RICE AND ENDIVE SOUP

1 c Uncooked rice
1 1/2 c Chopepd onions
2 Celery stalks, sliced
2 sm Carrots, peeled cut into
— half moons
3 tb Olive oil
3 c Vegetable stock
10 Ripe plum tomatoes, chopped,
— or 28 oz can whole plum
— tomatoes, crushed
1 Head curly endive, chopped
1/2 c Chopped fresh parsley
1 1/2 tb Chopped fresh basil
Salt pepper
Cook the rice.
Meanwhile, saute the onions, celery carrots in the olive oil till tender.
Add the stock tomatoes endive. Simer for about 15 minutes. Stir in the
cooked rice. Add parsley basil. Season with salt pepper to taste.
Serve.

Tropical Fruit Champagne Granita

1/2 c sugar
1/2 c water
3 c fresh pineapple chunks
4 c passion fruit juice — chilled
3/4 c Champagne — chilled
In saucepan bring sugar and water to a boil, stirring until sugar is
dissolved, and cool syrup.
In a blender or food processor puree pineapple with 1/4 c plus 2 tbsp syrup
(reserve remaining syrup for another use). Stir in nectar or juice and
Champagne. Transfer pineapple mixture to a shallow metal baking pan and
freeze, stirring and crushing lumps with a fork every hour, until mixture is
firm but not frozen hard, about 3 to 4 hours. Granita may be made 2 days
ahead and frozen, covered. Just before serving, scrape granita with a fork
to lighten texture.
Scoop granita into serving bowls.

1 1/2 t finely chopped candied ginger
1 1/2 t chopped fresh mint
1/8 t salt
Whisk together all ingredients until well combined.

Title: APPLE-MOLASSES BREAD

Yield: 1 loaf
1/2 c Butter
1 c Sugar
3 Eggs
2 c Flour, all-purpose
1 t Baking powder
1/2 t Salt
1/2 t Cinnamon, ground
1/4 t Nutmeg, ground
1 c Applesauce
1/4 c Dark molasses (treacle)
1 c Raisins
1/2 c Nuts, chopped
Preheat oven to 350 degrees F. In a large bowl, cream butter and sugar
until light and fluffy. Add eggs, one at a time, beating well after each
addition.
Combine flour, baking powder, salt, cinnamon and nutmeg; set aside. Combine
applesauce and molasses.
Add dry ingredients alternately with applesauce mixture to egg mixture.
Fold in raisins and nuts. Pour into a greased 9 1/4 x 5 1/4 x 2 3/4 inch
loaf pan. Bake at 350 degrees F. for 1 hour, or until a toothpick inserted
into the center comes out clean. Cool 10 minutes, remove from pan and
continue cooling on a wire rack.
NOTES:
* A simple, fragrant, apple-nut raisin bread — I found this recipe on the
back of a label for a baking loaf pan. It is easy to make and because of
the molasses it is very fragrant while baking. Yield: 1 large loaf.

Title: Berry Syrup

Yield: 9 half-pts.
Juices from fresh or frozen blueberries, cherries, grapes, raspberries
(black or red), and strawberries are easily made into toppings for use
on ice cream and pastries.
Yield: About 9 half-pints.
Procedure: Select 6-1/2 cups of fresh or frozen fruit of your choice.
Wash, cap, and stem fresh fruit and crush in a saucepan. Heat to boiling
and simmer until soft (5 to 10 minutes). Strain hot through a colander
and drain until cool enough to handle. Strain the collected juice
through a double layer of cheesecloth or jelly bag. Discard the dry
pulp. The yield of the pressed juice should be about 4-1/2 to 5 cups.
Combine the juice with 6-3/4 cups of sugar in a large saucepan, bring to
boil, and simmer 1 minute. To make a syrup with whole fruit pieces, save
1 or 2 cups of the fresh or frozen fruit, combine these with the sugar,
and simmer as in making regular syrup. Remove from heat, skim off foam,
and fill into clean half-pint or pint jars, leaving 1/2-inch headspace.
Adjust lids and process according to the recommendations in Table 1.

– Stainless steel bowl filled with everything to bake a special batch of
cookies – include mix, rolling pin, cookie cutters, spices etc…tie up
with tea towel and ribbon. Instead of bowl could use cookie sheet as
holder.
– Colonder filled with pasta, sauce, fork or sieve spoon, grated cheese –
tie up with plaid cloth and ribbon
– Basket full of teas, herbs, coffees, mugs, spoons sugars etc.
– Tin of homemade Christmas cookies and the recipes too!
– Bread board with Gingerbread recipe, mix, spices, rolling pin,
Gingerbread man cutters etc. Tie up with cellophane and Christmas bow.
– Square basket filled with everything to make an ethnic dish – ie. Mexican
– taco shells, fixings, coupon for ground beef, cheeses, salsa etc.
Use your imagination and make any combination into a great gift basket –
but instead of a basket use a cooking utensil, bowl or pot to put the items
in.

2 packages cream cheese (8 oz.)
3 cups powdered sugar
2 packages Dream Whip
4 bananas
Blueberry can pie mix
2 prepared pie shells
Combine first three ingredients. Slice bananas over pie crust. Fill pie
with filling and top with blueberry mix. Store in refrigerator or serve
immediately.

Here’s a recipe from the Lean Luscious Meatless Cookbook for Vegetable
Broth Mix:
1 Tablespoon onion powder
1 Tablespoon celery salt
1 Tablespoon dried parsley flakes
1 1/2 teaspoons garlic powder
1 1/2 teaspoons salt
1/2 teaspoon ground savory
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/4 teaspoon pepper
1/4 teaspoon turmeric
1/4 teaspoon ground sage
Combine all ingredients and mix well. Mix again before using. Dried
vegetable flakes can also be added for a flavor bonus.
