Impossible Brownie Pie

Title: Impossible Brownie Pie

4 Eggs
1/2 c Brown Sugar; Packed
4 oz Chocolate; Melted, cooled
1/4 c Margarine or butter; soften
1/2 c Sugar
1/2 c Bisquick
3/4 c Nuts; Chopped

Preheat oven to 350~. Grease 9″ pie plate. Beat all ingredients
except nuts until smooth; 2 minutes in blender on high, stopping
blender occasionally to stir, or 2 minutes with hand beater. Pour
into plate; sprinkle with nuts. Bake until knife inserted in center
comes out clean, 30 to 35 minutes. Serve with ice cream, if desired.

    1/2 c Pineapple juice
    1/4 c Honey
    3 tb Worcestershire sauce
    1 1/2 ts Ground ginger
    1 ts Salt
    1/2 ts Garlic powder

    Combine all ingredients and use to brush over ribs, chicken or
    pork during the last 15 minutes of cooking (Makes one cup
    sauce)

    1 1/2 c unbleached flour
    1 c granulated sugar
    2 tsps cinnamon
    1/2 tsp baking soda
    1/2 tsp nutmeg
    1/4 tsp baking powder
    1 c zucchini — unpeeled and grated
    1/4 c fat-free sour cream
    2 whole egg whites — slightly beaten
    1/2 tsp lemon peel — grated

    Preheat oven at 350. Prepare pan a 8 x 4 x 2″ loaf pan with cooking spray
    and flour; set aside. In a mixing bowl, combine flour, sugar, cinnamon,
    baking soda, nutmeg, and baking powder. In another mixing bowl, combine
    zucchini, sour cream, egg whites, and lemon peel. Mix dry ingredients
    with wet ingredients just until moistened. Pour batter into prepared pan.
    Bake 60 minutes.

    21 1/2 oz Box fudge brownie mix
    1/2 c Water
    1/2 c Oil
    2 Eggs
    10 oz Package white chocolate
    -pieces
    3 1/2 oz Jar salted macadamia nuts,
    -chopped (reserve 6)
    Topping:
    10 oz Package white chocolate
    -pieces
    1/4 c Heavy cream
    1 tb White chocolate liquer or
    -creme de cacao
    1 oz Milk chocolate or semisweet
    -chocolate, melted, for
    -garnish

    Spotted Chocolate Macadamia Nut Torte

    To make the torte: Heat oven to 350 degrees. Grease
    a 9 or 10 inch springform pan. Combine brownie mix,
    water, oil, and eggs; beat 50 strokes by hand. Stir in
    white chocolate and nuts. Pour into prepared pan and
    bake for 45 to 50 minutes or until center of cake is
    set. Cool one hour and then remove sides of pan; let
    cake cool completely.

    To make topping: Melt white chocolate in a heavy
    saucepan over low heat or in the top of a double
    boiler over hot water. Add cream and liqueur. Blend
    until smooth. Spread over cooled torte and let
    drizzle down sides.

    In a heavy saucepan over low heat, melt milk or
    semisweet chocolate. Let drops of the melted
    chocolate fall off a spoon onto the top of the cake to
    make polka-doteffect. Place reserved whole macadamias
    in an attractive pattern on top of the cake.
    Refrigerate 1 hour before serving. Makes 16 servings.

  • Orange-beef Stir-fry

    Title: ORANGE-BEEF STIR-FRY

    1 tb Cornstarch
    1 ts Sugar
    1 ts Instant beef bouillon
    -granules
    1 ts Orange peel, finely shredded
    1/2 c Orange juice
    1 tb Soy sauce

    —————————BEEF—————————
    12 oz Beef top round steak
    Nonstick spray coating
    1 Clove garlic, minced
    4 Green onions, bias cut into
    -1-inch lengths
    1 tb Cooking oil
    8 oz Fresh spinach, torn into
    -bite-size pieces
    4 oz Sliced water chestnuts,
    -drained (1/2 can)
    2 c Cooked rice, hot

    Orange Sauce: For Orange Sauce, combine all of the
    sauce ingredients and set aside.

    Beef: Partially freeze steak; slice thinly across the
    grain into strips. Spray a wok or large skillet with
    nonstick spray coating. Stir-fry garlic and onion 1
    minute and remove from wok. Add oil to wok, if
    needed. Stir-fry half of the beef for 2 to 3 minutes.
    Remove form the wok and stir-fry the rest of the beef.
    Return all of the beef to the wok. Stir in the Orange
    Sauce. Cook and stir until bubbly. Stir in spinach,
    water chestnuts, and onion mixture. Cover and cook
    for 1 minute. Serve hot over rice.

  • Brown Seed Bread

    Title: Brown Seed Bread

    2 c Flour, all purpose 1 c Whole wheat flour
    1 c Natural bran 1 c Quick cooking rolled oats
    2 T Sesame seeds 2 T Poppy seeds
    1 T Baking powder 1 1/2 t Baking soda
    1 t Salt 1/4 c Liquid honey
    2 c Plain yogurt

    In large bowl, combine all-purpose and whole wheat flours, natural bran,
    rolled oats, sesame and poppy seeds, baking powder, baking soda and salt;
    stir in honey. Add enough of the yogurt to make sticky dough. Knead
    lightly in bowl until dough is well blended. Fit dough into one greased
    9×5 in. (2L) loaf pan.
    Bake in 375F oven for 40 min., or until tester comes out clean.

    Title: BLUEBERRY JAM (LITTLE)

    Yield: 2 1/2

    2 tb Lemon juice;
    3 ts Unflavored gelatin;
    1/8 ts Salt;
    1 1/2 ts Arrowroot;
    2 1/2 c Frozen blueberries;
    -sweetened partially thawed
    Non-nutritive sweetener
    -equivalent to 2 cups sugar

    Mix lemon juice, gelatin, salt, and arrowroot; stir in
    blueberries. Boil gently unitl mixture thickens,
    stirring constantly (about 3-4 minutes). Stir
    constantly, boiling at full boil for 2 minutes. Remove
    from heat; stir in sweetener. Fill and seal jars.
    Food Exchanges per serving: 1 TABLESPOON = TRACE
    FRUIT; CAL: 6 PER SERVING

    Title: YOGURT SOUP (TURKISH)

    8 c Meat or chicken stock
    -or water
    80 g Flour
    80 g Rice
    3 c Yogurt
    2 Egg yolks
    3 tb Butter
    2 tb Dried mint

    1- Boil the rice in meat or chicken broth, on low heat
    2- Beat the yoghourt with the egg yolks and flour.
    Stirring constanly, slowly add 2 cups of boiling
    stock. Add it to the meat stock with rice. Let simmer
    for 10 minutes. 3- Heat the butter. Add dried mint.
    Leave on low heat for 1 minute. Pour it over the soup
    and serve.

    Title: CHINESE RED MARINADE

    1 Garlic clove; crushed
    1/2 ts Freshly ground pepper
    1/2 ts Finely grated ginger root
    4 ts Soy sauce
    4 ts Honey
    4 ts Dry sherry
    1/2 ts Five-spice powder
    4 ts Chili sauce

    Combine all ingredients in a bowl. Makes about 3/4 cup

  • Title: BROILED MONKFISH IN GINGERED SOY SAUCE

    Yield: 6 servings

    4 Fillets of monkfish
    1/2 c Light soy sauce
    1 Minced garlic clove
    1 tb Grated fresh ginger
    White pepper to taste

    Mix soy sauce, garlic, ginger and pepper and marinate
    the monkfish for several hours in the refrigerator,
    turning once. Transfer fish to a broiler pan and broil
    for 8-10 minutes until fish flakes easily with a fork.
    Serve with brown rice and a green vegetable.
