Banana Muffins (From Triple Muffin Mix) – Lighter

1/4 cup applesauce, unsweetened
3/4 cup bananas — mashed
1 1/2 cups Triple Muffin Mix

Combine egg, oil and bananas. Stir in muffin mix. Spoon into greased
muffin cups and bake @ 350 for 20 – 25 minutes.

  • Cappuccino-Pistachio Shortbread

    Amount Measure Ingredient — Preparation Method

    1 envelope cappuccino coffee mix — 0.77-ounce
    1 tablespoon water
    3/4 cup butter or margarine — softened
    1/2 cup powdered sugar
    2 cups all-purpose flour
    1 cup pistachio nuts — chopped
    1 ounce semisweet chocolate
    1 teaspoon shortening

    Preheat oven to 350 degrees. Dissolve the coffee in water in a medium
    bowl. Stir in the margarine and powdered sugar. Stir in the flour and 1/2
    cup pistachios, using your hands if necessary, until a stiff dough forms.
    Divide the dough in half. Shape each half into a ball. Pat each ball into
    a 6-inch round, about 1/2-inch thick, on a lightly floured surface. Cut
    each round into 16 wedges. Arrange the wedges on an ungreased cookie sheet
    about 1/2 inch apart with the pointed ends toward the center. Bake for
    about 15 minutes, or until golden brown. Immediately remove from the
    cookie sheet. Cool completely on wire racks. Place the remaining 1/2 cup
    pistachios in a small dish. Place the chocolate and shortening in a small
    microwavable bowl. Microwave uncovered on medium power for 3 to 4 minutes,
    stirring after 2 minutes, until the mixture can be stirred smooth and is
    drizzling consistency. Dip one edge of each cookie into the chocolate,
    then into the nuts. Place on waxed
    paper until the chocolate is firm. Nutrition Analysis: 100 calories, 1g
    protein, 10g carbohydrate, 6g fat, 0mg cholesterol, 55mg sodium.

    CRISP BACON MUFFINS

    8 Bacon slices
    1 1/3 c Cake flour
    1 1/2 tb Sugar
    1 t Salt
    2 1/2 ts Baking powder
    1 Egg
    3/4 c Milk
    1 tb Bacon fat

    Saute bacon til crisp, and chop fine. Sift flour,
    sugar, salt and baking powder together. Add the
    bacon. Combine the egg, milk and bacon fat, and blend
    into the first mixture. Pour into buttered muffin
    tins, one-third full, and bake in a hot oven (425) for

    1 pound ground beef
    4 ounces elbow macaroni — uncooked
    1 can cream of mushroom soup, condensed
    3/4 cup milk
    2/3 cup catsup
    1/2 cup cheddar cheese — shredded
    1/4 cup green pepper — chopped
    2 tablespoons onion
    1 teaspoon salt

    Heat oven to 350 degrees.

    Cook and stir meat until brown. Drain off fat.

    Cook macaroni as directed on package; drain.

    In ungreased 2-quart casserole, mix all ingredients.

    Cover; bake 40 minutes. Uncover; sprinkle with crushed potato chips if
    desired and bake 5 minutes longer.

  • Pickled Spinach

    Recipe

    Title: PICKLED SPINACH
    Categories: Diabetic, Vegetables, Side dish
    Yield: 4 servings

    2 c Spinach; torn
    1 c Tomato; chopped
    1/4 c Green pepper; chopped
    1/4 c Vinegar
    1/3 c Oil, vegetable; to 1/2 cup
    2 sl Bacon; cooked and crumbled
    Lettuce leaves; opt.

    Combine first 5 ingredients, tossing gently. Chill at
    least 15 minutes. Sprinkle bacon over top; serve on
    lettuce leaves, if desired.

    Title: Easy Lo Cal Fruit Ices

    1/4 c Granulated sugar replacement Mix (your choice)
    1 Env unsweetened fruit drink 3 c Crushed ice

    Combine all ingredients in a blender or processor and beat until just
    blended. Scoop into cups and eat immediate or freeze.

    Recipe makes 2 c and is considered a free item

    6 pounds Anjou pears (each cut in 1/8ths) — peeled, cored
    1/2 cup water
    2/3 cup pear vinegar
    2/3 cup sugar
    2/3 cup poire William or pear brandy

    Simmer pears and water in heavy large saucepan until pears are very
    soft, stirring occasionally, about 40 minutes. Puree mixture in
    blender in batches until smooth. Return to saucepan. Mix in vinegar
    and sugar. Simmer until reduced by 1/3 and thickened to consistency of
    applesauce, stirring frequently, about 40 minutes. Mix in poire
    William. (Can be prepared 2 days ahead and refrigerated.) Serve Triple
    Pear Puree at room temperature.
