1/2 Pound Green Beans — cut in 2-in lengths
1 Medium Eggplant — cubed
2 Onions — chopped
3 Carrots — sliced
2 Stalks Celery — sliced
1 Bell Pepper — chopped
2 Potatoes — peeled and cubed
1 Can Tomato — chopped
1/4 Cup Olive Oil
1/2 Cup Catsup
1 1/2 Teaspoons Sugar
1 1/2 Teaspoons Basil
1/4 Teaspoon Black Pepper
3 Small Zucchini
1 Cup Plain Yogurt
Combine beans, eggplant, onion, carrots, celery, bell pepper, and
potatoes in a 5 qt. casserole dish. Add remaining ingredients
(except zucchini and yogurt); stir gently. Cover dish, bake at 350F for
1.5 hours or until vegetables are almost tender, removing lid and basting
vegetables with juices every 30 min. Add sliced zucchini to casserole,
gently mix in. Bake casserole uncovered for 20 more min. Serve with a
generous spoonful of yogurt on each serving.
This is an Armenian vegetable stew, a perfect use of summer’s bounty.
I must admit that the first time I made this recipe, while I was
preparing it I thought there’s no way this could be any good. But it
really is quite fantastic.

Waterloo Ice House Mexican Corn Soup

1 to 2 serrano peppers
1 cup onion — diced
1 poblano peppers
1/4 teaspoon cumin
1/4 teaspoon oregano
2 plum tomatoes
2 tablespoons margarine
2 cups half and half
2 cups canned creamed corn
6 to 8 ounces Monterey Jack Cheese — grated
tortilla chips
Remove and discard the stems from the serrano peppers and the poblano
pepper. Finely dice the serrano pepper. Remove the seeds from the poblano
pepper before slicing it into 1/2-inch strips. Dice the onion. Melt the
margarine in a soup pot and saute the pepper, onion and spices until soft.
Reduce the heat and simmer, while chopping tomatoes into chunks. Add
tomatoes to the pepper mixture. Simmer 3 minutes; set aside.
In a large soup pot combine the half and half with the corn soup mix. Mix
well before adding the creamed corn. Heat without boiling to combine
flavors. Place grated cheese in bottom of each cut before filling with soup
to withing 1/2 inch of top. Place tortilla chips on top of soup. Serve
immediately. Makes 1 quart.

COUSCOUS WITH 7 VEGETABLES (OR MOROCCAN COUSCOUS)
1 medium onion
1 TB veg broth
3 cups vegetable broth
2 carrots, peeled
2 turnips, peeled
1 sweet potato
1 zucchini
1 red pepper
Cut all veggies in strips – julienned
1 can garbanzo beans, drained
1 12 oz. or 15 oz. can tomato sauce
1/4 tsp. cinnamon
1/2 tsp. turmeric
pinch of saffron
pinch of curry
2 cups couscous grains
In a large saucepan, saute onion until lightly browned. Add vegetable broth
and bring to a boil. Transfer to a large pot and add carrots, turnips, and
potato. Simmer 15 mins. Lower heat and add zucchini and pepper. Cook 20
mins. Add beans, tomato sauce and spices. Cook til heated through.
In a separate pot, bring 2 1/2 cups of water to a boil. Add couscous, cover
and take off of heat. Let stand 5-7 minutes, fluff with a fork and serve
with vegetables on top.

2 c Rolled oats
2 c Hot water
2 Green onions, minced fine
4 Eggs
2 tb Cooking oil
2 c Ground nut meats
(walnut prefered)
1 c Ground sunflower seeds
2 tb Peanut butter
1 t Poultry seasoning
2 ts Sea kelp
Servings: 6
Pour the hot water over the rolled oats. Add the rest of the ingredients.
Oil a baking pan and shape the mixture in the form of turkey, using stalks
of celery for the legs and shaping the mixture around them. Use small
oblongs of the mixture for wings. Pat oil over the outside and bake in a
moderate oven until done in the middle, probably 45 minutes. Loosen with a
spatula and remove to a meat platter. Garnish and serve hot. Serves 4 to 6

1 lb Pasteurized Process Cheese

1 cn Tomatoes and Green Chilies,
-Diced (10 oz)
Brown sausage in skillet. Drain. Melt cheese in double boiler or
microwave oven. Combine tomatoes and green chilies with cheese and
sausage.
