THE HOT STERILIZED LIDS.
    SCREW DOWN THE BANDS AND LET COOL. IMPORTANT– DO NOT USE SMALL MOUTH JARS. DO
    NOT ADD ANY OTHER INGREDIENTS. AS THE CAKE COOLS IN THE SEALED JAR, IT WILL
    PULL
    AWAY FROM THE SIDES OF THE JAR AND COME OUT EASILY WHEN READY TO SERVE. SLICE
    AND SERVE WITH LEMON SAUCE. LEMON SAUCE 2 TBLS.
    CORNSTARCH 2 TBLS. BUTTER 1/2 CUP SUGAR 4 1/2 TSP. FINELY
    GRATED
    LEMON RIND PINCH OF SALT 2 TBLS LEMON JUICE
    1 CUP BOILING WATER IN A PAN, THOROUGHLY STIR TOGETHER THE CORN STARCH, SUGAR,
    A
    ND SALT. GRADUALLY STIR IN THE BOILING WATER, STIRRING CONSTANTLY TO KEEP IT
    SMO
    OTH. CONTINUE STIRRING AND COOK OVER MODERATE HEAT UNTIL BOILING.
    BOIL GENTLY FOR ABOUT 20 MINUTES. REMOVE FROM HEAT, ADD BUTTER, LEMON RIND AND
    JUICE. STIR THOROUGHLY.
    SERVE HOT OVER APPLE CAKE IN A JAR. MAKES ABOUT 1 1/4 CUPS. THIS SAUCE IS
    THICKE
    R AND MORE TART THAN THE USUAL LEMON SAUCE.

  • SOUTH OF THE BORDER CHICKEN SOUP

    3 tb Vegetable oil
    3 Corn tortillas cut in 1/2″
    -strips
    1/3 c Chopped onion
    2/3 c Chopped red and green pepper
    1 Garlic clove
    1/4 c Flour
    2 cn Chicken broth (12 oz)
    1 t Chili powder
    2 c Cooked chicken, cubed
    1 cn VEG-ALL Mixed Vegetables,
    -with liquid (16 oz)

    1. Heat oil in skillet; add tortilla strips and fry,
    stirring constantly, until golden. Drain on paper
    towel-lined plate.

    2. Add onion and pepper to skillet and cook until soft.

    3. Add garlic and stir in flour; then gradually stir
    in chicken broth.

    4. Add remaining ingredients and heat through.
