Peachy Bread

Title: PEACHY BREAD

2 1/2 c Flour
1 ts Baking soda
1 ts Cinnamon
1/4 ts Ground cloves
1 c Brown sugar
-packed
2 c Mixed candied fruit/peels
1/2 c Raisins
1/2 c Dates
-chopped
1 c Walnuts
-chopped
14 oz Sweetened condensed milk
1 c Prepared mincemeat
16 oz Sliced peaches
1/4 c Apricot nectar

In large bowl, combine flour, baking soda, cinnamon,
cloves, and brown sugar. Stir in candied fruit,
raisins, dates, and walnuts.
Add sweetened condensed milk, mincemeat, peaches, and
nectar.
Combine well. Pour into 2 greased and floured 9 x 5
inch loaf

  • Zucchini-Apple Bulgur

    Recipe

    3/4 C water
    2/3 c apple juice
    3/4 c bulgur
    1 c chopped apple
    1 c chopped zucchini
    1/2 t salt
    1/2 t cinnamon
    Heat water and apple juice to boiling, add bulgur, and return to boil.
    Reduce heat and simmer 20 minutes, until liquid is absorbed.
    While bulgur is cooking, saute the apple and zucchini (peeled or not, as you
    prefer) according to your method of choice, such as using a bit of apple
    juice or water, until softened. Stir in the salt and cinnamon, then add the
    cooked bulgur.

  • BAGELS FOR THE BREAD MACHINE

    2 ts Sugar
    1 1/4 ts Salt
    2 ts Butter
    3/4 ts Dry yeast

    Book Place ingredients into the bread case. Place the
    bread case into the bread machine. Select the Dough
    mode and press the start button.

    When the buzzer sounds, press the STOP button and
    remove the bread case fro the bread machine. Remove
    the dough from the bread case and divide it into ~ 10
    equal portions. Shape the dough into circles.

    Arrange the circles on a greased cookie sheet and
    cover with a clean towel. Place the dough in a warm
    place and allow to rise for 40 to 50 minutes.

    In a large saucepan bring 2 quarts of water to a
    medium boil. Carefully ad dough one at a time. Boil
    each bagel for about 2 minutes.

    Remove bagels from boiling water and place on a
    greased cookie sheet. Bake 400 F until golden brown
    (about 20 minutes.)

    Makes 8 to 10 bagels. Original poster of this recipe

    Northern Cabbage Kimchi

    Preliminaries

    Trim off the tougher outer leaves of the celery cabbage and save them; cut
    each cabbage head into 2 to 4 sections lengthwise (see above recipe)

    Preparations

    1. soak the cabbage sections and the radishes in a brine prepared with 3
    cups of salt and 4 quarts of water for 3 to 4 hours or until softened.
    Rinse with cold water.

    2. halve the radishes, reserving 2 and make slit cuts up to 2/3 of the
    length from the bottom.

    3. cut the pears into thin julienne strips.

    4. cut the pickled fish and the fresh squid and octopus into 1 1/2″ narrow
    strips.

    5. cut the 2 remainding radishes into thin julieen; mix the radish strips
    with the red pepper paste. Then, add all the remainding vegtables,
    mushrooms, and chestnuts along with the octopus, squid, and pickled fish;
    mix well. Finally, toss the mixture with oysters and pear strips and season
    with salt. This is the stuffing.

    6. Pack the stuffing between the layers of the cabbage leaves; filling the
    slit-cuts on the radishesi. stack the stuffed cabbage and radishes in a
    crock; cover with the salted outer leaves (preliminaries). After 2 or 3
    days, add a mixture of salt, pickled corvina juice, pickled baby shrimp
    juice, and beef broth, just enough to cover

    Set for dough cycle.Let the machine knead the dough once, and then
    let the dough rise for only 20 minutes in the machine. Even if your
    cycle runs longer, simply remove dough after 20 minutes and turn off
    the machine. Divide the dough into the appropriate number of pieces.
    Each piece should be rolled into a rope and made into a circle,
    pressing the ends together. You may find it necessary to wet one end
    slightly to help seal the ends together. Place these on a well
    greased baking sheet, cover and let rise only 15 to 20 minutes.
    Meanwhile, bring to a slight boil in a “nonaluminum pan”, (Donna
    German uses a cast iron frying pan) about 2 inches of water.
    Carefully lower about 3 or 4 bagels at a time into the water, cooking
    for about 30 seconds on each side. Remove bagels, drain on a towel,
    sprinkle with poppy seeds, sesame seeds or dried onion bits if
    desired and place on the greased baking sheet. Bake in a preheated
    550 degree oven for 8 minutes. This recipe is from Donna German’s
    first Breadmachine Cookbook, pages 160- 161.
