Honey Yogurt Dumplings with Apples

4 cups apple slices
2 cups cranberry juice
1/2 cup honey
1 cinnamon stick
1/4 teaspoon ground nutmeg
1 cup flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 egg
6 tablespoons plain yogurt
1 tablespoon honey
1 tablespoon milk
1 teaspoon grated orange peel

Combine apples, juice, honey, cinnamon stick and nutmeg in heavy skillet; mix
well and bring to boil. Reduce to simmer; drop tablespoonful of Dumpling
Batter over hot apple mixture. Cover and simmer 15 to 20 minutes or until
dumplings are cooked throughout and wooden pick inserted in center comes out
clean.
Dumpling Batter: Combine flour, baking powder, ground cinnamon and salt in
mixing bowl. Mix together egg, plain yogurt, 1 tablespoon honey, milk, and
grated orange peel in separate bowl; stir into flour mixture to form moist
batter.

  • Quebec Maple Syrup Pie

    Recipe

    9-inch single pie crust
    2 1/4 cups maple syrup
    3/4 cup light cream
    1/4 cup all-purpose flour
    4 eggs
    1 cup walnuts (optional)

    In bowl, whisk together maple syrup, cream, flour and eggs
    until blended; stir in nuts (if using). Pour into crust.
    Bake in 375 oven for 10 minutes; reduce heat to 350 and
    bake for 30-35 minutes longer or until set. Let cool on
    rack.

  • Penne in Vodka Sauce

    Title: PENNE IN VODKA SAUCE
    Categories: Pasta, Italian
    Yield: 4 servings

    2 Dried red peppers
    3/4 c Vodka
    2 2/3 c Whipping cream
    10 T Butter
    6 oz Tomato, fresh ripe; peeled,
    -seeded chopped
    1 lb Penne
    3/4 c Parmesan; grated
    3 T Parsley, fresh; minced
    Pepper; to taste

    Soak red peppers in vodka for 24 hours.

    Combine cream, butter and tomatoes in heavy large saucepan. Simmer
    until reduced by 1/3, about 12 minutes. Cook pasta according to
    directions. Drain and add to sauce. Boil 1 minute, stirring
    constantly. Discard red peppers, and add vodka to pasta. Simmer until
    sauce thickens, stirring constantly, about 3 minutes. Mix in 3/4 cup
    Parmesan and parsley. Serve immediately, passing additional Parmesan
    and pepper separately.

  • CURRIED CUCUMBER AND TOMATO SOUP

    1 md Seedless English cucumber,
    -peeled
    1 md Ripe tomato, peeled
    1 tb Chopped onion
    1 sm Clove garlic, chopped
    1/4 ts Curry powder
    Pinch each of nutmeg, salt
    -and pepper
    1/2 c Water
    1 tb Cider or wine vinegar
    2 To 4 drops hot pepper sauce
    2 ts Sugar

    Prep time: 10 minutes Cool time: 1 hour

    This cool, crisp soup is best made in summer when the
    tomatoes and cucumbers are in season, but make sure
    they are peeled because their peel will be too bitter
    in this combination.

    Chop cucumber and tomatoe into medium sized chunks. In
    container of blender or food processor, combine
    cucumber, tomato, onion, garlic,curry, nutmeg, salt,
    pepper, water, vinegar, hot pepper sauce and sugar.
    Puree until smooth. Pour into a large bowl or pitcher.
    Chill at least 1 hour. Pour into soup bowls or mugs.
    Garnish with chopped parsley, if desired. Makes 4 cups.

  • Sweet Potato Biscuits

    Title: Sweet Potato Biscuits

    Yield: 1 servings

    1 c Flour 2 1/2 ts (to 3) baking powder
    1 c Sweet potatos, cooked/mashed 3 tb Sugar (or more, to taste)
    1 x Salt 1/4 c Shortening

    Sift dry ingredients. Add shortening and potato and mix thoroughly. Knead
    dough; cut with biscuit cutter (you may need more flour, as dough is
    sticky). Bake in 400 degree oven 12 to 15 minutes.

    4 c Pioneer biscuit mix
    8 oz Sour cream
    6 oz 7-up

    Cut sour cream in biscuit mix, add 7-up. Roll on floured surface. Cut
    or shape with hands . Bake 6 -8 mins @ 400`.

    Delicious!!!! Hope this will become a favorite of yours.

    Title: Baking Powder Biscuits I

    3 c Flour 6 tb Shortening
    4 ts Baking powder 1 c Milk
    1 ts Salt

    Sift flour, measure, and sift with baking powder and salt. Cut in
    shortening with 2 spatulas. Add milk. Turn onto lightly floured board.
    Knead lightly and pat into sheet 1/2 inch thick. Cut with floured cutter.
    Bake in hot oven (450ø F) 12 minutes. 16 servings. The Household

    Title: Snickerdoodles

    1 c Butter or margarine
    3/4 c Brown sugar; packed
    3/4 c Sugar; +plus+
    1 t Sugar
    2 Eggs
    1 3/4 c Flour, all-purpose
    2 c Uncooked oats
    2 t Cinnamon
    1 t Baking soda
    1/2 t Salt; (optional)

    Heat oven to 375′. Grease cookie sheet.
    In large bowl, beat together butter, brown sugar and 3/4 cup granulated
    sugar until light and fluffy. Add eggs; mix well. In medium bowl, combine
    flour, oats, 1 teaspoon cinnamon, soda and salt. Add to sugar mixture; mix
    well. Drop by rounded teaspoonfuls onto prepared cookie sheet. In small
    bowl, combine remaining 1 tablespoon sugar and 1 teaspoon cinnamon;
    sprinkle lightly over each cookie. Bake 8 to 10 minutes. Cool 1 minute on
    cookie sheet; remove to wire cooling rack.

    Title: Popeye’s Biscuits

    2 c Bisquick
    2 tb Sour cream
    1/2 c Club soda
    1 ts Sugar

    Mix ingredients togeter well until smooth. Dip hand
    into just enough more Bisquick that you’ll knead dough
    until elastic, like bread dough. Shape into 4 patties
    each 1″ thick, placing close together in greased
    baking pan. Bake 450 18 to 20 minutes or until golden
    brown and doubled in size. Cool in pan or rack

    Title: Cheddar Biscuits

    2 c Unbleached Flour, Sifted
    4 ts Baking Powder
    1/2 ts Salt
    1 c Cheddar, Sharp, Grated
    1/4 c Butter
    2/3 c Milk

    Sift the flour, baking powder, and salt together and mix with the grated
    cheddar cheese. Cut the butter into the dry ingredients, add the milk and
    mix quickly but thoroughly. The dough should be soft. Turn onto a floured
    board and knead lightly for a few seconds. Pat to a 3/8-inch thickness and
    cut. Bake on a baking sheet in a hot-oven (450øF) about 30 minutes or
    until lightly browned. Serve hot.
