Sunburgers

Title: SUNBURGERS

Yield: 4 servings

1/2 lb Extra lean ground beef
1/2 lb Freshly ground turkey breast
1/3 c Bulgur wheat, uncooked
1 tb Worcestershire sauce
1/4 ts Pepper
Vegetable cooking spray
4 Whole wheat hamburger buns
4 Lettuce leaves
4 Unpeeled tomato slices
2 Onion slices, separated into
-rings

Combine first 6 ingredients in a bowl; stir well. Divide mixture into
4 equal portions, shaping each into a 1/2″ thick patty. Coat a grill
rack with cooking spray; place on grill over hot coals. Place patties
on rack, and cook 4 minutes on each side or to desired degree of
doneness. Line bottom half of each bun with a lettuce leaf; top with
a patty, tomato slice, onion rings, and top half of bun. Repeat
procedure with remaining ingredients. 4 servings.

NOTE: Sunburgers can be broiled. Coat a rack with cooking spray; place
rack in a shallow roasting pan. Place patties on rack, and broil 4″
from heat 6 minutes on each side or to desired degree of doneness.

Per serving: 35 calories, 29.5 grams protein, 34.4 grams
carbohydrates, 10.9 grams fat, 64 milligrams cholesterol, 316
milligrams sodium.

  • Minty Lamb Burgers

    Title: Minty Lamb Burgers

    1 lb Ground lamb
    1 sm Onion, coarsely grated
    1 t Finely minced garlic
    1/4 c Chopped fresh mint
    Salt to taste
    Freshly ground black pepper
    -to taste
    4 Toasted hamburger buns
    4 sl Tomato (for garnish)
    1/3 c Plain nonfat yogurt, drained
    -(for garnish)

    If you are tired of beef yet looking for a great-tasting burger,
    here’s a splendid choice, easily mixed up with lots of fresh mint,
    onion and garlic. The fresh mint is essential for an exciting burst
    of flavor in these luscious patties. Chop the leaves coarsely with a
    good, sharp knife so that they will stay nice and green. For a
    garnish, nothing goes better than plain yogurt and ripe tomato
    slices. Drain the yogurt through a strainer lined with cheesecloth
    for one hour before serving.

    1. Prepare hot coals for grilling.

    2. Place the ground lamb in a bowl and mix well with onion, garlic and
    chopped mint, being sure not to overmix. Season to taste with salt and
    pepper. Gently form the mixture into 4 patties.

    3. Grill the burgers over hot coals, 3″ from heat, for about 4
    minutes per side for rare meat or 5 minutes per side for medium-rare.

    4. Serve the lamb burgers immediately on buns topped with a tomato
    slice and a dollop of yogurt, if desired.

    Per serving (with tomato and yogurt garnishes): 363 calories, 18 grams
    fat, 76 milligrams cholesterol.

  • Blackberry Cobbler

    Title: Blackberry Cobbler

    2 tb Cornstarch
    1 tb Lemon juice
    1 c Flour
    1/2 ts Salt
    Vanilla ice cream
    1 1/2 c Sugar
    4 c Blackberries, picked over, r
    1 ts Baking powder
    6 tb Unsalted butter, cold, cut i

    In a large bowl, stir together the cornstarch an 1/4 cup cold water
    until cornstarch is completely dissolved. Add 1 cup sugar, lemon
    juice, and blackberries, and combine the mixture gently but
    thoroughly. Transfer to an 8-inch cast-iron skillet. In a bowl,
    combine well the flour, remaining sugar, baking powder, and salt.
    Blend in the butter until the mixture resembles coarse meal. Add 1/4
    cup boiling water and stir the mixture until it just forms a dough.
    Bring the blackberry mixture to a boil on top of the stove, stirring.
    Drop spoonfuls of the dough carefully onto the boiling mixture, and
    bake the cobbler on a foil lined baking sheet in the middle of a
    preheated 400f oven for 20-25 minutes or until the topping is golden.

  • FRESH CHILE CORN FRITTERS W/JULIENNE OF TAR

    4 ea Green anaheim chiles
    3 c Corn kernels, scraped from
    — the cob
    3 ea Green serrano chiles, seeded
    — chopped
    1 t Salt
    1/2 ts White pepper
    3 tb All purpose flour
    3/4 c Ghee
    —–JULIENNE OF APPLES—–
    1 tb Ghee
    6 sm Green apples, cored
    — julienned
    1/2 ts Celery seed

    Roast the anaheim chiles, then peel, seed and dice
    them. Process the corn in a food processor until it
    resembles a puree, about 2 minutes. Scrape down with
    a spatula and process for another minute.
    In a bowl, mix together the corn puree,the chopeed
    chiles, salt, and pepper. Slowly add the flour, small
    amounts at a time, while stirring.
    In a medium saucepan, heat the clarified butter over
    high heat. Using a large cook’s spoon or serving
    spoon, gently drop spoonfuls of the batter into the
    hot butter. When the edges are brown after about 2
    minutes, turn the fritters over and cook another 2
    minutes. Remove the fritters and allow them to drain
    on paper towels. In another saucepan over medium high
    heat, melt the unsalted butter, add the apples and the
    celery seed, and saute about 3 minutes, until they
    begin to soften. Serve hot with the fritters.

    Mixture 1:
    1 stick melted butter
    4 cups powdered sugar
    18 ounces creamy peanut butter
    Mixture 2:
    7 ounces chocolate candy bar, such as Hershey’s — up to 8
    ounces
    1/2 bar parrafin wax
    1 cup chocolate chips

    Mixture 1: Mix and roll into balls. Refrigerate until firm.
    Mixture 2: Melt and mix together.

    Roll balls into mixture two.

  • BAGELS FOR THE BREAD MACHINE

    1 1/8 c Water
    3 c Bread flour
    2 ts Sugar
    1 1/4 ts Salt
    2 ts Butter
    3/4 ts Dry yeast

    Book Place ingredients into the bread case. Place the
    bread case into the bread machine. Select the Dough
    mode and press the start button.

    When the buzzer sounds, press the STOP button and
    remove the bread case fro the bread machine. Remove
    the dough from the bread case and divide it into ~ 10
    equal portions. Shape the dough into circles.

    Arrange the circles on a greased cookie sheet and
    cover with a clean towel. Place the dough in a warm
    place and allow to rise for 40 to 50 minutes.

    In a large saucepan bring 2 quarts of water to a
    medium boil. Carefully ad dough one at a time. Boil
    each bagel for about 2 minutes.

    Remove bagels from boiling water and place on a
    greased cookie sheet. Bake 400 F until golden brown
    (about 20 minutes.)

    Makes 8 to 10 bagels. Original poster of this recipe
